"I found a recipe for a layered veggie casserole, then modified it to use produce I had on hand," says Marilou Robinson of Portland, Oregon. "I sometimes sprinkle bread crumbs or grated cheese on top for a tasty variation."

2 medium tomatoes, cut into wedges
1 cup sliced celery
1 cup sliced fresh carrots
1 cup cut fresh green beans
1 medium onion, sliced
1 small sweet red pepper, julienned
1/2 cup canned sliced water chestnuts, drained
1-1/2 teaspoons sugar
1-1/2 teaspoons all-purpose flour
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter

Steps:

  • In a large bowl, combine the first seven ingredients. Place half in a greased 1-1/2-qt. baking dish. , In a small bowl, combine the sugar, flour, oregano, salt and pepper. Sprinkle half over vegetables in the baking dish. Layer with remaining vegetables and seasoning mixture. Dot with butter. , Cover and bake at 350° for 55-60 minutes or until vegetables are tender.

2 (15 ounce) cans mixed vegetables, drained
1 small onion, diced
1 (10.75 ounce) can condensed cream of chicken soup
1 cup mayonnaise
1 cup shredded white Cheddar cheese
36 buttery round crackers, crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl combine the mixed vegetables, onion, soup, mayonnaise and cheese. Mix well and spread mixture into a 9x13 inch baking dish. Top with the cracker crumbs.
  • Bake about 30 minutes, or until browned and bubbly.

1/2 cup margarine, melted
1 (10 1/2 ounce) can cream of celery soup
2 (14 1/2 ounce) cans mixed vegetables, drained
1 (2 ounce) can water chestnuts, drained
1 cup Ritz cracker, crushed
1 -2 cup Velveeta cheese, sliced

Steps:

  • Pour half of margarine into 9x13 pan.
  • Add vegetables, celery soup, and water chestnuts.
  • Place sliced cheese on top, enough to cover all.
  • Sprinkle with cracker crumbs.
  • Pour the rest of margarine over all.
  • Bake at 350 for 45 minutes.

This is my favorite thing to eat at Thanksgiving, but it is good any time! Usually the first thing to disappear at our house.

2 (20 ounce) packages california-blend frozen vegetables (frozen carrots, cauliflower and broccoli)
2 cups shredded cheddar cheese
1 1/2 cups mayonnaise
1 onion, chopped
1 sleeve Ritz cracker, crushed
1/4-1/2 cup melted butter

Steps:

  • Cook vegetables according to package directions and drain.
  • Place cooked vegetables in ungreased 9X13" pan.
  • Mix cheese, mayonnaise and onions together and pour on top of vegetables.
  • Top with crushed crackers and then melted butter.
  • Bake uncovered 35 minutes at 350.

My grandmother used to make this at Thanksgiving and Christmas to fill out the usual sweet potato casserole and dressing menu. This was always one of my favorites. It is very easy and very tasty! It is a good way to get your kids (and reluctant DH's) to eat their vegetables!

1 (20 ounce) package frozen mixed vegetables
1 cup chopped onion
1 cup chopped celery
1 cup shredded cheddar cheese
1 cup mayonnaise
1 1/2 cups Ritz cracker crumbs
1/2 cup butter or 1/2 cup margarine, melted

Steps:

  • Cook the frozen vegetables according to the package directions. Drain well.
  • Combine cooked vegetables, onion, celery, cheese, and mayonnaise in a large bowl, stirring well.
  • Spoon the mixture into a greased 11 x 7 x 1 1/2 inch baking dish.
  • Combine cracker crumbs and butter. Stir well. Sprinkle crumb mixture evenly over the casserole. Bake at 350 degrees for 30 to 35 minutes or until thoroughly heated.
