GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

- Lightly spray a 9 x 13 baking dish.
- Dissolve both boxes of JELLO and unflavored gelatin in hot water in baking dish.
- Stir in sweetened condensed milk, pineapple, cottage, cheese and mayonnaise until thoroughly combined.
- Chill until firm, at least 2 hours.
- Sprinkle on lemon and lime zest if desired.
- Cut into squares and serve cold.

- 1. Drain pineapple and throw into medium size bowl, add cottage cheese, cool whip and dump the jello powder into the mix. Mix well and refrigerate about an hour before serving and enjoy!
LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

LIME JELLO SALAD
Steps:
- Bring 4 cups of water to a boil.
- Remove from heat and quickly mix in the jello and pudding mix.
- Pour into a glass dish and add pineapple evenly throughout. I have used various sizes of glass dishes, they all work.
- Cover and place in the fridge for at least four hours.
- Remove from fridge and move the jello to a large bowl - mash around until it's broken up.
- Mix in Cool Whip and coconut flakes.
- Keep refrigerated until ready to serve.
LIME JELLO SALAD
Congealed salads have long been a part of our family's holidays. This one was served first at my husband's parents' holiday table. It was such a hit with everyone, that it became the standard for our gatherings and continues today. So simple, my husband's aunt had given it to them and yet I found a way to simplify it more by using the blender. This is good even using the sugarfree Jello and lite cream cheese, etc. We love it and have even been known to have it for dessert or....breakfast!!!

- Dissolve Jello in 1 Cup hot water.
- Break up cheese in hot Jello.
- Pour the cheese and Jello mixture into blender, blending until smooth.
- Add 1 1/2 Cups cold water, blend til smooth.
- Pour into 8" square Pyrex dish.
- Then add un-drained crushed pineapple.
- Add pecans.
- Cover with plastic wrap while chilling in the refrigerator.

- Combine jello and hot water; stir until jello is dissolved.
- Add enough cold water to pineapple juice to equal ½ cup and stir into the jello. Chill until partially set; then whip with a mixer. Set aside.
- In another bowl, beat the cream cheese. Add pineapple, beating briefly.
- Fold in Cool whip and nuts - then combine with the jello mixture and chill until firm.
