8 cups cubed seedless watermelon
2 English cucumbers, halved lengthwise and sliced
6 green onions, chopped
1/4 cup minced fresh mint
1/4 cup balsamic vinegar
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large bowl, combine watermelon, cucumbers, green onions and mint. In a small bowl, whisk remaining ingredients. Pour over salad and toss to coat. Serve immediately or refrigerate, covered, up to 2 hours before serving.

8 cups seedless or seeded watermelons
1 medium English cucumber halved lengthwise and thinly sliced
2 medium mangos peeled and cubed (2 1/2 cups)
4 green onions chopped
1/3 cup minced fresh mint leaves
1/2 cup chopped pecans (may substitute walnuts)
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon sea salt

Steps:

  • In a large bowl, gently combine the watermelon, cucumber, mango, onions, mint, and nuts. In a small bowl, whisk oil, vinegar, and salt. Pour over watermelon mixture; toss to coat. Serve immediately or cover and refrigerate for up to 2 hours.
