¼ cup chopped onion
¼ cup quick-cooking oats
⅛ cup cornmeal
1 cup dried bread crumbs
1 ½ teaspoons salt
1 tablespoon white sugar
1 egg, beaten
½ cup tomato juice
½ cup water
1 tablespoon barbecue sauce
1 dash liquid smoke flavoring
1 tablespoon distilled white vinegar
¼ cup ketchup
1 tablespoon brown sugar
2 teaspoons prepared mustard
2 dashes liquid smoke flavoring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, onion, oatmeal, cornmeal, bread crumbs, salt, sugar, egg, tomato juice, water, barbecue sauce, 1/8 teaspoon liquid smoke and vinegar. Mix together thoroughly and place mixture into a lightly greased 9x5 inch loaf pan.
  • In a separate small bowl, combine the ketchup, brown sugar, mustard and 2 drops liquid smoke and mix thoroughly. Spread over the top of the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for approximately one hour.

2 pounds ground beef
1 cup quick cooking oats
1 onion, chopped
½ cup milk
2 eggs
¼ cup ketchup
¼ cup chopped fresh parsley
1 clove garlic, minced
1 teaspoon salt
½ teaspoon dried basil
¼ teaspoon ground black pepper
2 tablespoons ketchup
4 slices Cheddar cheese, halved

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground beef, quick oats, onion, milk, eggs, 1/4 cup ketchup, parsley, garlic, salt, basil, and black pepper together in a large bowl until thoroughly combined; pat the mixture into a 9x5-inch loaf pan.
  • Bake meatloaf in the preheated oven until firm and no longer pink inside, 1 to 1 1/4 hours. An instant-read meat thermometer inserted into the center of the meat loaf should read at least 160 degrees F (70 degrees C).
  • Remove from oven, spread 2 tablespoons ketchup over loaf, and top with Cheddar cheese slices; return to oven and bake until cheese has melted, about 5 more minutes.

He's been eating it happily ever since. The kids always cheered when they heard that meatloaf was for dinner.

MEATLOAF:
1 Tbsp canola oil
1 medium yellow onion, chopped fine
4 clove garlic, minced
1/2 tsp dried thyme
2 large eggs
1/2 c milk, plus extra as needed
2 tsp dijon mustard
2 tsp worcestershire sauce
1 tsp salt
1/2 tsp pepper
1/4 tsp tabasco sauce
2 lb meatloaf mix (ground beef, pork and veal)
1 1/3 c fresh breadcrumbs
1/3 c fresh, minced parsley
6 to 8 slices of bacon
SAUCE:
1 c ketchup
1/2 c light brown sugar, packed
8 tsp cider vinegar

Steps:

  • 1. Preheat the oven to 350 degrees. Heat the oil in an 8-inch skillet over medium-high heat until shimmering. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and thyme and cook until fragrant, about 15 seconds. Set aside to cool for 5 minutes.
  • 2. Meanwhile, mix together the ketchup, brown sugar and vinegar and set aside.
  • 3. In a separate bowl, mix the eggs, milk, mustard, Worcestershire, salt, pepper and Tabasco together.
  • 4. Mix the meatloaf mix, bread crumbs, parsley, sautéed onion mixture and egg mixture until evenly blended and the mixture doesn't stick to the bowl (if the mixture sticks, add additional milk, a tablespoon at a time, until it no longer sticks).
  • 5. Turn the meat mixture into a foil-lined baking sheet and shape into a 9x5-inch loaf. Brush with half of the ketchup mixture and wrap with bacon. Bake the loaf for 60 minutes or until done (bake until the center of the loaf measures 160 degrees on an instant-read thermometer).
  • 6. Cook the remaining ketchup mixture on the stove until the sugar has dissolved. Keep warm.
  • 7. Let meatloaf cool for 10 minutes before slicing and serving. Serve with leftover sauce.

1 tablespoon olive oil
1 green bell pepper, diced
½ cup diced sweet onion
½ teaspoon minced garlic
1 pound extra-lean (95%) ground beef
1 cup whole wheat bread crumbs
2 large eggs
¾ cup shredded carrot
¾ cup shredded zucchini
salt and ground black pepper to taste
¼ cup ketchup, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Heat olive oil in a skillet over medium heat; cook and stir green bell pepper and onion in the hot oil until onion is transparent and bell pepper is softened, 5 to 10 minutes. Add garlic and cook until fragrant, 1 to 2 minutes.
  • Combine ground beef, bread crumbs, eggs, carrot, zucchini, salt, pepper, and bell pepper mixture in a large bowl; mix well using your hands. Press meat mixture into the prepared loaf pan.

