I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

Number Of Ingredients 10

1/2 cup butter (or margarine)
1 1/4 cups sugar
1 teaspoon vanilla
2 eggs (beaten)
3 ripe bananas, smashed (about 1 cup)
1/4 cup milk
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2-1 cup chopped pecans (optional) or 1/2-1 cup walnuts (optional)

Steps:

  • Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
  • *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!

This is a very easy, "no mixer" bread to make. It is very moist and a little heavy type banana bread. The really important thing to remember is using all black bananas to get my same results. I always use 5 medium sized bananas and this recipe makes 2 loaves. Also, I've never used buttermilk, but sour milk instead..a little vinegar added to regular milk. I've used this recipe since 1972 and last year made 32 loaves to give away for Christmas! It's truly a wonderful bread. I only bake it until the toothpick comes out almost clean, as we like it really moist. If you over bake it, or wait til the toothpick is completely clean, the bread will be a lot dryer. I realize some like it this way, so thats why I've given this hint. My family and friends would rather have it a little under done than over. It's so good with coffee, butter/jelly or I like mine just plain. I bake it in tin foil pans and it freezes wonderfully. I try to always have one or two in the freezer for company, or a little gift. This recipe came from a ladies club cookbook. The kind where everyone contributes recipes, they are made into a recipe book and sold to make money for charities. All the cooks are just plain "down home" country gals that produce miracles in the kitchen. It's my favorite cookbook and I've almost worn it out and it can't be replaced. I know there are many banana bread recipes here, so thanks for trying this recipe. I hope you enjoy it!

2 cups sugar
1/2 teaspoon salt
2 1/4 cups flour
3/4 cup vegetable oil
3 large eggs
1 teaspoon vanilla
1 1/3 teaspoons baking soda
1/4 cup buttermilk (I've always used sour milk)
1 cup chopped pecans
4 -5 bananas (use completely black bananas, this is very important)

Steps:

  • Heat oven to 350°. Grease or spray 2 loaf pans.
  • In a large bowl, mash bananas with a masher or by well washed hands.
  • Dissolve soda in buttermilk-- use a larger container as it will foam up quite a bit.
  • Mix all ingredients by hand and add in 1 cup chopped nuts. Bake at 350° for 1 hour, or until toothpick comes out ALMOST clean.
  • Totally clean will mean a dryer loaf.
  • Let cool 15 minutes after removing from oven and remove from pans.
  • Or, let cool, cover with foil, slide into freezer bags and freeze.
  • Great when using tin foil pans.

Steps:

  • 1.Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • 2.In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Sift then Combine the flour, baking soda, cinnamon, nutmeg, ground cloves and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.
  • 3.Bake at 350 degrees F (175 degrees C) for 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

1 1/2 cups flour
1 teaspoon baking soda
1/8 teaspoon salt
1 1/2 tablespoons ground flax seeds (optional)
1/4 cup butter, at room temperature (1 stick)
1 1/2 cups sugar
2 eggs, slightly beaten
1 teaspoon vanilla extract
1 teaspoon orange zest
2 tablespoons orange juice (or juice from 1/2 of a medium orange)
1/2 cup chopped walnuts
2 ripe bananas, mashed
1 cup confectioners' sugar
1 tablespoon orange juice
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 375 degrees F. Butter a loaf pan and set aside.
  • In a bowl, sift together the flour, baking soda, salt, and flax seeds.
  • In another bowl, mix the butter, sugar, eggs, and vanilla until creamy. Add the orange zest and juice and stir lightly.
  • Slowly fold the flour mixture into the wet ingredients until combined, then add the nuts and banana, mixing until just combined. Try not to over mix.
  • Pour into greased loaf pan and bake for 1 hour, or until toothpick inserted into middle of loaf comes out clean.
  • Allow bread to cool in the pan for 10 minutes before transferring to rack. Cool completely before glazing.
  • FOR THE GLAZE: Combine the confectioner's sugar and orange and/or lemon juice. Stir until smooth. Pour over cooled bread.

