Cucumber Salad with Vinegar image

Mom's recipe for Cucumber Salad with Vinegar is a healthy and easy side dish to pair with any summer meal!

Number Of Ingredients 7

2 seedless English cucumbers (or about 3 regular cucumbers), peeled if desired ((about 1.75 lbs. or 6 cups total))
1/2 cup white vinegar or apple cider vinegar
1/2 cup water
2 tablespoons sugar
1 teaspoon salt
1/4 teaspoon pepper
Chopped fresh dill or chopped fresh parsley, to taste

Steps:

  • Slice cucumbers very thinly and place in a large bowl. I like to use a mandoline to keep the slices even and to make the process very fast, but you can just use a knife if you prefer.
  • In a separate small bowl or in a jar, whisk or shake together vinegar, water, sugar, salt, pepper and herbs. Pour over cucumbers. Cover; chill at least one hour or overnight. Drain cucumbers and serve!

This exceptionally delicious Cucumber Salad is a summer time favorite! This refreshing side dish is ready to go in 5 minutes and takes just a handful of ingredients!

1 to 2 English cucumbers (thinly sliced, approximately 1/8 inch thick)
½ cup sour cream (or plain Greek yogurt)
2 tablespoon chopped fresh dill
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 tablespoon vinegar
½ red onion (thinly sliced)

Steps:

  • In a small bowl, whisk together sour cream, dill, salt, pepper, and vinegar.
  • Thinly slice the cucumber and red onion. Use a mandoline if you have one to make quick work of this step.
  • Place the sliced cucumber and red onion in a medium serving bowl and toss with the dressing. Check for seasoning and add additional salt and/or pepper if needed.
  • Refrigerate for up to 3 days or serve immediately. Garnish with additional fresh dill if desired.

3 large cucumbers
1 teaspoon salt
¼ cup white sugar
⅛ cup water
¼ cup distilled white vinegar
½ teaspoon celery seed
¼ cup chopped onion

Steps:

  • Peel the cucumbers and slice wafer thin. Sprinkle with salt. Let stand 30 minutes, then squeeze cucumbers to release moisture.
  • In a medium size bowl mix sugar, water, vinegar, celery seed, and onion. Add cucumbers to mixture. Mix well. Refrigerate 1 hour.

2 heads romaine lettuce, thinly sliced
2 tomatoes, large diced
1 cucumber, large diced
1 red onion, thinly sliced
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons sour cream
1 teaspoon fresh oregano, chopped
1 clove garlic, minced
Kosher salt and freshly cracked black pepper

Steps:

  • Combine the romaine, tomatoes, cucumber and onions in a large bowl.
  • Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
  • Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.

This is the only cucumber salad I knew, until I ate at a friend's house when I was about 14! Mom and Grandma both made it this way...ok they used regular Miracle Whip, I use fat free.

5 medium cucumbers, peeled and sliced
1 medium onion, diced
1 cup fat-free Miracle Whip
1 1/2 teaspoons prepared mustard
1 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place cucumbers and onions in large bowl. In a smaller bowl, mix remaining ingredients and pour over the cucumbers and onions. Chill in refrigerator for at least one hour. Serve. Salt, sugar, and pepper can be adjusted to your own taste, this is just the way I like it.
