LOW FAT BANANA OATMEAL MUFFINS



Low Fat Banana Oatmeal Muffins image

Moist and delicious and less than 2.5-grams of fat per serving, these low fat banana oatmeal muffins are baked with honey and can jump start anyone's day.

1 cup old fashion oatmeal
1 cup whole wheat flour
1/2 cup wheat bran
1/3 cup honey
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon baking powder
2 cup over ripe and mashed bananas
2 teaspoon extra virgin olive oil
2 large eggs

Steps:

  • Preheat oven to 350ºF.
  • Apply non-stick spray or line with paper lines a 12-cup muffin pan.
  • In a medium sized bowl whisk together oatmeal, flour, wheat bran, baking soda, baking powder, cinnamon and salt.
  • In a large bowl, whisk together olive oil, honey and vanilla.
  • Stir in mashed bananas with the oil mixture.
  • Mix in eggs into oil mixture.
  • Add dry ingredients into the wet ingredients and mix until combined.
  • Divide batter evenly into the prepared muffin pan and bake in the oven for 30 minutes, or until a toothpick inserted in the center of the bread comes out clean.
  • Let the muffins rest in the pan for 5 minutes then remove from pan and place onto a cooling rack to cool.

This is a fabulous recipe for banana bread! This can also be baked in mini loaf pans and it also makes 12 muffins, bake for 20-25 minutes. I also added in some shredded carrots and nuts then baked it in a 9x5-inch loaf pan, for less fat use low-fat yogurt or sour cream

1 cup flour
1/2 cup whole wheat flour
2/3 cup oats
1 1/4 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2/3 cup sugar
1/4 cup butter, softened
1/3 cup dark molasses
2 large eggs
1 cup mashed ripe banana
1/3 cup low-fat sour cream (or use full-fat) or 1/3 cup low-fat yogurt (or use full-fat)
1/4 cup applesauce
2 teaspoons vanilla

Steps:

  • Set oven to 350 degrees F.
  • Grease an 8 x 4-inch loaf pan.
  • In a bowl sift together white and whole wheat flour, oats, baking soda, cinnamon and salt.
  • In another bowl beat the butter with sugar and molasses for about 2 minutes.
  • Add in eggs, beat until combined.
  • Add in bananas, sour cream applesauce and vanilla; beat until blended.
  • Add in the flour mixture; beat at low speed just until moistened.
  • Spoon the batter into prepared baking pan.
  • Bake for about 1 hour, or until bread tests done.
  • Cool for 10 minutes, then remove to a wire rack to cool completely.

1 egg
1 cup molasses
2 cups mashed banana
1 cup whole wheat flour
¾ cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground nutmeg
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream the butter. Beat in egg, molasses and banana. Mix in whole wheat flour, all-purpose flour, baking soda, salt, nutmeg and walnuts; stir until well blended. Pour batter into prepared pan.

3/4 cup all-purpose flour
3/4 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda

2 egg whites
1 cup mashed ripe bananas (about 2 medium)
1/2 cup packed brown sugar
1/4 cup fat-free milk
1/4 cup canola oil
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, beat the egg whites, bananas, brown sugar, milk and oil. Stir into dry ingredients just until moistened. 1 cup unprocessed wheat bran
1 cup buttermilk (shaken)
4 tablespoons unsalted butter, at room temperature
1/4 cup light brown sugar, lightly packed
2 extra-large eggs, at room temperature
6 tablespoons unsulphured molasses
1 teaspoon grated orange zest
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup raisins
1 cup large-diced bananas
1/2 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
  • Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
  • In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
  • With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.

4 cups boiling water
2 cups old-fashioned oats
1 cup molasses
1/4 cup sugar
3 tablespoons canola oil
3 teaspoons salt
1 package (1/4 ounce) active dry yeast
9 to 10 cups all-purpose flour

Steps:

  • In a large bowl, pour boiling water over cereal. Add the molasses, sugar, oil and salt. Let stand until mixture cools to 110°-115°, stirring occasionally. Stir in yeast. Add 8 cups flour. Beat until smooth. Add enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch dough down and divide into thirds; shape into loaves. Place in three greased 9x5-in. loaf pans. Cover and let rise until doubled, about 1 hour. , Bake at 350° for 45-50 minutes or until golden brown. Remove from pans to wire racks to cool.

WHOLE WHEAT OAT BANANA BREAD



Whole Wheat Oat Banana Bread image

Very gooey and yummy, this is my favorite Banana bread recipe. TIPS: Buy whole wheat flour that has NOT been bleached. Use only PURE honey. Use Almond, Rice or Soy milk (try not to use cow milk). Extra virgin cold pressed olive oil has the best taste and has no extra junk in it. Use real vanilla extract, imitation has too many chemicals and not as good a flavor. Has plenty of fiber to help cleanse the colon which is always the best place to start cleaning for a successful diet and a healthy lifestyle.
