The perfect Spring or Summer drink. Tried and tested for over 12 years now. and always a crowd favorite! This recipe yields one gallon!! Use a 1 gallon sun tea jar for serving!

Steps:
- In a large jar or drink cooler, combine the light rum, dark rum, 151 rum, orange liqueur, almond syrup, simple syrup, and lime juice. Stir and top off with orange juice. Do not use grenadine if you want the true Mai Tai! Serve in 8 to 12 ounce glasses with ice.

MITI
This hot and sour sauce which goes well with taro, breadfruit,and other starchy vegetables or any seafood dish. The sauce is used to accompany foods from Samoa, Fiji, Tahiti or Hawaii. Use coconut cream which has no added sugar, not cream of coconut used in cocktails. I find it at local Asian grocery stores.

Steps:
- Juice the lemon - If you like a really sour sauce, use the whole lemon. Milder just use half.
- Put the juice and everything else in a small bowl and mix. Adjust salt as necessary. Refrigerate until ready to use.
- The spring onion is entirely optional but it adds a pretty color. You can also add finely diced sweet red peppers or tomato.

Steps:
- Mix all ingredients except soda water and baking soda until well blended.
- Blend in baking soda.
- Slowly add soda water a little at a time until well combined. Mixture should be moist but not so much that it cannot hold a shape.
- Form meat into cylindrical shapes about 2-3 inches long and 1 to 1 1/2 inches in diameter.
- Grill (or fry but they won't be as tasty) turning every few minutes until cooked through, about 10 minutes depending on your grill).
- Serve with a light mustard.
