Cake
2 cups all purpose flour
1 1/4 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon salt
1 cup apple butter
3/4 cup buttermilk
1/2 cup vegetable oil
3 large eggs
2 tablespoons unsulfured (light) molasses
1 cup golden raisins
Frosting
1 1/2 pounds cream cheese, room temperature
2 cups powdered sugar
2 tablespoons unsulfured (light) molasses
1/4 cup (1/2 stick) unsalted butter, room temperature
1 tablespoon vanilla extract
Caramel
1/4 cup firmly packed dark brown sugar
1 tablespoon whipping cream
1 1/2 cups chopped toasted walnuts

Steps:

  • For Cake:
  • Preheat oven to 350°F. Butter and flour two 9-inch-diameter cake pans with 2-inch-high sides. Combine first 6 ingredients in large bowl. Whisk apple butter, buttermilk, oil, eggs, molasses and raisins in medium bowl to blend. Stir apple butter mixture into dry ingredients. Divide batter between prepared pans. Bake until tester inserted into center of cakes comes out clean, about 25 minutes. Transfer cakes to racks and cool 20 minutes. Run small sharp knife around pan sides to loosen cakes. Turn cakes onto parchment-lined racks and cool completely.
  • For Frosting:
  • Beat cream cheese and sugar in medium bowl until smooth. Add molasses, butter and vanilla and beat just until smooth. Place 1 cake layer on plate. Spread 1 1/2 cups frosting over. Top with second cake layer. Spread remaining frosting decoratively over top and sides of cake. Refrigerate while preparing caramel.
  • For Caramel:
  • Stir sugar and cream in heavy small saucepan over medium heat until sugar dissolves. Boil and stir 1 minute. Let stand until very thick but still pourable, about 5 minutes. Drizzle caramel over cake. Press nuts onto sides of cake. (Can be made 1 day ahead. Cover with cake dome; chill. Bring to room temperature before serving.)

1 cup sugar
2 large eggs
1/2 cup molasses
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 cup brewed coffee, cooled
ICING:
1/2 cup butter, softened
1 teaspoon vanilla extract
3 cups confectioners' sugar
3 to 4 tablespoons 2% milk

Steps:

  • Preheat oven to 325°. Grease a 15x10x1-in. pan., Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in molasses. In another bowl, whisk together flour, salt, baking soda and spices; add to creamed mixture alternately with coffee, beating well after each addition. Spread into prepared pan., Bake until toothpick inserted in center comes out clean, 20-25 minutes. Cool completely in pan on a wire rack., For icing, beat butter and vanilla until creamy. Gradually beat in confectioners' sugar and enough milk to reach desired consistency. Spread over cake.

2 sticks (16 tablespoons) unsalted butter, room temperature, plus more for pans

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-2-inch round cake pan. Line bottom with parchment, and butter the parchment.
  • Whisk together flour, baking powder, salt, and spices in a large bowl. In a medium bowl, whisk eggs, sour cream, molasses, ginger, lemon zest, and vanilla.
  • Beat butter and sugar with a mixer on medium-high speed until fluffy, about 3 minutes. Reduce speed to low. Beat in flour mixture in three additions, alternating with the sour cream mixture.
  • Scrape batter into prepared pan, and bake until golden brown and a toothpick inserted into center comes out clean, 40 to 45 minutes. Let cool in pan on a wire rack for 15 minutes. Turn cake out onto rack, remove parchment, and turn right side up. Let cool completely. (Cake can be wrapped tightly in plastic and refrigerated for up to 1 day.)
  • Spread frosting over top of cake. Drizzle with glaze. Serve immediately.

I remember my mother making this when I was growing up. I don't know where she got the recipe .. maybe from a family friend. I added some spices to it to adjust to my taste. It's sort of like a PA Dutch Shoofly Pie without the crust! Please note: the batter is VERY thin ... and there is no "typo" .... this cake has no eggs in...