1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1 cup mashed ripe bananas (2 medium)
3/4 cup silken soft tofu
1/4 cup canola oil
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, beat the sugar, bananas, tofu, oil and and vanilla. Beat into dry ingredients just until moistened.   • 1. Set the oven a 350 ob high altitud, 370 for all others. Grab a little of the flour and add it to the raisins and nuts in a small bowl this will avoid sinkage. 2. Butter and flour the bread pan or mold. 3.Beat the butter and the sugar until soft and add one egg at a time. Add the vanilla extract. 4.Puree the bananas. Set it at side. 5.Mix the dry ingridients (flour, cinnamon, salt, baking soda and nutmeg) 6. Put all ingridients together but AVOID OVERMIXING. 7 Bake for about 1 hour or a tooth pick comes out clean.

2 Tbsp milk
1/4 c sour cream
1 tsp almond extract
2 c plain flour
1 1/2 tsp baking powder

1 c mashed bananas
1 1/2 c chopped nuts

  • 1. Grease a large loaf pan and set aside. Heat oven to 350 degrees. Mash bananas set aside. In a large mixing bowl mix together all the dry ingredients, add milk, eggs, sour cream, orange juice. Mix well. Add almond extract and bananas. Mix this well. Lastly add nuts.

2 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1 c sugar
1 stick butter, melted
2 large eggs
1 tsp vanilla extract
2/3 c yogurt, plain or vanilla flavored
3 large bananas
1 c pecans, chopped

Steps:

  • 1. Preheat oven to 400 degrees F., 375 degrees F. if oven runs hot. Chop pecans.
  • 2. Put flour, baking soda, and salt in a bowl and whisk together. Set aside.
  • 3. Mix sugar and butter together on medium until creamy. Add eggs one at a time. Add yogurt and extract. Mash bananas. Now, add bananas and then stir in nuts.
  • 4. Spray one or two 9x4 pans. One makes a very big, tall loaf and two makes an average size loaf of bread. I usually make two. Pour into greased pans.
  • 5. Bake at 400 degrees F. for 55 minutes to 1 hour or until golden brown and toothpick comes out clean. My cook at 375 if your oven runs hot.
  • 6. Cool on racks for about 5 to 10 minutes, remove from pans and continue to cool on racks.

Some banana tips: This bread is best with very ripe, black bananas. Put ripe bananas in the freezer. They will ripen a little more and stay usable for several months. The frozen bananas will thaw in less than an hour at room temperature. You can also ripen a banana in the microwave. Start with 30 seconds. Add 15 more seconds, continue until ripe.

1 cup sugar

Steps:

  • Heat oven to 350 degrees. Grease or spray 2 8" x 4" loaf pans.
  • Use very ripe bananas, 5 is best. In a large bowl, mash bananas.
  • Add eggs, vanilla, and applesauce and blend.
  • Add dry ingredients and stir well. (1/2 cup Splenda Plus for baking may be substituted for sugar).
  • Dissolve baking soda in milk. Put this in a container bigger than one cup. It will foam up a lot.

  • After removing from oven, let cool for 15 minutes and remove from pans. Bread will freeze nicely.

Sugar breaks down our skin cells (think what sugar does to fresh strawberries when we make shortcake...the juice is from the broken down strawberry skin, right? Well, same with our skin. I look 10 years younger since living this healthy lifestyle. But, I have lived in the kitchen perfecting recipes that we use everyday but yet without the sugars and white flour. Oh, I do use splenda to bake and sweeten. I hear people say they don't think this artificial sweetner is good for them. Well....I hear about thousands of people dying of sugar diabetes daily and never heard of anyone dying of splenda. This banana bread is delicious and very good for everyone, including diabetics. My motto: Eat like a diabetic and you never will become a diabetic!

Pour the dry ingredients in the banana mixture and beat until blended. Add nuts and stir. Pour into a greased loaf pan. Bake at 350 degrees for 45 minutes. Check for doneness with toothpick.
  • NOTE: *WHITE whole wheat flour is made by the company King Authur and can be found in any grocery store usually. This is the best whole wheat flour because it's made with yellow wheat which is lighter than red wheat so it doesn't have that heavy taste. It's great for baking healthy and acts like regular flour but always add more moisture like vege oil or apple sauce, etc. when using any whole wheat flour. My family doesn't like whole wheat baked goods except when I use this kind of flour. Whole wheat pastas are also made with yellow as well as red wheat so if you don't want real heavy pasta try to find one that is lighter in color and that will be the one made with yellow wheat. I didn't know any of this until I started working as a secretary for a wheat mill in Quincy, MI.
