1 onion, chopped
1 garlic clove, chopped
3 cups mushrooms, sliced
1 leek, chopped
1 tablespoon olive oil
2 cups mixed beans
1 1/2 cups kidney beans
4 cups tomatoes, chopped
2 tablespoons parmesan cheese
2 parsnips, peeled and grated

Steps:

  • Preheat oven to 400 degrees.
  • Fry onion, garlic, mushrooms and leek in a pan in the olive oil until softened.
  • Rinse and drain mixed beans and kidney beans and add to pan.
  • Add tomatoes and heat through.
  • Combine the parmesan and the grated parsnip in a bowl and put aside.
  • Place the bean mixture in an oven proof casserole dish.
  • Cover with the parmesan and parsnip mixture and sprinkle over some olive oil.
  • Bake for 25 minutes or until brown and crispy.

This has been a family favorite for over 30 years! It is simple to make and perfect for a potluck or summer BBQ. In fact, whenever I make it for a crowd, I receive numerous requests for the recipe. The recipe can be easily cut in half for a smaller crowd, but it does reheat well in the microwave, so your leftovers won't last long!

8 slices bacon, chopped
2 medium onions, chopped
2 (1 lb) cans baked beans in tomato sauce
2 (1 lb) cans red kidney beans, drained
2 (1 lb) cans butter or 2 (1 lb) cans lima beans, drained
1/2 lb American cheese or 1/2 lb cheddar cheese, cubed
1 cup brown sugar, packed
2/3 cup catsup
2 -3 tablespoons Worcestershire sauce

Steps:

  • Lightly brown bacon and onions in large skillet.
  • Remove from heat.
  • Combine beans, cheese, brown sugar, catsup, and Worcestershire sauce in a large baking dish.
  • Add bacon and onions.
  • Bake at 350 degrees for 30 to 45 minutes, depending on the depth of the pan.
  • Stir baked beans to thoroughly dissolve cheese.
  • Allow to sit for at least 10 minutes before serving.

  • Pre heat the oven to 180C/Gas 6
  • Wash/chop and blanch all vegetables, fry the leek and onion until softened.
  • fry the sausages drip of any fat, cut into small pieces.
  • For the sauce, Soften onion in oil, add tomato puree and chicken stock, add in sage, and salt and pepper, and required extra water. Bring to boil add in slurry stir constsntly until thickened
  • Assemble all vegetables and sausgaes pour over sauce.
  • Shallow fry sliced potatoes.
  • Assemble all vegetables and sausgaes pour over sauce. Place sliced potatoes on top of ingrediants.
