⅓ cup apple juice
1 ½ teaspoons cornstarch
8 lamb loin chops, trimmed of fat (about 1 1/2 pounds total)
½ teaspoon kosher salt
½ teaspoon freshly ground pepper
1 teaspoon canola oil
1 shallot, minced
⅓ cup reduced-sodium beef broth
2 tablespoons cider vinegar
2 tablespoons mint jelly
2 tablespoons minced fresh mint, divided

Steps:

  • Preheat oven to 450 degrees F. Combine apple juice and cornstarch in a small bowl; set aside.
  • Sprinkle lamb chops with salt and pepper. Heat oil in a large ovenproof skillet over medium-high heat. Add the chops and cook until browned on one side, about 2 minutes. Turn them over and transfer the pan to the oven. Roast until an instant-read thermometer inserted horizontally into a chop registers 140 degrees F for medium-rare, 6 to 10 minutes, depending on the thickness. Transfer the chops to a plate and tent with foil.
  • Place the skillet over medium-high heat (take care, the handle will still be hot). Add shallot and cook, stirring constantly, until browned and softened, about 1 minute. Add broth, vinegar and jelly and bring to a boil, whisking to dissolve the jelly. Cook, whisking constantly, until the liquid has reduced by half, 2 to 3 minutes. Stir the cornstarch mixture; add to the pan and bring to a simmer, stirring constantly, until the sauce is thickened, about 30 seconds. Remove from the heat and stir in half the mint along with any accumulated juices from the chops. Serve the chops topped with the sauce and the remaining mint.

2 tablespoon olive oil
3 cloves garlic

1/2 teaspoon red chili flakes

Steps:

  • Prep grill and lamb: Heat a grill pan over high heat until almost smoking. Generously season lamb chops with salt and pepper on both sides.
  • Make sauce: Meanwhile combine all the sauce ingredients together in a bowl and whisk well. Set aside.
  • Grill: Spray the grill pan with a bit of cooking spray or brush with olive oil. Add the chops to the hot grill pan and sear for 2 minutes, flip them over and cook for another 2 1/2 minutes for medium-rare or 3 1/2 minutes for medium.

12 small rib lamb chops (about 2 1/3 pounds)

  • Preheat a grill to medium high. Mix the olive oil, mint, red pepper flakes, and salt to taste in a bowl. Rub the lamb chops all over with the garlic. Transfer a few tablespoons of the mint oil to a small bowl and brush on the chops.

Four 4-ounce lamb chops
1 bunch fresh mint
1/4 cup fresh parsley
2 anchovy fillets
1 clove garlic
Red pepper flakes, as needed
Extra-virgin olive oil, as needed

Neutral oil, for oiling the grill
Baked Sweet Potato with Sour Cream and Mint, recipe follows, for serving

2 tablespoons sour cream

Steps:

  • For the spice rub and lamb: Stir together the salt, pepper, coriander, cayenne and lemon zest in a small bowl. Season the lamb chops on both sides with the spice rub. Allow to sit at room temperature while you make the mint sauce.
  • For the mint sauce: In a food processor, add the mint, parsley, anchovies, garlic and some red pepper flakes. Process, adding olive oil as you go, until the sauce is just loose enough to drizzle. Taste and add salt if needed.
  • Heat a grill pan or grill on medium-high heat. Oil the grill and pat the chops dry. Grill the lamb until done to your liking, 2 to 3 minutes per side. Serve with the mint sauce and Baked Sweet Potato with Sour Cream and Mint.
  • Pierce the sweet potato several times with a fork and microwave on high according to the manufacturer's instructions until cooked through, 5 to 10 minutes.

2 racks of lamb

2 tablespoons white wine vinegar
2 tablespoons fresh mint leaves, torn

Steps:

  • 1. Rub the oil all over the lamb on a shallow roasting pan. Sprinkle with the rosemary and season generously with salt and pepper. Pat the seasonings on to adhere. Let sit while the oven heats. 2. Preheat the oven to 475°F. 3. Roast the lamb for 15 minutes. Reduce the oven temperature to 375°F and continue roasting the lamb until an instant-read thermometer inserted into the rack, away from the bone, registers 135°F for medium-rare, about 13 minutes. Transfer the lamb to a carving board, cover loosely with aluminum foil and let rest for 5 minutes. 4. Meanwhile, in a small saucepan, bring the bourbon to a boil. Boil until reduced by half, then add the jelly and vinegar. Adjust the heat to maintain a simmer and simmer, stirring occasionally, until the vinegar burns off and the jelly is melted. 5. Cut the lamb into chops. Sprinkle the mint leaves on top and serve with the bourbon mint sauce.

1 pinch cayenne pepper

¼ cup orange marmalade
1 pinch hot chili flakes
½ tablespoon rice vinegar
1 tablespoon chopped fresh mint

Steps:

  • Place lamb chops in a large bowl. Season with olive oil, garlic, cumin, mixed herbs, pepper, coriander, cinnamon, cayenne, and salt. Toss until well coated with oil and seasonings. Cover and refrigerate. Allow to marinate at least 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Place lamb chops on grill. Sprinkle the chops with a bit of salt. Grill until seared on the first side, 4 to 7 minutes depending on the size of the chops. Rotate chops a half turn on the grill about a minute before turning them. Turn and grill the other side to desired doneness, another 4 to 7 minutes. For medium rare, an instant-read thermometer inserted into the center should bead 125 to 130 degrees F (54 degrees C).   • Place marmalade in bowl. Add chili flakes, mint, and rice vinegar. Stir together thoroughly.
