2 1 oz chocolate squares
1 cup sugar
1/2 cup flour
2 eggs
1/2 cup nuts (optional)
1 cup chocolate chips

Steps:

  • Melt the butter and chocolate squares together. Add in the sugar and flour and stir.
  • Mix in the eggs and nuts. Stir.
  • In a prepared 8x8 pan (either with parchment paper or cooking spray), add the brownie mixture.
  • Sprinkle over the top 1 cup of chocolate chips.
  • Bake at 350 degrees for 20-25 minutes until done.

BROWNIE MIXTURE
2 stick butter
4 Tbsp cocoa, unsweetened
1 c boiling water
2 c sugar
2 c all-purpose flour, sifted
1 pinch salt
1/2 c buttermilk
1 tsp baking soda
2 large eggs
1 c chopped walnuts or pecans
BROWNIE ICING
1 stick butter
4 Tbsp milk
4 Tbsp cocoa, unsweetened
1 tsp vanilla extract
1 - 2 c powdered sugar
1/2 c chopped walnuts or pecans

Steps:

  • 1. PREHEAT: Oven to 350 degrees F. PREPARE: Baking pan by greasing and flouring 9x13x2-inch pan (or spraying with 'Baker's Joy' nonstick cooking spray).
  • 2. FOLLOW DIRECTIONS CAREFULLY.
  • 3. COMBINE: 2 sticks butter, 1 cup boiling water, and 4 Tbsp Cocoa in small sauce pan and bring to a boil.
  • 4. MIX: 2 Cups Sugar, 2 Cups flour, and salt together and add hot mixture.
  • 5. DISSOLVE: 1/2 Cup buttermilk and 1 tsp. baking soda together, add 2 eggs. MIX: Well. ADD: Nuts. MIX WELL: All above ingredients together. POUR: Into prepared pan and bake at 350 degrees F for 20-25 minutes. COOL: Slightly.
  • 6. ICING: MEANWHILE: Prepare icing by melting, butter, milk, cocoa together in small sauce pan. ADD: Powdered sugar to thicken. ADD: Vanilla extract. SPREAD: Icing on slightly cooled brownies. SPRINKLE: Nuts over iced brownies. COVER: Until ready to serve. CUT: In squares. SERVE & ENJOY! STORE: Covered leftovers.

3 tablespoons unsalted butter
2 tablespoons canola or other neutral tasting oil
4 ounces semisweet chocolate, coarsely chopped
3/4 cup packed dark brown sugar
1/4 cup white sugar
2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
2 large eggs, cold
1/4 cup cocoa powder
3/4 cup all-purpose flour
1/4 teaspoon baking soda

Steps:

  • Position rack in the lower third of the oven and heat oven to 325 degrees F. Use an 8 by 8-inch silicone baking pan or line a similar sized metal or glass baking dish with foil or parchment paper so it hangs over the edges by about 1 inch. For mini brownie bites, line mini muffin tins with 36 mini muffin liners. Spray the prepared pan.
  • Put the butter, oil and chocolate in a microwave-safe bowl, and heat at 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. (Alternatively put the chocolate and butter in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl over, not touching, the water, and stir occasionally until melted and smooth.)
  • Stir the brown and white sugars, vanilla and salt into the chocolate mixture with a wooden spoon. Add the eggs and beat vigorously until fully incorporated and the batter is thick and glossy. Add the cocoa, flour and baking soda and stir just until it disappears.
  • Pour the batter into the pan and bake until the top is crispy and a toothpick inserted into the middle comes out with a few crumbs, about 30 minutes (40 minutes if not using silicone) for pan brownies, and 14 to 15 minutes for mini brownie bites.
  • Cool the brownies in the pan on the counter. Lift brownies out of the pan by the foil, if needed. Peel off the foil and cut into squares, sticks or shapes using a cookie cutter. Serve. Store extra brownies in a tightly sealed container at room temperature for up to 3 days.

Steps:

  • Soften margarine and blend in sugar and cocoa. We like to mix the brownie batter by hand for best results.
  • Beat together and add 4 eggs, one at a time, mixing after each one.
  • Add flour, salt and vanilla and mix well.
  • Spread on large half sheet baking pan that has been lightly greased. They are about 18 x 13 x 1 inch.
  • Bake 22-25 minutes at 350.
  • Remove from oven and cover entire top with 1 package of miniature marshmallows.
  • Return to oven for 3 minutes, until marshmallows are soft and puffy.

The first time I made brownies without my mother was in the late 1960s, using a recipe from Paula Peck, the cookbook writer. Over the years, I tinkered with that and a similar version by Marion Cunningham. As my daughters learned to cook, they experimented a bit further. But we never really strayed from the originals. As long as you keep the flour to a minimum and don't add chemical leavening like baking powder, you will produce a true and beautiful brownie.

3 ounces unsweetened chocolate
8 tablespoons (1 stick) salted or unsalted butter, more for greasing pan
1 cup sugar
2 eggs
1/2 cup all-purpose flour
Pinch salt if you use unsalted butter
1/2 teaspoon vanilla extract, optional

Steps:

  • Heat oven to 350 degrees. Combine chocolate and butter in a small saucepan over very low heat, stirring occasionally. When chocolate is just about melted, remove from heat, and continue to stir until mixture is smooth. Meanwhile, grease an 8-inch-square baking pan. If you like, also line it with waxed or parchment paper and grease that.
  • Transfer mixture to a bowl, and stir in sugar. Beat in eggs, one at a time. Add flour (and salt and vanilla if you are using them), and stir to incorporate. Stop stirring when no traces of flour remain.
  • Pour into pan, and bake 20 to 30 minutes, or until set and barely firm in the middle. Cool on a rack before cutting.

My mom has made a variation of these brownies as long as I can remember. She doesn't know where she got the recipe from. I substituted whole wheat flour and honestly no one can tell it isn't made with white flour! You can substitute plain applesauce for part of the oil, but I like to use 1 c oil (as my mom does) with no applesauce - faster to measure, and it is a dessert after all! I hope you enjoy!

1 1/2 cups whole wheat flour
2 cups granulated sugar
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Grease and 'flour' 9x13" pan, using cocoa powder instead of flour. (This will eliminate any white spots on bottom of brownies).
  • In a large bowl, stir together cocoa, flour, sugar, salt, and baking powder.
  • Add oil, eggs, vanilla, and any optional ingredients. Mix well, stopping as soon as all ingredients are incorporated - excessive mixing will cause a cake-like texture.

1 c boiling water
2 c sugar

1/2 c buttermilk
1 tsp baking soda

  • 1. Preheat oven to 350º. Prepare baking pan by greasing and flouring a 9x13 inch pan. I used cocoa on my pan instead of flour.
  • 2. Combine 2 sticks real butter, 1 cup boiling water and 4 Tbsp. cocoa in small sauce pan and bring to a boil.
  • 3. While waiting for hot mixture to boil, mix 2 cups sugar, 2 cups flour and the salt together. Add dry ingredients to hot mixture. Add 1/2 cup buttermilk and 1 tsp. baking soda together, and add 2 eggs. Mix well. Add nuts if you are using them. Mix all above ingredients together. Pour into prepared pan and bake at 350º for 40 minutes. Cool slightly. Don't overbake.
  • 4. ICING: Melt 1 stick butter, 4 Tbsp. milk and 4 Tbsp. cocoa together in small pan. Add 1-2 cups powdered sugar to thicken. Add 1 tsp. vanilla extract. Spread icing on slightly cooled brownies. Sprinkle nuts over iced brownies. Cover until ready to serve. This is truly the best brownies I have ever eaten.
