Lemon Potato Salad With Mint image

This light and refreshing potato salad is the antithesis of the usual, creamy, mayonnaise-based recipes. The mint and scallion add a bright, herbal flavor while the sprinkle of chile lends a kick. Make this the morning you plan to serve it and let it marinate at room temperature all day long. Or refrigerate for longer storage but be sure to bring it to room temperature before serving. Other herbs like cilantro, parsley, tarragon and sage can be substituted for the mint; adjust the quantity to taste.

2 pounds small waxy white or yellow potatoes, roughly about the same size
Juice of 1 lemon, more for serving
1 1/2 teaspoons kosher salt, more as needed
1/2 cup extra-virgin olive oil
1/2 cup thinly sliced scallions, white and light green parts, more for serving
1/4 cup torn mint leaves, more for serving
1/4 teaspoon Turkish pepper, more for serving

Steps:

  • Place whole unpeeled potatoes in a large pot with enough salted water to cover by 1 inch. Bring to a boil over medium-high heat and cook until potatoes are just tender, 15 to 25 minutes depending upon size. Drain and cut potatoes into 1 1/2-inch chunks as soon as you can handle them.
  • In a bowl, whisk together lemon juice, salt and olive oil.
  • Transfer hot potatoes to a large bowl and toss with dressing, scallions, mint and Turkish pepper. Let cool to room temperature, or refrigerate until ready to use. Just before serving, top with additional lemon juice, scallions, mint and Turkish pepper.

This recipe breaks the taboo of combining seafood and cheese. This salad of blanched shrimp, new potatoes and crisp disks of sugar-snap peas is perfectly adequate. It is vibrant from fresh mint, tangy from red-wine vinegar and mustard in the vinaigrette, sweet from the shrimp and earthy from the potatoes, but a few shards of young pecorino add the saline funk that brings this dish together. The cheese will practically melt into the salad, adding a glossy complexity. (Another young, semifirm sheep's milk cheese would work. So would aged pecorino, but use less since it's saltier. )

3/4 pound sugar-snap peas
2 tablespoons Dijon mustard
3 tablespoons red-wine vinegar, plus more for serving

1 pound new fingerling or small yellow potatoes
1 1/2 pounds large shrimp, peeled
3/4 cup loosely packed mint leaves
3/4 cup coarsely grated young pecorino (or 1/2 cup aged)

Steps:

  • Trim and string the peas, then thinly slice them crosswise. Place them in a large bowl. In a small bowl, whisk together the mustard, vinegar, 1/4 teaspoon salt, and pepper to taste. Slowly whisk in the oil.
  • Bring a large pot of salted water to a boil. Cook the potatoes until tender, about 15 minutes. Transfer with a slotted spoon to a cutting board. Add the shrimp to the pot and cook until opaque, 2 minutes. Transfer with a slotted spoon to the bowl of peas.
  • While the potatoes are warm, slice them into 1/2-inch rounds, and place them in a small bowl. Gently toss them with 1/2 cup of the vinaigrette, 1 teaspoon salt, and 3/4 teaspoon pepper. Spread them on a large platter to cool.
  • When the shrimp are cool, toss with the peas and remaining vinaigrette. Spoon the mixture over the potatoes. Tear the mint leaves, and scatter the pieces over the salad. Sprinkle with cheese and pepper. Drizzle with oil and add a little vinegar to taste, if needed.

1/4 cup Dijon mustard
1/4 cup whole-grain mustard
1/4 cup honey
2 tablespoons chopped fresh mint
Kosher salt and freshly ground black pepper
3 large sweet potatoes
Canola oil, for brushing

Steps:

  • Whisk together the Dijon mustard, whole-grain mustard, honey and mint in a bowl, and season with salt and pepper. Let sit at room temperature while you prepare the fries.
  • Put the sweet potatoes in a large pot, cover with water and add 1 tablespoon salt. Bring to a boil and cook until a paring knife inserted into the center of the potatoes meets with some resistance, 10 to 15 minutes depending on size. When cool enough to handle, cut each sweet potato into 6 wedges.
  • Heat a gas or charcoal grill to medium-high. Brush the potato wedges with oil and season with salt and pepper. Grill until slightly charred and cooked through, 2 to 3 minutes per side. Remove to a platter and serve with the dipping sauce.

Steps:

  • Boil the potatoes for 6 mins or until just cooked, then drain and set aside. Heat the oil in a large, deep, ovenproof frying pan and fry the courgettes for 4-5 mins until golden. Tip in the potatoes and fry for 1 min with the courgettes.
  • In a bowl, beat together the eggs and mint, then season. Pour into the frying pan and stir briefly. Cook for 5 mins over low heat. Crumble over the cheese and finish under a hot grill for 5 mins, until the eggs are just set and the cheese is browned. Cut into wedges and serve.

