This is adapted from the recipe off the back of the Ritz cracker box. Add a dollop of homemade whipped cream or crème fraîche to balance out the sweetness of the filling and play up the puckery lemon flavor.

For the Crust:
2 unbaked pie crusts (I used the Food Lab's Easy Pie Crust )
1 egg
1 tablespoon milk
1 tablespoon sugar
For the Filling:
2 cups sugar
1 3/4 cups water
2 teaspoons cream of tartar
Zest and 2 tablespoons juice from 1 lemon
2 teaspoons of vanilla extract
36 Ritz crackers, coarsely broken
2 tablespoons unsalted butter, cut into small pieces
3/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425°F. In a medium saucepan combine sugar, water and cream of tartar, whisking until sugar has dissolved. Bring mixture to boil over high heat, whisking occasionally, then reduce heat to medium. Simmer for 15 minutes or until mixture has reduced to 1 1/2 cups. Stir in zest, juice and vanilla. Set aside to cool for 30 minutes.
  • Roll out crusts. For a nine inch pan your bottom crust should be around 11 inches in diameter, your top crust, about 10 inches. Place bottom crust in pie pan or dish. Add crumbled crackers. Pour syrup over crackers and dot with pieces of butter then sprinkle evenly with cinnamon.
  • Beat together egg and milk. Place top crust over pie. Seal and flute the edges and brush with egg wash then sprinkle with sugar. Cut several small slits into the top crust to vent the steam. Bake for 30 minutes or until golden brown. Cool and serve. Store covered.

2 cups water
2 teaspoons cream of tartar
1 lemon, rind of, grated
36 ritz crackers
2 cups sugar
2 tablespoons lemon juice
cinnamon

Steps:

  • 2. Directions: Prep Time: 0 mins Total Time: 50 mins 1 Roll out bottom crust of pastry and fit into 9-inch pie plate. Break Ritz Crackers coarsely into pastry-lined plate. Combine water, sugar and cream of tartar in saucepan, boil gently for 15 minutes. 2 Add lemon juice and rind. 3 Cool. 4 Pour this syrup over Crackers, dot generously with butter or margarine and sprinkle with cinnamon. 5 Cover with top crust. Trim and flute edges together. 6 Cut slits in top crust to let steam escape. Need a quick dessert, like a yummy apple crisp, but no apples on hand? Made in the tradition of the Ritz Mock Apple Pie, you have everything in your pantry for this no-crust crisp. It's a brain twister - tastes like the real thing!

2 cups water
1 cup white sugar
2 teaspoons cream of tartar
30 -40 Ritz crackers
1 teaspoon ground cinnamon
1 tablespoon lemon juice
20 Ritz crackers, roughly crushed for topping
1/2 cup packed brown sugar, for topping
1/2 teaspoon ground cinnamon, for topping
1/3 cup softened butter, for topping

Steps:

  • Preheat oven to 425 and butter a 2 quart casserole.
  • For Filling: Combine water, white sugar, and cream of tartar in a saucepan and bring to a boil. Simmer for 5 minutes stirring occasionally.
  • Roughly break 30-40 Ritz crackers into buttered casserole, scatter evenly. Pour sugar mixture over crackers. Sprinkle with cinnamon and lemon juice.
  • For Topping: Mix together 20 crushed Ritz crackers, brown sugar, cinnamon, and butter until crumbly. Sprinkle over filling.
  • Bake 10 minutes at 425. Reduce heat to 375 and continue to bake 15-20 minutes longer or until topping is golden brown and filling is no longer jiggly. Serve warm with vanilla ice cream or whipped topping.

3/4 cup sugar
2 teaspoons cream of tartar
30 Ritz crackers
9 inches pie shells, unbaked
1 tablespoon lemon juice
1 teaspoon cinnamon
1 cup cracker crumb, crushed
1/2 cup brown sugar
1 teaspoon cinnamon
1/3 cup margarine

Steps:

  • Combine water, sugar and cream of tartar; bring to a boil.
  • Drop in whole crackers and simmer for 5 minute.
  • Pour mixture into pie shell; sprinkle with lemon juice and cinnamon.
  • Combine all ingredients for topping and sprinkle over pie. Bake at 400 degrees for 15 minute then reduce heat to 350 degrees and continue baking 15 to 20 minutes. Serve warm.

When you have an abundance of zucchini, this really tastes like apple pie. Plus, it's healthier than other "mock apple pies" that are just crackers. The crust is gluten freeand the recipe is sugar free (stevia).

4 -5 cups zucchini, peeled and sliced
1/2 cup fresh lemon juice
1/2 teaspoon stevia powder
1 tablespoon vegetable glycerin (optional)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups buckwheat flour (or use another gluten free flour or combo)
1/2 teaspoon stevia powder
4 1/2 teaspoons arrowroot
1/4 teaspoon salt
3/4 cup cold butter (12 T) or 3/4 cup margarine, cut up (12 T)
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 350°.
  • Combine crust ingredients in a medium bowl, cutting in the margarine until mixture resembles coarse crumbs; add vanilla and mix gently.
  • Press 1/2 of dough evenly on bottom and 1/4-inch up sides of an 8x8-inch glass baking dish.
  • Bake until slightly browned, about 10 minutes. Cool on wire rack.
  • Meanwhile, combine zucchini and lemon juice in a pot and simmer until just barely cooked, about 2-3 minutes. Remove from heat, add stevia, cinnamon and nutmeg and let cool.
  • Spoon cooled zucchini mixture over crust and sprinkle the remaining crust mixture on top.
  • Bake for 45 minutes.
