CANDIED YAMS (CANDIED SWEET POTATOES)



Candied Yams (Candied Sweet Potatoes) image

Candied Yams will forever be a Thanksgiving favorite! This delicious side dish takes just minutes to prepare and the results are phenomenal! Candied Sweet Potatoes are made with brown sugar, maple syrup, butter and cinnamon then baked until perfectly sweet and tender. Marshmallows optional!

3 to 4 pounds sweet potatoes
6 tablespoons unsalted butter (melted)
1/4 cup maple syrup (real maple syrup, not pancake syrup)
1 cup dark brown sugar (light brown sugar also will work)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups miniature marshmallows (optional)

Steps:

  • Preheat oven to 375F. Spray a 3 quart baking dish with nonstick cooking spray and set aside.
  • Peel sweet potatoes and rinse clean. Slice potatoes to 1/2 inch thick slices. Try to keep them roughly the same thickness so they cook evenly.
  • In a medium bowl, combine brown sugar, melted butter, maple syrup, ground cinnamon, vanilla extract and salt. Whisk until smooth. If the mixture is very thick, pop in the microwave for 30 seconds to loosen it up.
  • Transfer sliced sweet potatoes to the prepared baking dish and spread evenly.
  • Drizzle the brown sugar mixture over the top of the sweet potatoes and toss to combine. You want each piece of sweet potato coated in the mixture.
  • Cover the baking dish with foil and bake for 20 minutes. Remove foil and gently stir. Bake for another 15 minutes (no foil) and again, gently stir. Check to see how tender the sweet potatoes are at this point. Bake for another 5 to 15 minutes, depending on the size and thickness of your potatoes. Make sure they are tender (but not falling apart) before removing.
  • If adding marshmallows, sprinkle marshmallows on top and pop back in the oven for 5 minutes. Serve immediately.

I took my mom's childhood candied yam recipe and added a layer of caramel. It is now a must at every Thanksgiving and Christmas and is often requested with much anticipation by anyone who has had it. One recipe will serve 6, but barely. I promise there won't be leftovers. If you're going to feed 6 or more, I suggest doubling the recipe in a 9x13-inch pan.

1 (15 ounce) can sweet potatoes, drained and mashed
1 (8 ounce) can crushed pineapple, drained
3 tablespoons butter
2 tablespoons brown sugar
¼ teaspoon salt
1 egg, beaten
½ teaspoon ground cinnamon
4 ounces caramel topping
2 cups marshmallows, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix sweet potatoes, pineapple, butter, brown sugar, salt, egg, and cinnamon together in a bowl. Pour half the sweet potato mixture into a 9x9-inch casserole dish. Pour caramel sauce over sweet potatoes; top with 1 cup marshmallows. Spread the remaining sweet potato mixture over marshmallow layer.
  • Bake in the preheated oven for 30 minutes. Add the remaining 1 cup marshmallows and bake until marshmallows are golden brown, about 10 more minutes.

4 pounds sweet potatoes (about 8 medium), peeled
6 tablespoons unsalted butter
1/2 cup firmly-packed dark brown sugar
1/3 cup granulated sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon kosher salt, plus more to taste
1/4 cup pecans

Steps:

  • Cut the sweet potatoes crosswise into 1-inch-thick rounds. Halve or quarter any extra-large pieces so that they are all similar in size.
  • Melt the butter in a large Dutch oven over medium heat. Combine the brown sugar, granulated sugar, pumpkin pie spice and salt in a small bowl. Add the sugar mixture to the Dutch oven and whisk until it forms a paste. Add the potatoes and stir well, spooning the sugar mixture over the potatoes to coat evenly.
  • Cover and cook the potatoes, stirring occasionally and gently to avoid breaking them up, until they are just tender when pierced with the tip of a knife and the sauce resembles a thin syrup, 25 to 30 minutes.

Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

4 large sweet potatoes, peeled and cut into 1/4-inch-thick rounds
8 tablespoons (1 stick) salted butter
2 cups granulated sugar
One 20-ounce can crushed pineapple
1 teaspoon ground cinnamon
1 teaspoon ground cloves
Pinch kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
  • Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.
  • Plate and serve immediately. Pour extra sauce from the bottom of the baking dish on top.

My mom never wrote this recipe down and I call my favorite every year for the recipe! Of course she never wrote it down either!!! This is one of those recipes that takes me back when I taste it. I'm going to do my best to write what my "Aunt Poddy" tells me every year, using the amounts as best as I can, but I will still call her every year just to have her walk me through it!!!! My brother got to taste them this year and he said it was just like mom's, so maybe I'm getting it right!!!

1 (29 ounce) can sweet potatoes (save the liquid)
1 1/2 cups brown sugar
2/3 cup light Karo syrup
2 tablespoons butter
1/2 teaspoon cinnamon
1/2 cup orange juice
1/4 teaspoon lemon juice
10 -15 large marshmallows

Steps:

  • Place sweet potatoes in casserole dish, single layer.
  • Using liquid from potatoes, mix in sugar, syrup, butter, cinnamon, orange juice and lemon.
  • Stir over medium heat until it starts to thicken, about 15 minutes.
  • Pour over potatoes, then sprinkle a bit more cinnamon over top.
  • Cover and bake in 350 oven for about 25 to 30 minutes.
  • Top with marshmellows and broil until brown. Watch constantly as this takes only a few minutes!

My mother every Thanksgiving made her sweet potatoes this way from Libby's canned sweet potatoes and or yams. I'm pretty sure she got the recipe from the can. I don't know for sure but we loved them this way as kids and my children love them this way also. So easy to make and so good! I am asked every year if I'm going to make...

1 (29 ounce) can sweet potatoes
1/4 c butter, cut into pieces
1/2 c brown sugar
1 1/2 c miniature marshmallows

Steps:

  • 1. Preheat oven to 400 degrees F Place sweet potatoes with juice in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows.
  • 2. Cover and bake in the preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted. Then turn broiler on and put back in to brown the top. Watch carefully as it browns fast. I have burned mine many a time.
  • 3. *** Most times I added 2 cans of sweet potaoes and drained one. *** We like to mash them down on our plates and add butter. Mmmmm!
  • 4. When serving, use a slotted spoon with holes to get the sweet potato's out of the baking dish so the liquid is separated from the potato's. I don't use the juice. I let the guests pull them out of the dish and mash them on their plate and put butter on top to melt over it.

I love these when my mom makes them on the holidays :) and now that I am stationed in Germany I will miss them for the next few years will need to start making them myself... I have made them 2x but I just always think her cooking is so much better than mine. lol

5-6 lb sm-med sized yams
1 c brown sugar (mixed w/ 1 tsp salt)
mini or reg sized marshmellows (we always cut the reg ones in half i think if correct we used approx 24 but you can always use how many you prefer)
2-4 Tbsp margerine ( i kinda just eyeball this amount )

Steps:

  • 1. Boil yams in water until soft enough to poke w/ fork. Drain. Peel while still warm (makes it easier)
  • 2. Cut Yams legnth ways 1/2" inch wide. Layer them in 3 layers, each layer going in different direction. Divide Margerine & Brown sugar mixt in 3rd)
  • 3. Spray baking dish (3 quart size) with nonstick butter spray. Layer yams cover with margerine and Brown sugar mixture. Repeat in opposite direction.
  • 4. Bake @ 300 for 2 1/2 hours or 275 for 3 hours. Basting every 15 minutes. Put marshmellows on 5 minutes before you want to serve them. Bake until golden brown (BE CAREFUL NOT TO BURN MARSHMELLOW'S)
