1 lb. lean ground beef
1/2 cup chopped onion
1 (14-oz.) jar tomato pasta sauce
1 cup water
1 (7.25-oz.) pkg. macaroni and cheese dinner
1 (4.5-oz.) jar sliced mushrooms, drained
2 oz. (1/2 cup) finely shredded Cheddar cheese

Steps:

  • In large skillet, cook ground beef and onion over medium heat until beef is thoroughly cooked, stirring frequently. Drain.
  • Add pasta sauce and water; mix well. Bring to a boil. Stir in macaroni from dinner. Return to a boil. Cover; cook over medium heat for 6 to 8 minutes or until macaroni is tender and liquid is absorbed, stirring occasionally.
  • Stir in cheese powder from dinner; mix well. Stir in mushrooms. Sprinkle with Cheddar cheese; cover and cook 1 to 2 minutes or until cheese is melted.

The recipe is super quick and budget-friendly, leaning on pantry ingredients you probably already have on hand. We use shredded Cheddar to make the dish extra cheesy and finish with chopped parsley for a fresh bite. Perhaps best of all: Everything cooks in one pot, even the pasta!

2 tablespoons vegetable oil
1 large onion, diced
2 cloves garlic, minced
1 tablespoon chili powder
1/2 teaspoon smoked paprika
Pinch crushed red pepper flakes, optional
Kosher salt and freshly ground black pepper
1 pound ground beef, 80/20
2 tablespoons tomato paste
1 tablespoon Dijon mustard
5 cups low-sodium chicken stock or broth
10 ounces elbow macaroni
2 cups shredded Cheddar, about 8 ounces
4 ounces cream cheese
1 cup flat-leaf parsley leaves and tender stems, chopped, plus more for garnish, optional

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the chili powder, smoked paprika, red pepper flakes (if using), 1 teaspoon salt and a few grinds of black pepper and stir to combine. Add the beef and break it up into small pieces with a large spoon; cook, stirring occasionally, until beef is cooked through and no longer pink in the center, 6 to 7 minutes. Stir in the tomato paste and Dijon until combined. Pour in the chicken stock and 1 teaspoon salt, stir to combine and bring to a boil, 6 to 7 minutes. Add the elbow macaroni and cook, stirring occasionally, until the sauce has thickened and the pasta is al dente, 9 to 11 minutes. Remove from the heat and stir in the Cheddar and cream cheese until smooth. Fold in the parsley. Garnish with more parsley, if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.

I make this a lot. Ours is a different variation and simpler. I put peas in mine; the boys leave them out, lol. My sister said I was not remembering that Mom used corn instead of peas. I checked and, yes, the heifer was right, grrr, lol, so you can put corn in too.

1 lb hamburger
1 onion, chopped
1 teaspoon Worcestershire sauce
salt
pepper
1 lb elbow macaroni
1 (16 ounce) can stewed tomatoes
1 (17 ounce) can peas, drained or
1 (17 ounce) can corn, drained
1/4 cup parmesan cheese (optional)

Steps:

  • Saute hamburger with chopped onion. Drain grease.
  • Add Worcestershire sauce, salt and pepper.
  • Cook macaroni in boiling water until tender; drain.
  • Add cooked macaroni to hamburger.
  • Add canned tomatoes, peas and/or corn.
  • Cook until thick, stirring occasionally.

1 lb pasta (I use medium shells)
2 tablespoons butter
1/2-3/4 cup nonfat milk
8 ounces Velveeta cheese
4 ounces mozzarella cheese, shredded
4 ounces cheddar cheese, shredded
salt and pepper (optional)
1 lb ground beef
1 green pepper, minced
1/2 medium onion, minced
1 (14 1/2 ounce) can diced tomatoes, drained
garlic salt (optional)

Steps:

  • Cook the pasta per directions.
  • Drain noodles and set heat to low.
  • Add butter and melt.
  • Add milk and stir, being sure sure it's not too hot because your milk could curdle in the heat.
  • Add cheese and stir until it melts, salt and pepper to taste. Keep on low.
  • In a separate dish, combine ground beef, pepper, onion, and garlic salt, and cook until meat is brown.
  • Turn on low and cover until pepper/onion starts to soften.
  • Add the tomatoes, cover, and let simmer for 10 minutes, stirring occasionally.

1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 tablespoon Italian seasoning
1 teaspoon paprika
1/4 teaspoon black pepper
1 cup uncooked elbow macaroni
3 oz cream cheese, cubed
1 cup shredded Monterey Jack cheese (4 oz)
1/2 cup flavored croutons, coarsely crushed

Steps:

  • Heat 12-inch nonstick skillet over medium-high heat; add beef and onion. Cook 7 to 9 minutes, stirring frequently, until beef is brown; drain, and return to skillet. Add garlic; cook about 1 minute or until garlic is fragrant. Stir in broth, tomato sauce, tomatoes, Italian seasoning, paprika and pepper. Heat to simmering, stirring occasionally. 1 lb ground chuck, browned and drained
1 small onion, chopped
4 stalks celery, diced
1 (12 ounce) can tomato sauce
1 green pepper
1 bay leaf
1/2 teaspoon marjoram
1 tablespoon garlic, minced
1 tablespoon sugar
salt and pepper

Steps:

  • Mix all of the ingredients together except the noodles and cook until onion and celery are tender.
  • Add this to 1-lb macaroni noodles or a package of egg noodles which has been cooked.
  • in a separate pot according to directions.
  • Add minced garlic with salt and pepper.

salt and pepper to taste
¼ teaspoon paprika
1 onion, chopped
1 tablespoon vegetable oil
8 large potatoes, scrubbed and chopped
1 (16 ounce) can chili without beans

Steps:

  • Season beef with salt, pepper, and paprika.
  • Brown seasoned beef and onion in oil until all sides are brown. Cover with water and simmer for 3 to 4 hours or until tender. Add water whenever level goes below the ingredients.
  • An hour before serving, add potatoes and chili.

I know that some people get upset when this type of dish is called "goulash." Please don't blame me, blame Ken...lol. Most kids love this and it makes six large servings with leftovers for lunch. I thought it was pretty tasty myself. This recipe is from the Mount Joy Mennonite Church cookbook. Mount Joy is in Lancaster County, PA. Cook time includes browning beef.

1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1/2 teaspoon garlic salt
1 teaspoon salt

2 tablespoons prepared mustard
1 tablespoon Worcestershire sauce
9 slices white processed cheese
1 -1 1/2 lb ground beef
5 cups elbow macaroni
6 -7 cups water

Steps:

  • Brown ground beef and onion in a large electric skillet.
  • Add salt, garlic salt, pepper, tomato sauce, tomato paste, mustard, Worcestershire sauce and 5 to 6 cups water.
  • When mixture starts boiling, add macaroni.
  • Cover and boil for 10 to 15 minutes, stirring occasionally, to keep from sticking.
  • Add additional water as needed.
  • When macaroni becomes soft, arrange cheese slices on top.
  • Cover; turn off heat and let stand for 5 minutes.
