1/4 cup olive oil
1 tablespoon red wine vinegar plus 1-1/2 teaspoons red wine vinegar
1 garlic clove, minced
1/2 teaspoon dried basil
1/8 teaspoon crushed red pepper flakes
6 cups torn salad greens
2 medium tomatoes, cut into thin wedges
1 medium cucumber, sliced
2 tablespoons shredded Parmesan cheese

Steps:

  • In a jar with a tight-fitting lid, combine the oil, vinegar, garlic, basil and pepper flakes; shake well. In a salad bowl, combine the greens, tomatoes and cucumber. Drizzle with dressing and sprinkle with Parmesan cheese; toss to coat.

This is from a cookbook by Maya Angelou, adapted slightly to suit our family. I tried this with my husband and son and now have to regularly stock the ingredients as they request it at least once or twice a week. I've never had a salad this good.

2 heads romaine lettuce, torn into bite sized pieces
1 cup golden raisin
2 tablespoons extra virgin olive oil
3 tablespoons fresh lemon juice
1/2 tablespoon balsamic vinegar
1/2 teaspoon finely minced fresh garlic
salt & freshly ground black pepper, to taste
1 cup crumbled feta cheese

Steps:

  • In a small pot, put raisins and enough water to cover.
  • Simmer for three minutes and then set aside to allow raisins to plump.
  • In large salad bowl (I use a wooden bowl), place oil, lemon juice, vinegar, and garlic.
  • Season with salt and pepper.
  • Mix well.
  • Tear lettuce into bite sized pieces and add to bowl.
  • Add drained raisins.
  • I use my hands to toss.
  • Sprinkle feta cheese on top and serve immediately.

250g basmati and wild rice
400g can chickpea , drained
100g pack dried cranberry
1 red onion , sliced
1 garlic clove , crushed
3 tbsp olive oil
2 tbsp lemon juice
200g pack reduced-fat feta cheese
handful flat-leaf parsley , roughly chopped

Steps:

  • Rinse the rice. Boil according to the pack instructions, adding the chickpeas for the final 4 mins. Drain and allow to cool a little, then mix through the cranberries and onion.
  • Whisk together the garlic, olive oil, lemon juice and seasoning to make a dressing. Toss with the rice mixture, then pile onto a large serving plate. Crumble over the feta, then scatter with parsley. Serve warm or cold.

1 tablespoon fresh orange juice
1 teaspoon coarse salt, plus more to taste
1/4 cup extra-virgin olive oil (preferably lemon-infused)
10 ounces mixed salad greens, such as baby spinach and red-leaf and Boston lettuces
1 pound fresh blackberries (about 4 pints)
9 ounces feta cheese, preferably French, crumbled

A colorful mix of juicy fresh melon, salty feta and grilled shrimp, this easy-to-make salad is perfect for a quick and light summer dinner. A little minced chile adds heat, balancing the sweetness of the melon and shrimp, while the toasted whole coriander seeds lend a nice crunch. You can use any one type or a combination of melon here, and the riper the better. Serve this with something to catch all the tangy sauce - bread, rice or even a spoon.

2 teaspoons coriander seeds
2 limes
2 garlic cloves
1 Fresno chile, serrano or other fresh chile pepper, minced
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 pound cleaned extra-large shrimp
1 pound cubed melon (about 4 cups; any kind, or a combination)
1 small cucumber, preferably Persian or kirby, thinly sliced
1/4 cup thinly sliced red onion or shallot
1/3 cup crumbled feta
1/2 cup chopped soft herbs, such as mint, basil or cilantro, plus more for garnish

Steps:

  • Light a charcoal or gas grill or heat the broiler. Make the fire as hot as it will get and, if using a broiler, put the rack close to the heat source.
  • While the grill heats up, lightly crack the coriander seeds in a mortar and pestle, or with the side of a knife on a cutting board. (Careful: They can roll around.) Put them in a small dry skillet over medium heat and toast, shaking the pan once or twice until fragrant, 1 to 3 minutes. Pour into a small bowl.
  • Using a Microplane or other grater, grate zest from both limes straight into the bowl with coriander. Grate in the garlic (no need to wash the grater in between), then add the chile and a large pinch of salt and pepper. Whisk in oil.
  • Pat shrimp dry, then transfer to a medium bowl and season with a pinch each salt and black pepper. Give the coriander mixture a stir, then pour half of it over the shrimp, reserving the rest for the salad. Toss shrimp to coat and set aside while preparing the other ingredients.
  • Cut the zested limes in half, squeeze out 2 tablespoons juice and whisk into the coriander mixture to make a dressing. Cut leftover lime into wedges.
  • Arrange the shrimp in a grill basket or on skewers (or just on a sheet pan if broiling), and grill or broil shrimp until well browned on one side, 2 to 3 minutes. Flip and cook until just opaque and cooked through, 1 to 2 minutes. Transfer the shrimp to a plate and squeeze a wedge of lime all over.
  • In a large bowl, combine melon, cucumber, onion, feta and herbs. Pour in coriander dressing and toss to combine. Taste, and add more salt or lime juice to taste. Top melon salad with grilled shrimp and more herbs, if you'd like.

I had been looking for a good marinated Kale salad but couldn't find one for me. Most of them have avocado but I'm not a big fan. This is my version of a Marinated Kale salad.

2 cups fresh kale (Green Organic if Possible)
1 cup fresh kale (Red Organic if Possible)
1/3 cup grapeseed oil
1/2 cup lemon juice (fresh squeezed)
3 tablespoons raw honey
1 teaspoon sea salt
1 teaspoon pepper
1/3 cup golden raisin
1/2 cup balsamic vinegar (honey or pear infused)
1/2 cup walnuts

Steps:

  • First, take the golden raisins and pour them into a tupperware container with the pear infused balsamic vinegar and let them soak overnight. Make sure the vinegar covers the raisins completely.
  • Next, chop up the kale to small almost shredded like pieces. Sprinkle a little sea salt onto your hands and lightly massage the kale to start the wilting process. This will soften up the leaves a little bit. Next in another bowl wisk the maranade of grapeseed oil, lemon juice, honey, salt and pepper. Pour over the chopped kale greens. Cover and refrigerate overnight.
  • The next day, drain the remainder of the balsamic vinegar from golden raisins then and add them to the kale salad. Chop the walnuts and add them to the salad. Mix ingredients together serve and enjoy.
