TOFU & MIXED VEGETABLE STIR FRY

This recipe is a amalgam of 40 years of stir frying. Do what I did, add the things you like, delete the things you don't. Include ideas you found in other recipes and then file the serial number off and claim it's your's. It worked in my case.

1 -2 dried shiitake mushroom
1/3 cup chicken stock
1/4 cup rice wine (Dry Sherry is OK. NOT COOKING SHERRY)
4 tablespoons soya sauce (The best is made with soy beans, salt,and Water. Nothing else.)
2 tablespoons cornstarch
1/2 lb firm tofu, cut into 1/2 inch cubes
2 tablespoons sesame seeds
2 tablespoons peanut oil
3 -4 garlic cloves, minced
2 tablespoons ginger, grated
1/4 cup cut bite size cauliflower
1/4 cup cut bite size broccoli
1/4 cup cut bite size snow peas
1/4 cup cut bite size baby carrots
1/4 cup cut bite size julinne red bell pepper
1/4 cup cut bite size yellow bell pepper, julinne
1/4 cup cut bite size green onion, 1 inch pieces
1/2 lb fresh bean sprout
sambal oelek
3 tablespoons peanut oil
uncooked fine rice noodles

Steps:

  • Put the Shiitaki in a micro wave safe bowl with water to cover.
  • Nuke for 22 seconds. Let set for 30 minutes.
  • Mix the four marinade ingredients. Add the Tofu. Stir gently to coat.
  • When the mushrooms are ready, drain and cut into thin slices the size of your thumb nail. Set aside.
  • Heat the wok.
  • Toast the Sesame Seeds 'til golden. Set aside.
  • Add the Oil to wok. Swirl to coat. Add garlic and Ginger. Stir fry 1 minute.
  • Add all the vegetables but snow peas and Bean sprouts. Stir fry 3-4 minutes.
  • Add Snow peas, Stir fry 2 minutes.
  • Push vegetables up the sides of the wok.
  • Lift the Tofu from the marinade, set aside.
  • Add the Sabal Oelek to the marinade, Mix well, add to the center of the wok. ***NOTE*** If you're not familiar with Sabal Oelek, it is an delicious asian chili paste but IT IS HOT! By all means got to know it but use caution try less than 1/4 teaspoon the first time. You can work you're way up as you learn.
  • Stir 'til the sauce starts to thicken.
  • Add the Tofu and Bean Sprouts, stir gently to mix.
  • Heat through.
  • Empty the wok into a serving bowl. keep warm.
  • Quickly clean and dry the wok. Heat, add 3 TBS oil. Add noodles, stir as they puff.
  • Place hot noodles on each plate. Top with the vegetables. Top with toasted Sesame Seeds. Serve.

Two 16-ounce packages Asian-style (sometimes labeled Oriental or Japanese) frozen mixed vegetables
1/4 cup stir-fry sauce, or to taste
1 pound firm or baked tofu, cut into short, narrow strips

Steps:

  • Steam the vegetables in a stir-fry pan or wok, covered, until completely thawed. Drain well and transfer back to the stir-fry pan.
  • Stir in the sauce and stir-fry over medium-high heat until the vegetables are tender-crisp.
  • Add the tofu strips and toss gently. Cook just until heated through, and serve at once.

This is very yummy and makes a lot! The honey and vegetable broth make a tangy-sweet sauce. Frozen green beans are fine for this recipe.

2 cups green lentils
4 tablespoons butter
2 garlic cloves, crushed
2 tablespoons olive oil
1 tablespoon cider vinegar
1 red onion, cut in 1/8
1 (2 ounce) can baby corn
1 yellow pepper, cut in strips
1 red pepper, cut in strips
2 ounces green beans
1/2 cup vegetable stock
2 tablespoons honey
salt and pepper

Steps:

  • Put the lentils in a large saucepan with water. Bring to a boil. Reduce heat and simmer for 20 minutes or until the lentils are tender. Drain.
  • Add 1 tablespoon of the butter, 1 garlic clove, 1 tablespoon of the oil and the vinegar to the lentils and mix well.
  • Melt the remaining butter and oil in a skillet and stir-fry the garlic, onion, corn, peppers and green beans for 3-4 minutes.
  • Add the vegetable stock and bring to a boil. Simmer for 10 minutes or until most of the liquid has evaporated.
  • Add the honey and season with salt and pepper to taste. Stir in the lentils and cook for about a minute to heat through.

The secret of the spellbinding success of this dish is the choice of vegetables for color, flavor and texture. Bright orange carrots, dark green spears of asparagus, yellow crook-neck squash, pearly white onions, the cool green of celery and vibrant red tomatoes are tossed together in a sweet 'n sour sauce, laced with garlic.

3 fresh garlic cloves
1 tablespoon rice vinegar
1 tablespoon soy sauce
1 tablespoon catsup
1 chicken bouillon cube, crumbled
1/4 teaspoon Chinese five spice powder
4 baby carrots (small)
1 onion
1/2 lb asparagus (about 8 stalks)
3 -4 very small crookneck yellow squash
1 cup sliced celery
1 firm-ripe tomatoes
1 1/2 tablespoons oil
2 tablespoons water

Steps:

  • Peel and process garlic with vinegar in blender jar until finely chopped. Add soy sauce, catsup, bouillon cube and spice; blend smooth.
  • Prepare all vegetables, cutting each vegetable in uniform-size pieces and keeping each separate. Trim, pare and cut carrots in half lengthwise. (If large carrots are used, cut in quarters or 1/4-inch thick diagonal slices.) Peel and cut onion in 8 wedges. Trim asparagus, peel stalks and cut into 3 1/2-inch lengths. Trim and cut squash in half lengthwise. (If only larger squash are available, use 2 and cut in quarters or thick slices.) Cut celery in 1/4-inch thick diagonal slices. Cut tomato into 8 wedges.
  • Heat oil in wok or large skillet over high heat until oil ripples when pan is tilted from side to side. Add carrots and stir-fry 2 minutes, turning with broad spatula so carrots are coated with oil. Add onion wedges and fry 1 minute. Add asparagus, stir to coat with oil and add 1 tablespoon water. Cover at once with tight fitting lid and steam 3 minutes. Uncover, add squash, celery and remaining tablespoon water. Cover and steam 5 minutes or until vegetables are tender-crisp.
  • Stir in tomato wedges and garlic sauce and cook, covered, 1 minute. Serve at once.

1/2 cup vegetable broth
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon soy sauce
1 teaspoon sesame oil
1 tablespoon cooking oil
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1/2 cup sliced carrots
1/2 cup sliced lotus root
1/2 cup sliced jicama
1/2 cup sliced zucchini
8 white button mushrooms
2 tablespoons water
1/2 cup red bell pepper, cut into 1 inch squares
4 asparagus spears, trimmed and cut diagonally into 1 1/2 inch lengths
2 teaspoons cornstarch dissolved in 1 tablespoon water

Steps:

  • Combine sauce ingredients in a bowl.
  • Place a wok over high heat until hot. Add oil, swirling to coat sides. Add garlic and ginger; cook stirring, until fragrant, about 10 seconds. Add carrots, lotus root, jicama, zucchini and mushrooms; stir fry for 1 minute.
  • Add water, cover and cook for 3 minutes. Add bell pepper and asparagus; stir fry for 1 minute. Add sauce and bring to a boil. Add cornstarch solution and cook, stirring, until sauce boils and thickens.