MINT CHUTNEY, BARBECUED LAMB & POTATO SALAD

This beautiful barbecued lamb with a fresh minty chutney makes a great sharing dish for friends. Serve with our new potato and spring onion salad

1 small leg of lamb , about 1.5kg, butterflied (ask your butcher to do this for you)
1 large pack mint (about 100g), leaves picked
1 small pack coriander
3 garlic cloves
1 finger-sized piece of ginger
2 green chillies , deseeded if you like
2 tsp cumin seeds , toasted
1 lemon , juiced
800g new potatoes , halved
100g peas , frozen or fresh and podded
2 spring onions , sliced
200g Greek yogurt

Steps:

  • First, make the chutney. Put all the ingredients with a good pinch of salt and a small splash of water in a minichopper or food processor and blitz to a chunky paste. Will keep in the fridge for two days.
  • Use one-third of the chutney to marinate the lamb for at least a couple of hours, or up to 24 hrs before. To make the potato salad, boil the potatoes until just cooked, around 12-15 mins. When they've got about a minute left, add the peas. Drain and leave to cool. Toss the spring onions through the potatoes and peas, then dress with one-third of the chutney and the yogurt. Can be made a day ahead and chilled in the fridge. Take out 1 hr before serving.
  • To cook the lamb, heat the barbecue until the coals are ashen. Grill the lamb, flesh-side down, for about 25 mins, then flip it over and cook on the fat side for about 15 mins until charred and sizzling. When the lamb is cooked to your liking, leave it to rest on a warm platter to catch the juices. To serve, carve the lamb into thick slices, again catching the juices. In a bowl, mix the cooking juices with the remaining chutney, and serve alongside the lamb.

2 medium shallots, chopped
1 1/2 pounds carrots, peeled and diced
1 pound sweet potatoes, peeled and diced
6 cups water, chicken stock or vegetable stock
2 sprigs tarragon
A 1-inch piece of orange zest
Salt to taste
1 tablespoon minced fresh mint or tarragon

Steps:

  • Heat the oil in a heavy soup pot or Dutch oven over medium heat. Add the shallots. Cook, stirring, until tender, three to five minutes. Add carrots. Cook, stirring often, for five minutes until they begin to soften. Add the sweet potatoes, water or stock, tarragon sprigs and orange zest, and bring to a simmer. Add salt to taste, reduce the heat, cover and simmer 45 minutes or until all of the ingredients are thoroughly tender. Remove the orange zest, and discard.
  • Purée the soup in batches in a blender, removing the stopper from the top and holding a kitchen towel tightly over the top to avoid splashing, or in a food processor fitted with the steel blade. Return to the pot, heat through, and adjust salt and pepper to taste. Stir in the mint or tarragon, and serve.

Helen Henderson, the chef, says that to satisfy any potato loving Swede's craving for pasta salad, you should add angel-hair pasta tossed with olive oil, salt and pepper. I say this looks good enough to eat on its own and the olives and tomatoes look too good to leave out. I reduced the olive oil to 1 tablespoon from 3 and guessed on the cook time. 2 celery sticks, very thinly sliced

Steps:

  • Place the potatos in a large saucepan of cold, salted water. The water should be salted to taste like the ocean. Simmer for 8-10 minutes, or until tender. Drain and allow to cool, then halve lengthways. Meanwhile, preheat a grill to medium and grill the prosciutto until crisp. Set aside to cool, the break into rough shards. In a large bowl, combine the mayo, sour cream, mustard, parsley and mint. Season with salt and freshly ground pepper. Add the potato, celery and onion, reserving some onion for garnish. Stir to combine. Garnish with reserved onion, prosciutto and chives.

