I always loved my mom's potato salad the best. I think it's the sweetness of the miracle whip and sugar. My mom's favorite ingredients were sugar and salt which made for some delicious tasting meals.

5 lb potatoes peeled and cubed
6 large eggs hard boiled
1 large red onion diced
1 medium jar dill pickles chopped
1 medium jar pimentos drained
1 jar(s) miracle whip medium size
1/2 c yellow mustard
3/4 c sugar
2 Tbsp celery seed
salt and pepper to taste
enough milk to make it desired consistency
2 Tbsp paprika

Steps:

  • 1. Boil potatoes in salted water until soft. Drain and rinse under cold water until cold.
  • 2. Mix in 3 eggs chopped, red onion, dill pickles, and pimentos. Set aside.
  • 3. In a separate bowl mix the miracle whip, mustard, sugar, celery seed and salt and pepper. Add enough milk to make desired consistency.
  • 4. Slice remaining eggs and arrange over top. Sprinkle with paprika

1/2 cup chopped red peppers
1 stalk celery, sliced

" I HATE MIRACLE WHIP, BUT I LOVE THIS POTATO SALAD THAT'S



I have had people who swear they hate Miracle Whip eat an ENTIRE PLATE of this potato salad. It's my mom's recipe, and you can try it with regular Mayo, but I won't stand by the results because it's so good with the Whip that I've never tried it any other way!

5 -6 large potatoes, cut into chunks
1 bunch celery, cleaned and chopped
2 medium white onions, diced
6 -8 hard-boiled eggs, diced
2 cups Miracle Whip
3 tablespoons milk
1 tablespoon sugar
1 tablespoon mustard
1 teaspoon Dijon mustard
1/2 teaspoon white pepper
1 teaspoon fresh ground pepper
salt

Steps:

  • Boil potatoes until tender but not mushy, set aside to cool.
  • For dressing: mix all ingredients in a bowl. Any and all of the ingredients can (and should) be adjusted to your taste as my dressing never turns out the same way twice depending on whether I'm in the mood for sweet, peppery, salty, etc.
  • Mix potatoes, celery, onion, egg, and dressing in a bowl and chill.
  • Enjoy!
