BRAISED RED CABBAGE

This German Braised Red Cabbage is an easy side dish that pairs well with almost any entree!

1 head red cabbage, thinly sliced
1 medium onion, thinly sliced
2 Granny Smith apples, sliced (peel on)
2 tablespoons bacon grease (or sub with butter)
½ cup cider vinegar
½ cup water
3 tablespoons granulated sugar
Salt and pepper, to taste

Steps:

  • Saute the cabbage, onion and apple in the bacon grease until soft, about 15-20 minutes.
  • Stir in remaining ingredients; cover and braise until very soft (about 15-20 more minutes). Taste and season with salt and pepper, if necessary. Serve warm or at room temperature.

This slaw takes days to make, so it's hard to keep up with having it ready for my family! We eat this several times a week! This goes great with my husband's Texas BBQ!

1 head red cabbage, cored and sliced as thinly as possible
¾ cup red wine vinegar
5 tablespoons white sugar
2 tablespoons balsamic vinegar
1 tablespoon salt
1 ½ teaspoons onion powder
1 teaspoon seasoned salt (such as LAWRY'S®)
½ teaspoon ground black pepper
½ cup olive oil

Steps:

  • Put sliced cabbage into a large sealable plastic bag.
  • Whisk red wine vinegar, sugar, balsamic vinegar, salt, onion powder, seasoned salt, and black pepper together in a bowl; pour into bag with the cabbage. Massage the bag to ensure cabbage is completely coated with liquid. Squeeze as much air from the bag as possible and seal.
  • Marinate cabbage in refrigerator, massaging the bag several times a day, until the cabbage is softened and the marinade is deep purple in color, at least 2 days.
  • Pour olive oil into the bag and mix with the cabbage mixture. Seal bag and refrigerate 1 hour more before serving.

My mom made a mean sauerbraten dinner with dumplings and red cabbage. This is her recipe and it's the real mc coy!

1 head red cabbage, sliced thin
1 medium onion, sliced thin
1/2 teaspoon caraway seed
1/4 cup red wine vinegar
1 tablespoon olive oil
3 tablespoons sugar
1 teaspoon lemon juice
1/2 cup apple juice
1 whole apple, peeled,cored and grated
1/2 teaspoon salt

Steps:

  • Sprinkle cabbage with red wine vinegar, caraway seeds.
  • Cover with plastic and marinate overnight in refridgerator.
  • Next day, in a covered saucepan, heat olive oil and saute onions.
  • Add cabbage, sugar, lemon juice, apple juice and grated apple.
  • Simmer covered for 1 hour on the stovetop.
  • Ready to serve with braised meats, potato dumplings and gravy!

1 medium head red cabbage (about 2 pounds), shredded
8 bacon strips, chopped
1 small onion, quartered and thinly sliced
2 tablespoons all-purpose flour
1/4 cup packed brown sugar
1/2 cup water
1/4 cup cider vinegar
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large saucepan, place steamer basket over 1 in. of water. Place cabbage in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, just until tender, 6-8 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan., Add onion to drippings; cook and stir over medium-high heat until tender, 4-6 minutes. Stir in flour and brown sugar until blended. Gradually stir in water and vinegar. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in cabbage, bacon, salt and pepper.

500g red cabbage, finely shredded
140g coarse sea salt
500ml cider vinegar
200ml red wine
400g granulated sugar
2 tsp black peppercorn
6 bay leaves
2tbsp yellow mustard seed

Steps:

  • Place the shredded cabbage in a colander over the sink and sprinkle with salt. Leave for 2-3 hours, then drain and wash away the salt. Pay dry with a clean tea towel.
  • Put the vinegar, wine, sugar, peppercorns and bay leaves into a big, wide saucepan and simmer until the liquid has reduced by about half. Set aside for 10 mins to infuse.
  • Strain through a fine sieve into a jug or bowl, and discard the peppercorns and bay leaves. Put the cabbage and mustard seeds into a big bowl, and then pour the strained liquid over. Transfer the cabbage and pickling liquid into sterilised jars and seal. Will last for a month in the fridge.
