Gluten-free, vegan, made with nut flour/meal. They taste like a "normal" cookie! We can't stop eating them.

Number Of Ingredients 7

2 cups dried coconut, medium-shred
2 cups almond meal
1 cup walnut meal
3/4 cup raisins
1 teaspoon baking soda
1 banana, mashed
1/2 cup molasses

Steps:

  • Mash the banana, mash in the molasses.
  • Mix the dry ingredients, then add them to the mashed banana/molasses mixture.
  • Form the batter into 2-inch-diameter balls, squeeze a little to stick them together. Use olive oil on your hands if it is too sticky.
  • 35 minutes at 350 degrees F.

1 (3 pound) whole chicken, cut into pieces
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground cinnamon
2 tablespoons molasses
2 tablespoons cider vinegar
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large baking dish.
  • Season the chicken with salt, pepper, and cinnamon. Arrange in the prepared baking dish.
  • In a bowl, mix the molasses, vinegar, and mustard.
  • Bake chicken 20 minutes in the preheated oven. Coat chicken with the molasses mixture. Continue baking 20 minutes, or until chicken juices run clear.
