Chocolate Coconut Brownies Recipe - Moms & Munchkins image

These Chocolate Coconut Brownies are irresistible! If you're a fan of coconut desserts, this is one recipe you must try! Great treat for a baking exchange.

Number Of Ingredients 18

Brownie Layer:
1 cup semisweet chocolate chips
¾ cup unsalted butter
¾ cup flour
¼ cup unsweetened cocoa powder
¼ teaspoon salt
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla
½ cup milk chocolate chips
Coconut Layer:
3 cups sweetened shredded coconut
1 can (300ml) sweetened condensed milk
1 teaspoon vanilla
4 tablespoons all-purpose flour
Chocolate Ganache:
⅓ cup heavy cream (35%)
1 cup semisweet chocolate chips

Steps:

  • Brownie Layer:
  • Preheat oven to 350F.
  • Line an 8" square baking pan with parchment paper.
  • In a small bowl, melt butter with semisweet chocolate chips in the microwave. Check and stir at 30 second intervals because you don't want to overheat this. You want this melted but not hot.
  • In a separate bowl, combine flour, cocoa powder and salt. Set this aside.
  • In a large bowl, whisk sugar with eggs and vanilla until well mixed.
  • Add melted chocolate mixture to egg mixture and stir just until mixed.
  • Add flour mixture to chocolate mixture and stir just until combined.
  • Stir in milk chocolate chips.
  • Pour brownie batter into parchment paper lined pan.
  • Bake 30-35 minutes.
  • Coconut Layer:
  • Combine all ingredients in large bowl and stir well to mix.
  • Spread evenly over baked brownie layer.
  • Bake for 15 minutes.
  • Chocolate Ganache Layer:
  • Place chocolate chips in a medium bowl. Set aside.
  • In a small saucepan, bring heavy cream to a boil over medium-high heat.
  • Once boiling, immediately pour over chocolate chips. Let sit for 5 minutes before stirring.
  • Place ganache in fridge for at least two hours before spreading over brownies.
  • Spread chocolate ganache over the coconut layer as soon as it comes out of the oven.
  • Let Chocolate Coconut Brownies cool in the refrigerator for at least two hours before removing from pan and cutting into squares. Store leftovers in refrigerator.

This is one recipe that my mom has made every fall since I was a little girl. So good served with vanilla ice cream. Hope you enjoy this as much as I always have.

Number Of Ingredients 11

1 cup(s) white sugar
3 /4 cup(s) packed brown sugar
- 3 eggs
2 cup(s) unbleached white flour
1/2 teaspoon(s) salt
1 teaspoon(s) vanilla
1 cup(s) vegetable oil
1 - small sweet apple diced with peel
1 teaspoon(s) cinnamon
- nuts opt.
- light dusting of powdered sugar for top

Steps:

  • Bake at 350
  • Beat eggs.
  • Add in oil
  • Blend all remaining ingredients together.
  • grease a 9x13 pan.. add a light dusting of flour.
  • Pour mixture into the 9x13 pan
  • Bake until top is a light golden color.. or until toothpick comes out clean.
  • When cooled add a light dusting of powdered sugar to top...... enjoy :)

Always loved my mom's brownies, not a fancy recipe just a basic one. But memories to me make these the best !!

Number Of Ingredients 8

2 - eggs
1 cup(s) sugar
1/2 teaspoon(s) salt
1 teaspoon(s) vanilla extract
1/3 cup(s) shortening melted
2 - squares of unsweetened chocolate ( melted w/ shortening)
3/4 cup(s) sifted all purpose flour
1 cup(s) walnuts

Steps:

  • Pre-heat oven to 325 degrees. Beat eggs lightly with spoon. Stir in sugar, salt and vanilla, then melted chocolate and shortening (I put the shortening and squares of chocolate in a pyrex cup and melt in the microwave for 1 minute intervals) Stir in flour and walnuts together. Do not beat at any time.
  • Spread mixture in a 8 or 9 inch greased square pan and bake for 25-30 minutes. Browies should be still soft. Let cool in pan. Cut into small bars. Makes 18-24 brownies.