ROASTED LEG OF LAMB WITH SERRANO CHILE-MINT JELLY AND ROASTED NEW POTATO MEDLEY



Roasted Leg of Lamb with Serrano Chile-Mint Jelly and Roasted New Potato Medley image

8 to 12 pound leg of lamb
2 tablespoons coarsely ground black peppercorns
2 tablespoons coarsely ground white peppercorns
2 tablespoons coarsely ground green peppercorns
1 tablespoon coarsely ground Szechuan peppercorns
Fleur de sel or gros sel
1/3 cup extra virgin olive oil to cook, plus extra to rub lamb
8 large new potatoes, washed, unpeeled and quartered
2 large yellow onions, large dice
3 large carrots, peeled and sliced
10 to 12 smashed garlic cloves
1 tablespoon minced thyme
Salt and black pepper, to taste
1 cup sugar
1 cup fresh lime juice
1/2 cup water
1 envelope unflavored gelatin
4 minced serrano chiles
1 cup mint chiffonade
2 limes, zested
1 teaspoon salt

Steps:

  • Preheat large, roasting pan in a 550 degree oven.
  • Rub lamb with olive oil. Generously salt (gros sel) the lamb. Mix the peppercorns together and pat on lamb. (This should be done at least 4 hours in advance, preferably overnight).
  • In a large bowl, mix together potatoes, onions, carrots, garlic and thyme. Add oil, season and mix well.
  • When pan is hot, pull out and dump veggies into the pan. There should be a good sizzle. Mix the veggies around and roast for 10 minutes. Mix again and place lamb on top. Place in oven and roast until brown, about 20 to 30 minutes.
  • Turn oven down to 375 degrees, cover the lamb with foil to prevent burning and roast another 20 to 30 minutes. I shoot for medium rare, about 130 degrees. Mix veggies a couple of times during the cooking.
  • Place lamb on a cutting board and let rest 10 minutes. Make sure the veggies are fully cooked and check for seasoning. If not, place back in oven another 10 minutes.
  • Serrano Chile-Mint Jelly: In a non-reactive pan, dissolve sugar in juice and water. Pour 2 tablespoons of the warm liquid in a small saucepan and add gelatin. Dissolve on low heat and set aside. Raise to medium-high under the first saucepan and add the chiles, mint, zest and salt and bring to a boil. Reduce heat to low and cook for 10 minutes, occasionally stirring. Remove from heat and add dissolved gelatin. Store in refrigerator overnight, stirring occasionally to break up the gelatin. It will be a soft jello-like consistency.

This is one dish that you can happily serve to everyone - a bit different, delicious and vegetarian

1.3kg medium potato , peeled and halved
125g butter
1 tbsp cumin seed
2 tsp fennel seed
1 tsp nigella seeds (onion seeds)
2 thumb-size pieces of fresh ginger , peeled and finely shredded
2 onions , halved and thinly sliced
1 heaped tsp ground turmeric
1 heaped tsp ground coriander
1 heaped tsp ground coriander
4-5 fresh green chilli , deseeded and sliced
2 x 15g packs fresh coriander
200g frozen pea
juice of 1 large lime
200g filo pastry
200g pack baby spinach
500g Greek yogurt
4 tbsp coconut cream
2 tbsp mint sauce

Steps:

  • Put half the potatoes in a large pan of cold water and bring to the boil. Add the remaining potatoes and simmer for 12 mins until just tender (boiling the potatoes like this will mean that some will be more cooked than others). Drain, then dice.
  • Meanwhile, melt 85g/3oz of the butter in a large pan and fry the cumin, fennel and nigella seeds until they start to crackle. Stir in the ginger and onions, then cook for 10 mins, stirring frequently until the onions are tender.
  • Stir in the turmeric, ground coriander and chillies, cook for a min, then add the potatoes and cook, turning them in the from the turmeric. Take off the heat. Chop half the coriander leaves and add to the potatoes, along with a heaped tsp salt, the peas and lime juice. Stir well and set aside.
  • Melt the remaining butter. Line the base and sides of a greased 23cm clip-sided or loose-based cake tin with filo pastry, brushing each sheet generously with melted butter as you lay them, butter-side down, in the tin - build up several layers so that the pastry is an even thickness all over. Allow plenty of excess pastry to hang over the tin. Put the spinach in the microwave and cook according to the pack instructions. Squeeze out all the excess juice and season.
  • Tip half the potato filling into the tin, pack down, then cover with the spinach. Top with the remaining filling, then fold over the excess pastry to cover the filling, brush with more butter and scatter with nigella seeds. You can now chill the pie overnight if you want to get ahead.
  • To serve: Heat oven to 180C/fan 160C/gas 4. Bake for 45-50 mins until golden and crispy. Meanwhile, tip the yogurt, coconut cream and remaining coriander into a food processor with the mint sauce and some seasoning, and whizz until smooth. Serve with a green salad tossed with chopped bananas coated in lime juice, finely chopped red onion and a handful of sugar-coated cashews.

