This is our traditional family snack, much beloved even by people who don't normally like cereal. I have taught this one in numerous cooking classes for teenagers, and none have experienced any "failures", so I think it's fairly easy as long as you don't substitute and mix the honey/butter into the cornflakes well.

Number Of Ingredients 4

4 ounces honey
4 ounces butter (not oil, not margarine)
4 ounces sugar
1 (18 ounce) package kellog corn flakes (the name brand - not a substitute)

Steps:

  • Prepare two sheet pans of foil muffin cups (patty pans).
  • Separate the paper liners from the foil.
  • Pour the entire contents of corn flake package into a very large bowl.
  • Set oven to 350* F.
  • In a small saucepan, melt the honey, butter and sugar on medium heat.
  • Do not let it boil: you only want a warm liquid.
  • Pour onto the corn flakes.
  • Mix well with a spatula.
  • Really, really well.
  • You mix and mix until every one is coated, about 10 minutes.
  • Lots of little hands can help.
  • The raw mixture is pretty yummy too.
  • Over-fill each foil cup.
  • Set touching each other on the tray.
  • Bake for about 12-15 minutes, or until the cornflakes are JUST starting to colour.
  • It will depend on your oven and where your trays are.
  • If you prefer them less crunchy, take them out a couple of minutes early.
  • Cool.
  • Eat.

2 teaspoons tamari (gluten-free soy sauce)
1 tablespoon water, or as needed
¼ cup chia seeds
¼ cup sesame seeds
¼ cup flax seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. Cut a small square out of a separate sheet of parchment paper and oil 1 side; set aside.
  • Blend brown rice, quinoa, and tamari in a food processor, adding water if mixture is too dry, until a dough starts to form. Add chia seeds, sesame seeds, flax seeds, and salt; pulse until dough is a sticky ball.
  • Roll small pieces of dough into 1/2-inch balls and arrange at least 2 1/2 inches apart on the prepared baking sheet. Place the oiled square of parchment paper, oil-side down, onto a dough ball. Flatten the dough ball into a very thin 2-inch-wide disk by pressing the top of a small jar onto the parchment square. Repeat with remaining dough balls.
  • Bake in the preheated oven until edges of crackers begin to brown, 10 to 12 minutes. Transfer crackers to a wire rack. Place the rack onto the baking sheet and return to oven.
  • Bake until crackers are dry and crisp, 2 to 3 minutes more.

1 cup unsalted butter, softened
1/3 cup minced fresh parsley
2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon paprika
1/2 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 cup grated shredded cheddar cheese
1/4 cup heavy whipping cream
1 tablespoon unsalted butter
1 tablespoon honey
2/3 cup confectioners' sugar
1/3 cup minced fresh parsley
Flaky sea salt, such as Maldon, optional

Steps:

  • Preheat oven to 350°. In a large bowl, beat butter for 2 minutes. Mix in parsley. In another bowl, whisk flour, sugar, paprika, kosher salt, garlic powder and pepper. Add cheese; toss to coat. Add to butter mixture alternately with cream, beating until mixture comes together. Divide dough into 3 portions., On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 1-1/2-in. round cookie cutter. Place 1 in. apart on parchment-lined baking sheets. Reroll and chill scraps as needed. Bake until crisp, 15-20 minutes. I had my niece sleep over last night, and today she insisted on me making this out of the rind from the Christmas ham. Her Dad makes it every year, and she loves it. It's not really my cup of tea, I thought it was tasty, but too fatty for me to have more than one piece, but here is the recipe for you to be the judge!

1 (5 kg) ham, rind of
salt

Steps:

  • Cut the rind into chunks, and generously salt it.
  • Place under a hot grill for about 10 minutes, then shake and resalt. Reapeat this every 10 minutes.
  • When the rind starts to crackle, and has just started to burn on the tips, remove from the grill.
  • Using tongs, transfer the rind to a plate, and lightly salt.
  • NOTE: you may have to do this in batches.

2 cups white sugar
4 egg
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
⅓ cup confectioners' sugar for decoration

Steps:

  • Melt butter and chocolate together over low heat or in the microwave.
  • In a medium bowl, mix eggs and sugar with an electric mixer until smooth. Stir in melted chocolate mixture. Sift together the flour, baking powder, and salt . Stir dry ingredients into the egg mixture by hand until well blended. Refrigerate for at least 2 hours.
  • Preheat oven to 300 degrees (150 degrees C). Grease cookie sheets.

2 cups whole wheat flour
1 cup unbleached all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ cup margarine, softened
½ cup packed brown sugar
⅓ cup honey
1 teaspoon vanilla extract
½ cup milk

Steps:

  • Sift together the whole wheat flour, all-purpose flour, baking powder and baking soda; set aside.
  • In a medium bowl, cream together the margarine, brown sugar and honey until light and fluffy. Stir in the sifted ingredients alternating with the milk and vanilla. Cover dough and refrigerate overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Divide the chilled dough iinto quarters. On a well floured surface, roll the dough out one quarter at a time iinto a 5x15 inch rectangle. Divide into rectangles using a knife. Place rectangles ointo ungreased cookie sheets. Mark a line down the center of each one, and prick with a fork. For a cinnamon flavored cracker, sprinkle with a cinnamon sugar mixture before baking.
  • Bake for 13 to 15 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.
