Easy Mint Chocolate Chip Ice Cream image

This is a GREAT mint chocolate chip ice cream that I discovered by accident. The 2% milk makes the ice cream taste 'lighter' I think.

2 cups 2% milk
2 cups heavy cream
1 cup sugar
½ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon peppermint extract
3 drops green food coloring
1 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, stir together the milk, cream, sugar, salt, vanilla extract and peppermint extract until the sugar has dissolved. Color to your liking with the green food coloring.
  • Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. After about 10 minutes into the freezing, add the chocolate chips. After the ice cream has thickened, about 30 minutes later, spoon into a container, and freeze for 2 hours.

PHILADELPHIA-STYLE ICE CREAM BASE



Philadelphia-Style Ice Cream Base image

Made without eggs, this ice cream is much less rich than those made with a custard base. The lack of eggs also allows the flavorings to shine through, making it a light in texture yet intense in taste. Using a combination of granulated sugar and liquid sugar (corn syrup, honey or agave syrup) helps keep the texture smooth and silky.

3 cups heavy cream
1 cup whole milk
1/2 cup granulated sugar
1/2 cup/167 grams light corn syrup or substitute 1/3 cup agave syrup or honey
1/2 teaspoon fine sea salt
Your choice of flavoring (see note)

Steps:

  • In a saucepan, combine cream, milk, sugar, corn syrup and salt, and bring to a simmer. Continue to simmer until sugar dissolves, then transfer mixture to a container and refrigerate until very cold, at least 4 hours and preferably overnight.
  • Churn in an ice cream maker according to manufacturer's instructions. Serve immediately or transfer to an airtight container and freeze until hard.

MINT ICE CREAM

1 cup whole milk, well chilled
3/4 cup granulated sugar
2 cups heavy cream, well chilled
1 teaspoon mint extract (or peppermint extract or spearmint extract)
4 to 5 drops green or pink food coloring

Steps:

  • Special Equipment: Mix It In Soft-Serve Ice Cream Maker
  • Place milk and sugar in a medium bowl. Use a hand mixer on low speed for about 1 to 2 minutes or a whisk to mix until the sugar is dissolved. Stir in the heavy cream and mint extract. Add food coloring in drops to reach desired color. If not freezing immediately, cover and refrigerate until ready to use.
  • Turn on ice cream maker and pour in ingredients. Allow to mix and freeze until desired serving consistency is reached. Begin checking consistency after 12 to 15 minutes of freezing. If ice cream is not thick enough, pour back into the freezer bowl and continue mixing/freezing until desired consistency is reached, checking every few minutes.

This ice cream makes a great ice cream sandwich, using Santa Fe Chocolate Wafers (#121407). from the Ultimate Ice Cream book (Cook time includes overnight chilling and churning times.)

3 cups heavy cream
1/2 cup granulated sugar
1 tablespoon peppermint extract
creme de menthe
green food coloring (optional)
chocolate-mint candy bar, roughly chopped, as desired (I like to go heavy on the 'chips')

Steps:

  • Heat cream until just beginning to bubble around edges.
  • Immediately remove from heat and add sugar, stirring until completely dissolved.
  • Once cooled to room temp, add the peppermint extract, and a small splash of crème de menthe (be careful not to add to much! If you do, add a little cream or milk into the mixture.).
  • If desired, add enough food colouring to give this a delightfully retro, min-green hue.
  • Refrigerate overnight.
  • You can chill it for just a few hours until very cold, but it the texture is superior if allowed to chill overnight.
  • Add to ice cream maker and freeze; when partially set, pour in the chocolate-mint pieces.

2 cups heavy whipping cream
2 cups 2% milk
3/4 cup packed brown sugar
1/8 teaspoon salt
6 large egg yolks
3 to 4 tablespoons bourbon
2 teaspoons vanilla extract

Steps:

  • In a large heavy saucepan, combine cream, milk, sugar and salt. Heat over medium heat until bubbles form around sides of pan, stirring to dissolve sugar. , In a small bowl, whisk a small amount of the hot mixture into the egg yolks; return all to the pan, whisking constantly. Cook over low heat until mixture is just thick enough to coat a metal spoon and temperature reaches 180°, stirring constantly. Do not allow to boil. Immediately transfer to a bowl. , Place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in bourbon and vanilla. Press waxed paper onto surface of mixture. Refrigerate several hours or overnight., Fill cylinder of ice cream maker two-thirds full; freeze according to the manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to a freezer container; freeze until firm, 4-6 hours. Repeat with remaining mixture.