1 x basic pasta dough
recipe (see page 84)
l tb 2oz floury potatoes
sea salt and freshly gran
black pepper
7 tablespoons butter, plus
2 knobs
1-2 handfuls of grated
pecorino cheese, plus
extra for serving
1/4 of a nutmeg, grated
zest of 1 lemon
a bunch of fresh mint

Steps:

  • First, make your pasta dough. Then preheat the oven to 400°F. Prick your potatoes with a fork, then roll them in a little salt and bake them in the oven for about an hour. When cool, cut them in half and scoop the potato out into a bowl, discarding the skins. Pick your mint leaves and finely chop half of them. Add the butter, grated pecorino, nutmeg, lemon zest and the chopped mint and mash well with the potato. Have a taste and correct the seasoning. You want the intensity of this filling to be quite punchy, with the mint and cheese really coming through when you eat the ravioli. Once you've got the flavors balanced, go to page 90 to make your ravioli (or try out other shapes if you fancy). Once you've made them, put a pot of salted water on, bring to the boil and cook your ravioli for 3 1/2 minutes. While the ravioli is cooking, put the couple of knobs of butter into a frying pan and heat gently. Remove and drain the ravioli with a spider or slotted spoon, or carefully drain them in a colander, reserving a little of the cooking water. Add the ravioli to the butter with a little of the cooking water and lightly simmer until the butter and water have turned into a little sauce that just coats the ravioli. Serve on a large platter in the middle of the table, or divide between individual plates. Sprinkle with the whole mint leaves and a little pepper and, using a speed peeler, shave over some extra pecorino.

2 pounds small waxy white or yellow potatoes, roughly about the same size
Juice of 1 lemon, more for serving
1 ½ teaspoons kosher salt, more as needed
½ cup extra-virgin olive oil
½ cup thinly sliced scallions, white and light green parts, more for serving
¼ cup torn mint leaves, more for serving
¼ teaspoon Turkish pepper, more for serving

Steps:

  • Place whole unpeeled potatoes in a large pot with enough salted water to cover by 1 inch. Bring to a boil over medium-high heat and cook until potatoes are just tender, 15 to 25 minutes depending upon size. Drain and cut potatoes into 1 1/2-inch chunks as soon as you can handle them. In a bowl, whisk together lemon juice, salt and olive oil. Transfer hot potatoes to a large bowl and toss with dressing, scallions, mint and Turkish pepper. Let cool to room temperature, or refrigerate until ready to use. Just before serving, top with additional lemon juice, scallions, mint and Turkish pepper.

14 ounces all-purpose flour, sifted and seasoned with salt and pepper
7 ounces butter, chilled and cubed
1 egg, beaten to glaze
2 tablespoons cracked black pepper
1 medium sweet potato, peeled and diced
3 ounces rutabagas, peeled and diced
3 ounces carrots, peeled, diced
9 ounces lamb steaks, cut into 1/2in cubes
2 tablespoons of fresh mint
1 red onion, finely chopped

Steps:

  • Season the flour and sift into a large bowl. Add the butter and rub into the flour using your fingertips until the mixture resembles fine breadcrumbs. Sprinkle with 6 to 7 tablespoons of chilled water (enough to just bind the dough) and draw the mixture together with a knife. Knead gently on a floured board then wrap in plastic wrap and chill for 30 minutes in the fridge.
  • Preheat the oven to 350°F.
  • Divide the pastry into 4 equal pieces. Roll each piece on a lightly floured work surface. Roll using short strokes and always in one direction, giving the pastry a quarter turn after each roll. Roll to 1/4in thickness. Cut into a circle about 7in diameter using a plate as a guide.
  • Mix together the vegetables, lamb and mint. Arrange quarter of the mix in the centre of each pastry circle. Season.
  • Lightly brush the edge of the pastry with water then carefully bring up the edges to the centre to cover the filling. Pinch the join to create a sealed edge over the top of the pasty. Repeat with the other pastry circles.
  • Brush the pasties with beaten egg and sprinkled with cracked black pepper. Cook for 1 hour until the pastry is golden and the filling cooked through.
  • Serve hot or cold with chutney.

MINT POTATO

I started off by searching 'zaar for a different mint potato recipe but to no avail, so thought I'd better post the simple and tasy way that I cook them. I eat with the skins on but they can of course be removed (it's probably easier to remove the skin after cooking and it stops them falling apart while boiling).

2 medium potatoes, cut in half
1/4 cup mint sauce

Steps:

  • Place potatoes and mint sauce in a small saucepan with just enough water to cover them.
  • Cover saucepan and bring to boil, reduce heat and simmer for around 15 minutes. Potatoes are cooked when they can easily be pierced with a fork.
  • Strain potatoes, reserving mint pieces and return potato and mint to saucepan for a few minutes over low heat to dry them out.