Number Of Ingredients 8

4 c all purpose flour
2 c sugar
1/2 tsp cinnamon
1/4 tsp ground cloves
1/2 lb margarine (2 sticks), softened
1 c dark molasses
2 c boiling water
1 Tbsp baking soda

Steps:

  • 1. Heat the oven to 350 degrees F. Spray a 13X9-inch baking pan with baking spray. Set aside.
  • 2. In a large bowl, combine the flour, sugar, cinnamon and cloves. Mix well. Cut in the margarine with a pastry blender until mixture resembles crumbs the size of a pea.
  • 3. Measure out 1 1/4 cups of the crumbs and place in a bowl. Set aside.
  • 4. In a large microwave safe bowl, bring 2 cups water to a boil. Remove from microwave and stir in the molasses. Add the baking soda and mix quickly. (This mixture will foam quite a bit at this stage.)
  • 5. Quickly pour into crumbs and mix quickly qith a wire whisk. Mixture will be VERY thin.
  • 6. Pour into prepared baking pan. Sprinkle reserved crumbs evenly over top.
  • 7. Place in oven and bake for 45 minutes or until cake passes the toothpick test.
  • 8. Please note: this recipe can be halved and baked in an 8X8X2 baking pan.

1 stick (8 tablespoons) unsalted butter, room temperature
1/4 cup sour cream
1/2 cup confectioners' sugar, sifted
1/8 teaspoon salt

  • Beat cream cheese and butter with a mixer until fluffy. Beat in sour cream, then sugar and salt. Frosting can be refrigerated in an airtight container for up to 1 day; bring to room temperature, and stir well before using.

2/3 cup milk
4 eggs
1/4 cup molasses
1 cup chopped walnuts (optional)
1 cup craisins or 1 cup dried fruit (optional)
1 (16 ounce) container prepared white frosting
2 tablespoons molasses

Steps:

  • Cake: Preheat oven to 350 degrees.
  • Grease and flour 13 x 9 pan.
  • I use Bakers Joy Spray.
  • In a large bowl combine cake mix, milk, eggs and molasses (and fruit or nuts if using).
  • Beat on low for 2 minutes.
  • Beat on high for 4 minutes.
  • Pour into prepared pan.
  • Bake for 35-40 minutes or until center of cake springs back when lightly pressed.
  • Cool in pan.
  • Frost when completely cool.
  • Frosting: In a medium bowl stir molasses into frosting until completely mixed.
  • Spread on cake.

1 c butter, room temperature
1 c sugar
3 eggs
1 c molasses
2 c all purpose flour
1/2 tsp salt
1/2 tsp nutmeg
1 tsp cinnamon
1/4 tsp cloves

2 tsp baking soda
CREAM CHEESE ICING
8 oz cream cheese
1/4 c butter, softened
1 tsp vanilla
1 c powdered sugar
1 Tbsp molasses

Steps:

  • 1. In a mixing bowl cream butter with sugar, beating with electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Add molasses and blend well. In another bowl combine flour, salt, nutmeg, cloves, and cinnamon; stir well. Slowly add flour and spice mixture to creamed mixture, beating at low speed. Combine water with baking soda and add to cake batter, mixing well. Batter will be thin. Pour batter in to a greased and floured 13x9x2-inch baking pan. Bake at 350° for 35 to 45 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
  • 2. For icing...Beat cream cheese and butter until smooth. Add powdered sugar, vanilla and molasses and beat until combined and smooth. You can add a little milk if mixture is too thick. Ice cake when cooled.

1 (18 ounce) package spice cake mix
2/3 cup milk
4 eggs
1/4 cup molasses
1 cup chopped walnuts (toasted)
1 cup dark raisin
2 tablespoons orange zest
orange marmalade
whipped topping
freshly ground nutmeg

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a 9- inch square cake pan. Line the pan's bottom with parchment; butter the parchment.
  • In a large mixing bowl combine the cake mix, milk, eggs, molasses, walnuts, raisins, and orange zest. (Note the nuts and raisins are optional.).
  • With an electric mixer, beat on low for 2 minutes. Beat on high for 4 minutes.
  • Scrape batter into the prepared pan; bake 16-20 minutes, or until the center of the cake springs back when lightly pressed. Let cake cool down a-bit (just enough so that it can be easily handled); carefully turn cake out onto a wire rack, remove parchment, and turn right side up. Spoon marmalade over WARM cake. Let cake continue to cool on wire rack. Transfer to your favorite cake pedestal and crown each serving with a dollop of whipped cream topping and a sprinkling of fresly ground nutmeg. (This cake is flavorful enough to be serve unadorned, or If desired, sprinkle with sifted confectioners sugar instead of the marmalade and whipped topping.).
  • Cook's Tip: Prior to topping with orange marmalade, cake can be wrapped tightly in plastic and refrigerated for up to 1 day.
