A curried spread for veggies and crackers. This is from "A Hundred Years of Island Cooking", an old cookbook from the Hawaiian Electric Company.

Number Of Ingredients 10

1 (15 3/4 ounce) can salmon
1 (10 3/4 ounce) can cream of mushroom soup
1 (8 ounce) package cream cheese
2 (1/4 ounce) envelopes unflavored gelatin
1/4 cup water
1/3 cup celery, minced
1/2 cup green onion, minced
1 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon curry powder

Steps:

  • Oil a 5-cup mold.
  • Drain and flake salmon.
  • In a saucepan, combine soup and cream cheese. Cook over low heat, stirring constantly, until mixture is smooth.
  • Soften gelatin in 1/4 cup water; add to soup mixture, stirring until gelatin dissolves. Fold in remaining ingredients.
  • Pour into prepared mold. Chill until firm.
  • Unmold and serve with assorted vegetables and crackers.

1 lb freshly cooked or canned boneless salmon
1/2 cup diced celery
1/2 cup diced green pepper
1/4 cup finely chopped onion
3 Tbsp chopped fresh dill
1/2 cup mayonnaise
1/2 cup plain yogurt
1 8 oz package of cream cheese
1 can concentrated tomato soup or 8 ounces of puréed tomato sauce
Tabasco sauce
3 Tbsp lemon juice
3/4 cup cold water
4 teaspoons (2 envelopes) unflavored, unsweetened gelatin
One greased or stick-free 6 cup mold, or a few serving bowls.

Steps:

  • Combine the salmon mixture and gelatin: Add the dissolved gelatin to the salmon mixture and mix well.
  • Chill: Pour the mixture into a decorative mold or into serving bowls and refrigerate for 6 hours, or until firm.
  • Unmold: If using a decorative mold, unmold the salmon mousse by placing the bottom of the mold in hot water for a few seconds and turn the mold over onto a large serving dish to release the mousse. The surface of the mousse may appear a bit ragged. If you cover with plastic wrap and re-chill in the refrigerator, it should become smoother. Refrigerate until ready to serve. Serve salmon mousse with sliced avocados, celery sticks, lettuce leaves, tomatoes, olives, slices of baguette, and/or crackers.

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1 tablespoon freshly squeezed lemon juice
1 tablespoon minced fresh dill
1 teaspoon prepared horseradish, drained
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 pound (4 ounces) smoked salmon, minced

Steps:

  • Cream the cheese in an electric mixer fitted with a paddle attachment until just smooth. Add the sour cream, lemon juice, dill, horseradish, salt, and pepper, and mix. Add the smoked salmon and mix well. Chill and serve with crudites or crackers.
  • If you can find it, I prefer Norwegian salmon; it's drier and less salty than other smoked salmon.

16 ounces smoked salmon cream cheese, softened
2 ounces pimiento
2 tablespoons grated onion
1 cup ground almonds
1/2 cup sour cream
1/3 cup fresh dill, stems removed

Steps:

  • Combine cream cheese, pimientos, onions and almonds. Spoon mixture onto parchment paper, wrap and place in a bowl to form a mold. Chill for 4 to 6 hours. Once chilled, remove from mold, unwrap and place on serving plate.
  • Spread evenly with sour cream and garnish sprinkled with dill. Serve mold on a platter or cheese board with assorted crackers.
