"THIS SALAD makes a nice addition to any meal because it's both tasty and colorful. My aunt gave me the recipe nearly 30 years ago and our family has enjoyed it ever since. You're sure to get the same kind of response I've learned to expect every time I serve this salad to my family or guests."

Number Of Ingredients 12

2 cups boiling water
1 package (6 ounces) lime gelatin
1 cup cold water
1 tablespoon vinegar
Dash salt
Dash white pepper, optional
3/4 cup mayonnaise
1/2 cup shredded carrots
1/2 cup finely chopped peeled cucumber
1/2 cup finely chopped celery
1/2 cup finely chopped green pepper
2 tablespoons finely chopped onion

Steps:

  • In a bowl, pour boiling water over gelatin. Stir to dissolve. Add cold water, vinegar, salt, and pepper if desired. Pour 1 cup of mixture into 6-cup mold; set aside. Chill remaining gelatin for 30 minutes, then add mayonnaise and blend with a rotary beater until smooth. Chill until almost set. Meanwhile, chill gelatin in mold until almost set. Turn mayonnaise/gelatin mixture into a bowl and whip until fluffy. Fold in vegetables. Spoon into mold. Chill until firm. Unmold to serve.

2 packages (3 ounces each) lime gelatin
2 cups boiling water
2 pints lime sherbet, softened
1 carton (8 ounces) whipped topping, thawed

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in sherbet until well blended. Chill until syrupy. , Spoon whipped topping into a large bowl. Gradually beat in the gelatin mixture on low speed until well blended. Pour into a 12-cup mold coated with cooking spray. Refrigerate for 6-8 hours or until set.

1 cup boiling water
1 (3 ounce) package lime gelatin
1 (8 1/4 ounce) can crushed pineapple, drained (reserve syrup)
lettuce
mayonnaise

Steps:

  • Pour boiling water on gelatin in bowl, stir until gelatin is dissolved.
  • Add enough water to reserved pineapple syrup to measure 1 cup; stir into gelatin. Chill until thickened but not set.
  • Stir in pineapple.
  • Pour into 4 to 6 individual molds or one 4-cup mold.
  • Chill until firm.
  • Place 2 servings on lettuce and top each with mayonnaise.
  • Can also serve as a dessert by topping with whipped topping.

This is a holiday favorite in the Johnston household. My husband grew up having this for Thanksgiving and Christmas. I usually do it for Easter. As for most of my recipes, this one comes from my late mother-in-law's recipe box.

1 lg. box lime jello
1 lg. pkg. cream cheese
1 20 oz. can crushed pineapple
1 12 oz. pkg. cool whip

Steps:

  • 1. Measure pineapple juice and enough liquid to make 1 1/2 cups, bring to boil & dissolve jello into it. Cool til syrupy & fold into cheese & pineapple which has been mixed together. Fold in cool whip. Chill. Garnish with nuts & maraschino cherries ( dates may be added).
  • 2. Note: though nowhere does it state, I make this in a 9x13 glass pan.

I found this recipe in a TOH cookbook and added the strawberries for a festive Christmas look. It is very creamy and light. Cooking time includes refrigeration time.

2 (3 ounce) packages lime gelatin
2 cups boiling water
2 pints lime sherbet, softened
1 (8 ounce) carton whipped topping
1 quart fresh strawberries

Steps:

  • In a large bowl. dissolve gelatin in boiling water. Stir in the sherbet until syrupy.
  • Refrigerate until mixture is syrupy.
  • Spoon whipped topping into large mixing bowl. Gradually beat in the gelatin mixture until well blended.
  • Coat a 12 cup gelatin mold with cooking spray. Pour Gelatin into mold. Refrigerate until set about 6-8 hours.
  • Unmold and fill center with washed and patted dry strawberries.
