ASIAN PORK LINGUINE

6 ounces uncooked linguine
2 teaspoons cornstarch
1/2 cup water
1/4 cup reduced-fat creamy peanut butter
2 tablespoons reduced-sodium soy sauce
1 tablespoon honey
1/2 teaspoon garlic powder
1/8 teaspoon ground ginger
1 pound boneless pork loin chops, cubed
3 teaspoons sesame oil, divided
2 medium carrots, sliced
1 medium onion, halved and sliced

Steps:

  • Cook linguine according to package directions. For sauce, in a small bowl, combine cornstarch and water until smooth. Whisk in the peanut butter, soy sauce, honey, garlic powder and ginger until blended; set aside., In a large nonstick skillet or wok, stir-fry pork in 2 teaspoons oil until no longer pink. Remove and keep warm. Stir-fry carrots and onion in remaining oil until crisp-tender. Stir the sauce and add to the pan. Bring to a boil; cook and stir until thickened, about 2 minutes., Return pork to the pan. Drain linguine; add to the pan and stir to coat.

The first time I tried the Korean Stir-Fried Glass Noodles a.k.a Japchae was when my manager brought the dish in for a potluck a few years ago. It was literally one of The Best things I've tried, made me go back for refills.

2 lb Beef
1 lb Sweet Potato Noodles
3 medium Carrots
1 white Onion
1/2 bn Green Onions
6 Garlic Cloves
1/2 lb Spinach
4 tbsp Sesame Oil
1 tbsp Olive oil
6 tbsp Soy Sauce
3 tbsp Brown Sugar

Steps:

  • Prepare the ingredients for the recipe.
  • Prepare the ingredients for the sauce.
  • Bring water to a boil, add a bit of oil. Add noodles and cook them for 5-6 minutes. Drain when cooked.
  • Preheat skilled to high heat. Cook the pre-sliced beef until it's golden brown. Season beef with half portions of the following - soy sauce, sesame oil and brown sugar, while it's cooking.
  • Place noodles in a large bowl, top them with cooked beef.
  • Dice onion into long strips. Cut carrots into strips and chop green onion. Preheat an oiled skilled and toss in the carrots and onion.
  • When the veggies soften up, add in the remaining half portions of the following - soy sauce, sesame oil and brown sugar. Add in pressed garlic, green onions and cook for a few minutes until it's softened.
  • Add diced spinach into the mixture and turn off the heat imminently.
  • Add all vegetables to the noodles and toss everything together.
  • Serve while it's still warm. This dish also reheats well.

2 can(s) 16 oz. each, chow mein vegetables, drained
1 can(s) 16 oz. tomato sauce
1 jar(s) 8 oz. sweet 'n' sour sauce
1/4 cup(s) brown sugar
- hot cooked linguine

Steps:

  • In large skillet, cook beef until browned. Drain fat & add vegetables.
  • In a medium bowl, blend together tomato sauce, sweet 'n' sour sauce & brown sugar. Add to meat mixture.
  • Cook over low heat until hot & bubbly, about 20 minutes. Serve over linguine.

MOM'S PASTA AL FORNO

Mom used to make this pasta al forno on special days, like on holidays and a lot of Sundays. It was a big treat for us. It is a lot of work because of all the ingredients that you have to layer on the pasta but it's well worth it. You can choose whatever you like in the ziti, but we love it just like this. It's filling and it's good.

3 tablespoons vegetable oil
1 medium onion, sliced
3 (15 ounce) cans tomato puree
4 ΒΌ cups water, or to taste
6 tablespoons white sugar
6 leaves fresh basil
2 pounds ziti
1 pound ground beef
1 (8 ounce) container ricotta cheese
2 tablespoons water
1 (15 ounce) can green peas, drained
1 cup grated Parmesan cheese
4 hard-boiled eggs, sliced, ends discarded
1 (16 ounce) package shredded mozzarella cheese

Steps:

  • Heat oil in a large pot over medium heat. Add onion; saute until translucent, about 5 minutes. Mix in tomato puree and water; cook for 10 minutes. Stir in sugar and basil. Reduce heat to low; simmer for 30 minutes, stirring occasionally.
  • While the sauce is cooking, bring a very large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and return to the pot.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add ground beef to cooked pasta. Mix in enough tomato sauce to lightly coat the pasta.
  • Mix ricotta cheese and water in a bowl until it reaches a spreadable consistency.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Spread a ladleful of sauce in the bottom of a 9x13-inch baking dish. Add 1/2 of the pasta, all of the ricotta cheese, peas, and 1/2 of the Parmesan cheese. Layer the sliced eggs on every section of the pasta; cover with 1/2 of the mozzarella cheese. Pour remaining pasta, Parmesan cheese, sauce, and mozzarella on top. Cover with aluminum foil.
  • Bake in the preheated oven until golden brown and bubbly, 40 to 50 minutes. Let stand for about 10 minutes before cutting, so slices don't fall apart.

My mom whipped this up one day and we all fell in love w/ it. Then I made it for others and they fell in love w/ the flavors. The ingredients might sound like they won't taste good, but they do. They blend together beautifully!

2 pound(s) ground turkey breast
2 - 16 oz cans drained chow mein vegetables
1 - 16 oz can tomato sauce
1 - 8 oz jar sweet and sour sauce
1/4 cup(s) brown sugar
1 pound(s) dry linguine

Steps:

  • Cook linguine as directed, drain. Spray a skillet w/ cooking spray, place over medium heat. Add ground turkey and cook until browned, add veggies. In medium bowl, blend together tomato sauce, and sweet and sour sauce, whisk in brown sugar. Add tomato sauce mix to meat mix in skillet. Cook, stirring occasionally, about 20 min, or until hot and bubbly. Serve sauce spooned over linguine.
