Easy recipe for creamy Loaded Potato Soup. Chunks of potatoes in a cheesy soup base with sour cream and bacon is pure comfort food!

4 large potatoes (peeled and cubed)
½ tsp salt
8 oz bacon (bite-sized pieces)
4 Tbsp unsalted butter
½ med onion (finely chopped)
2 garlic cloves (minced)
¼ cup all-purpose flour
2 1/2 cups whole milk
2 1/2 cups chicken broth
1 cup mild or sharp cheddar cheese (shredded)
¾ cup sour cream
1 tsp salt (or to taste)
¼ tsp pepper (or to taste)
green onions (to serve)

Steps:

  • Place sliced potatoes into a stockpot and completely cover with 1" of water. Season with ½ tsp salt and cook 8-10 minutes or until potatoes pierce easily with a knife then drain.
  • Meanwhile, saute bacon in a dutch oven until crispy then transfer to a plate, reserving 1 Tbsp bacon grease in the pot.
  • Add 4 Tbsp butter and chopped onions then sautee until tender. Add garlic and cook another minute until fragrant.
  • Quickly whisk in the flour. Slowly add 2 1/2 cups milk and 2 1/2 cups broth, whisking constantly then bring to a soft boil.
  • Add drained potatoes and season soup with 1 tsp salt and 1/4 tsp pepper or season to taste.
  • Stir in 3/4 cup sour cream, 1 cup shredded cheddar, and half half of your cooked bacon (reserving the rest for serving). Bring to a boil then remove from heat and serve with your favorite toppings.

4 lbs red potatoes
1/2 cup butter or margarine
1/2 cup flour
4 cups fat free half & half
2 cans evaporated milk
48 oz high quality chicken stock
2 16oz packages velveta cheese, melted
pepper to taste
4 tbsp hot sauce
1 lb bacon, cooked crisp & crumbled
2 stalks celery, diced small
1 tsp garlic powder

Steps:

  • Dice unpeeled red potatoes into 1/2 inch cubes. Cover with water and cook for about 10 minutes or until 3/4 cooked. In pot, cook bacon crisp & crumble. Add celery and saute. Set asisde on plate with paper towel to drain any grease. In seperate soup pot, combine melted butter and flour, mixing until smooth. Place over low heat and gradually add liquids, stirring constantly. Continue to stir until smooth and liquid begins to thinken. Add melted velveta and stir until well mixed. Add crumbled bacon and celery. Drain potatoes and add to cream mixture. Stir in pepper, garlic powder and hot sauce. Cover and cook over LOW heat for 30 minutes, stirring occassionally. Important... Do NOT bring to a rapid boil--slow simmer only!! Enjoy!!

I know there are a lot of potato soup recipes on here, but this is the best I have ever had. The onion flavor adds a little something extra, and it is so easy and delicious. Everyone loves this soup...even my incredibly picky roommate. It cooks for a while; if you have a crock pot, which I don't, you can let is simmer for a while and forget about it. Also, this can be doubled easily. I hope you all enjoy.

7 potatoes
2 (8 ounce) cans cream of chicken soup
3 cups milk
8 ounces French onion dip
1/2 cup butter
1 onion, chopped
cheese
bacon bits

Steps:

  • Peel and chop up potatoes, then steam them (They can be boiled if you don't have a steamer).
  • While waiting on the potatoes, sauté the onions in the butter.
  • When the onions are ready, add the cream of chicken, milk, and French onion dip to the mix, stirring until the mixture is smooth and well mixed.
  • When the potatoes are steamed, add them to your mixture from step three. Let it simmer for 30 minutes, or until it reaches your preferred tenderness.
  • Salt and pepper to taste.
  • Serve with cheese and bacon bits as desired.

1 lb. baking potato es (about 3), cubed
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup milk
3 slices OSCAR MAYER Bacon, cooked, crumbled and divided
1 cup KRAFT Shredded Cheddar Cheese, divided
1 green onion sliced, divided
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Microwave potatoes in large microwaveable bowl on HIGH 5 min., stirring after 2-1/2 min. Stir in broth and milk. Microwave 10 min., stirring after 5 min. Carefully smash potatoes with potato masher.

5 or 6 large white potatoes
1/4 c onion, chopped fine
3 Tbsp butter
4 c whole milk
1 tsp salt
1/4 tsp pepper

Steps:

  • 1. Peel potatoes and cut into bite-size cubes. Peel and chop onion; place both in a large saucepan of boiling salted water. Reduce heat and simmer, covered, for about 15-20 minutes or until potatoes and onions are tender.
  • 2. Drain potatoes and onions into a colander; set aside. In the saucepan, melt the butter and add the salt and pepper. Pour in milk and heat on medium-low setting until heated through; do not boil. Add the potatoes and onions back in and let simmer, uncovered, for 5 minutes on low heat.
  • 3. I like to eat it with cheese and crackers on the side. Also goes great with a grilled cheese sandwich!