I don't really like meatloaf at all, but when mom made this one, she really had a hit with the entire family! Not your typical meatloaf -- very tasty! Use fresh sausage, not frozen! Use more crackers if the loaf seems too moist before cooking. Excellent for sandwiches the next day!!

1 large green pepper, chopped
1 large onion, chopped
2 teaspoons olive oil
4 garlic cloves, minced
2 large eggs, lightly beaten
1 cup 2% milk
6 slices bread, cubed
1-1/2 cups shredded cheddar cheese
2-1/4 teaspoons dried rosemary, crushed
2 teaspoons salt
1 teaspoon pepper
2 pounds lean ground beef (90% lean)
1 pound ground pork
1-1/2 cups ketchup
1/4 cup packed brown sugar
2 teaspoons cider vinegar

Steps:

  • Saute green pepper and onion in oil in a large skillet until tender. Add garlic; cook 1 minute longer. Transfer to a large bowl; cool to room temperature., Preheat oven to 350°. Add eggs, milk, bread, cheese, rosemary, salt and pepper to sauteed vegetables. Crumble beef and pork over mixture and mix well., Pat into 2 greased 9x5-in. loaf pans. Combine ketchup, brown sugar and vinegar in a small bowl. Spread over tops. , Bake, uncovered, 50-55 minutes or until no pink remains and a thermometer reads 160°. Let stand 10 minutes before slicing. Freeze option: Shape meat loaves in plastic wrap-lined loaf pans; top with ketchup mixture. Cover and freeze until firm. Remove from pan and wrap securely in foil; return to freezer. Freeze up to 3 months. To use, partially thaw in refrigerator overnight. Preheat oven to 350°. Unwrap meat loaf and place in pan. Bake, uncovered, 1-1/4-1-1/2 hours, or until a thermometer reads 160°.

½ cup crushed saltine crackers
1 (8 ounce) can tomato sauce
2 eggs, beaten

¼ cup ketchup

2 teaspoons butter
3/4 pound ground beef
1/4 pound ground pork
1 cup minced onions
1/2 cup minced green peppers
1 tablespoon chopped garlic
2 eggs
1/2 cup heavy cream
3/4 to 1 cup bread crumbs
Salt and fresh ground black pepper
2 cups veal stock
2 tablespoons flour
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.

1 pound ground beef, moistened
1/2 onion, finely chopped
1 egg
2 teaspoons Worcestershire sauce
1 cup bread crumbs
1 cup ketchup

Steps:

  • Preheat oven to 350 degrees F.
  • In a small bowl, mix together the horseradish, mustard, salt, and pepper. Set aside.
  • In large bowl, mix ground beef, onion, egg, and Worcestershire sauce. Add contents of small bowl and mix thoroughly. Add the bread crumbs and combine well.

The only thing I like better than meat loaf is meatloaf sandwiches, and this meatloaf is even better the next day; sliced between whole wheat bread, topped with a slice of cheese, and lots of mayo. Note: I omitted the veal and adjusted the amount of beef and pork to compensate--it was still great.

3 slices white bread (crust removed)
1 cup carrot (shredded)
1 celery rib (minced)
1/2 cup onion (minced)

2 eggs (beaten)
2 teaspoons salt

Steps:

  • Preheat oven to 400°F.
  • Process or crumble the bread and combine with the minced vegetables in a large bowl.
  • Mix the meat, eggs and seasonings together in a bowl. Knead until thoroughly combined. Add meat mixture to the crumbs/veggie mixture. Combine, but don't over mix.
  • Set a wire rack over an 11 x 17 baking pan. Cut a 5 x 11 piece of parchment paper and place it on the rack.
  • Form the meat mixture into and elongated loaf on the parchment paper.
  • Mix the next 3 ingredients together and baste the loaf--set aside.
  • Heat the oil and sauté the onion rings. When soft and golden in places, add water and cook until most of the water evaporates. Garnish the loaf with the onion rings.
  • Bake 30 minutes, then sprinkle rosemary needles on top. Continue baking for another 25 minutes. Cool on rack for 15 minutes before serving.
