FAT MO'S HAMBURGER

1 pound ground beef
Garlic salt and black pepper
4 hamburger buns
Mustard
Mayonnaise
Ketchup
1 whole tomato, sliced
1/2 onion, sliced
Dill pickles, as many as desired
1 head lettuce, shredded
4 slices American or Swiss cheese

Steps:

  • Preheat a grill or a griddle. Divide the ground beef to 4 (4-ounce) patties. Each portion of the beef should be hand patted. Cook on the grill or griddle until the meat is done to your liking. Season with garlic salt and black pepper. Toast the bun on the grill or griddle and dress it up with mustard, mayonnaise, and ketchup. Put the vegetables and cheese over burger.

1 pound ground beef (preferably 80% lean)
1 teaspoon canola oil
1 teaspoon kosher salt, divided
1/2 teaspoon coarsely ground pepper, divided
4 hamburger buns, split
Optional: Mayonnaise, sliced American cheese, sliced tomato, dill pickle slices, lettuce, ketchup and yellow mustard

Steps:

  • Place a 9-in. cast-iron skillet over medium heat. Meanwhile, gently shape beef into 4 balls, shaping just enough to keep together (do not compact). , Increase burner temperature to medium-high; add oil. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness; sprinkle each with 1/8 teaspoon salt and pepper. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers and sprinkle with additional 1/8 teaspoon salt and pepper. Cook until well browned and a thermometer reads at least 160°, 1 minute. Repeat with remaining beef., Serve burgers on buns with toppings as desired.

There was a drive-in restaurant in my hometown of Moberly MO in the 50's and 60's. It was called Pig n Bun. They were best known for Juicyburgers which were created by the owner, Albert Patrick. You'll find them similar to Sloppy Joes. This is my mother's copycat recipe that she created. From the kitchen of Wanda Cupp Thornburg, Moberly MO.

Number Of Ingredients 6

3 lbs lean ground beef
1 1/2 teaspoons salt
1/2 teaspoon pepper
3 tablespoons onion flakes
1/3 cup water
18 ounces catsup

Steps:

  • Combine first 5 ingredients in skillet. Cover and steam cook on medium heat. Stir frequently so that meat is broken up into small loose pieces. Cook until the meat is no longer pink. Do not overcook the ground beef.
  • Drain grease and return meat mixture to skillet. Add catsup and stir well. Simmer on low heat until serving time.
  • You can also transfer the meat to a Crock Pot for parties or picnics.

8 1/2 lbs ground beef
1 cup evaporated milk
1 cup chili sauce
1/2 cup Worcestershire sauce
2 1/2 tablespoons salt
1 1/2 teaspoons pepper
6 teaspoons all-purpose flour, sifted
1 1/2 cups hot water

Steps:

  • Blend all ingredients except flour and water lightly. Shape into 3 oz. patties.
  • Place on baking sheets and bake at 400 degrees F for 15 to 18 minutes; save the drippings.
  • Stir flour into drippings. Add water to make 3 cups of gravy. Cook for 5 minutes after the gravy has thickened. Serve with 1 tablespoons sauce over each patty.
