Number Of Ingredients 11

1 broiler/fryer chicken (3-1/2 to 4 pounds)
3 quarts water
1 medium onion, quartered
4 celery ribs
2 teaspoons chicken bouillon granules
2 parsley sprigs
1 garlic clove
2-1/2 teaspoons salt, optional
1/2 cup thinly sliced carrots
1/2 cup chopped fresh parsley
3 cups cooked rice

Steps:

  • Place chicken and water in a Dutch oven; bring to a boil. Reduce heat; add the onion, celery, bouillon, parsley sprigs, garlic and salt if desired. Cover and simmer until the chicken is tender, about 1 hour. , Remove chicken from broth; allow to cool. Strain broth, discarding vegetables and seasonings. Remove chicken from bones; cut into cubes; set aside. Discard bones. Add carrots to broth and simmer about 15 minutes or until tender. Add chicken and chopped parsley to broth; heat through. Serve with rice.

1 tablespoon vegetable oil
1 pound boneless, skinless chicken breast halves, cut into 1-inch pieces
1 medium stalk celery, chopped (1/2 cup)
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 1/2 cups baby-cut carrots
1 tablespoon chicken bouillon granules
1 teaspoon dried thyme leaves
1 can (49 1/2 ounces) ready-to-serve chicken broth
1 cup frozen green peas
1 cup fine egg noodles

Steps:

  • Heat oil in 10-inch skillet over medium-high heat. Cook chicken, stirring occasionally, until chicken is browned.
  • Mix all ingredients except peas and noodles in 3 1/2- to 4-quart Crock-Pot slow cooker.
  • Cover and cook on low heat setting 6 1/2 to 7 hours or until vegetables are tender and chicken is no longer pink in center.
  • Rinse frozen peas with cold water to separate; drain. Stir peas and noodles into soup. Cover and cook on high heat setting about 15 minutes or until noodles are tender.

1 chicken (about 2-1/2 to 3 pounds) with giblets, quartered
2-1/2 quarts water
3 teaspoons salt
1 medium onion
6 whole peppercorns
6 celery ribs, (leaves reserved), divided
6 medium carrots, divided
2 cups cooked rice or cooked fine egg noodles
1/4 cup minced fresh parsley
3 to 4 drops yellow food coloring, optional

Steps:

  • Place the chicken, giblets, water, salt, onion, peppercorns, three celery ribs, all the celery leaves and three carrots in a soup kettle. Bring to a boil. Skim off the foam. Reduce heat to simmer; cover and cook for 2 hours or until meat is tender. Remove meat. Discard cooked vegetables and peppercorns. Strain stock if desired. , Chill stock, then skim fat. Dice remaining celery and carrots; add to the stock. Cook until the vegetables are tender. , Meanwhile, remove chicken from the bones and dice. Add chicken, cooked rice or noodles and parsley. Heat through. Stir in food coloring if desired.

1 onion, chopped
2 stalks celery, sliced
2 carrots, sliced
4 (10.5 ounce) cans chicken broth
4 baking potatoes, peeled and diced
¼ pinch dried thyme
¼ teaspoon poultry seasoning
2 cups shredded cooked chicken
2 cups egg noodles
1 cup evaporated milk

Steps:

  • Heat the vegetable oil in a stock pot over medium heat. Cook and stir the onion, celery, and carrots in the hot oil until tender, 8 to 10 minutes. 1 ½ cups all-purpose flour
2 teaspoons baking powder
¾ teaspoon salt
3 tablespoons shortening
¾ cup milk

Steps:

  • Whisk together the flour, baking powder, and salt in a mixing bowl. Cut in the shortening with a knife or pastry blender until the mixture resembles fine crumbs. Stir the milk into the flour mixture until moistened. Dough will be pretty lumpy, but be sure to not over mix it!
  • Drop dough by large spoonfuls onto any boiling stew. The dumplings should rest on top of vegetables and meat; it's okay if they stick out of the top a bit. Cook uncovered for 10 minutes; cover and cook another 10 minutes.

Most moms make chicken soup for their family and we all make it a little different. When my husband or childen were sick, no worries, I will make some chicken soup and you'll feel better soon. Well this is mine and of course my kids think it the best (of course) they got better on it.

Number Of Ingredients 11

1 whole chicken (3-5 lbs)
4 large carrots (chopped rather small)
6 stick celery (chopped)
1/2 medium to large sweet onion (chopped)
3 boullion cubes
1 c water
1 can(s) (32 oz) of chicken broth (i use light & fat free)
1/2 tsp or so salt ~ to taste
1 Tbsp parsley
1/2 tsp garlic powder ( i use jarred garlic )
season to taste with pepper , celery seed, etc.

Steps:

  • 1. I put the whole chicken in the pressure cooker for around fifteen to twenty minutes. Or boil in large pot til done. While the chicken is cooking ,I like to chop all the veggies you want to add and soften them in botton of soup pan with a little butter and chicken broth to blend flavors together. When chicken is cooled enough after boiling, I pull the meat off and kind of shred it. I just use white, family preferred, but the dark meat adds flavor as well. Put all your liquid in pot with veggies, add chicken and let it simmer a half hour or so, to finish, I add cut-up uncooked noodles, like to add a little spinach and what ever other veggies you like. Sometimes I will add a mix of frozen veggies in.
