MINI PORK CHEESEBURGERS

3 tablespoons unsalted butter
2 large onions, thinly sliced
Kosher salt and freshly ground pepper
1 pound ground pork
1 clove garlic, chopped
1 tablespoon chopped fresh parsley
10 small rolls, halved lengthwise
10 slices chipotle gouda or pepper jack cheese

Steps:

  • Melt the butter in a skillet over medium heat. Add the onions; cook until soft and golden, about 10 minutes. Raise the heat to medium-high and continue cooking, stirring, until uniformly brown, 5 to 10 more minutes. Season with salt and pepper and set aside.
  • Mix the pork, garlic and parsley in a bowl. Season the mixture with salt and pepper and form into 10 small patties, being careful not to pack them too tightly.
  • Heat a grill pan over medium heat; grill the patties until medium-rare, about 4 minutes per side. Place a cheese slice on the bottom half of each roll; top with a burger, some caramelized onions and the roll top.

1 tablespoon cornstarch
1-1/4 cups reduced-sodium chicken broth
2 pounds ground pork
3 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/8 to 1/4 teaspoon ground cloves
1/8 to 1/4 teaspoon ground nutmeg
1/8 teaspoon cayenne pepper
4 sheets refrigerated pie crust
1 large egg
2 teaspoons 2% milk

Steps:

  • Preheat oven to 425°. In a small saucepan, mix cornstarch and broth until blended; bring to a boil, stirring constantly. Cook and stir 1-2 minutes or until thickened. Remove from heat. , In a large skillet, cook pork, garlic and seasonings over medium heat 6-8 minutes or until pork is no longer pink, breaking up pork into crumbles; drain. Add broth mixture; cook and stir 1-2 minutes or until thickened. Cool slightly., Unroll each pie crust. On a work surface, roll each into a 12-in. circle. Using floured round cookie cutters, cut twenty 4-in. circles and twenty 2-3/4-in. circles, rerolling scraps as needed. Place large circles in ungreased muffin cups, pressing crust on bottoms and up sides., Fill each with 3 tablespoons pork mixture. Place small circles over filling; press edges with a fork to seal. In a small bowl, whisk egg and milk; brush over tops. Cuts slits in crust., Bake 15-20 minutes or until golden brown. Carefully remove pies to wire racks. Serve warm. Freeze option: Freeze cooled pies in freezer containers. To use, partially thaw pies in refrigerator overnight. Reheat on ungreased baking sheets in a preheated 350° oven 14-17 minutes or until heated through.

RED CHILE PORK BROCHETTES



Red Chile Pork Brochettes image

Spicy red chile sauce, made with New Mexico red chile powder, is used as both a marinade and a dipping sauce for these small brochettes, which are ideal party food. They are best grilled outdoors over coals, but also work fine on a stovetop cast iron grill or under the broiler. Threading each piece of meat onto two skewers, rather than one, keeps the meat from twirling and makes it easier to grill. (If you're using bamboo skewers, soak them in warm water for 15 minutes, so they won't catch fire.)

1 1/2 to 2 pounds well-marbled pork shoulder, cut into 3/4-inch slices
Kosher salt
2 tablespoons hot New Mexico red chile powder, more for seasoning meat (may substitute ancho or guajillo chile powder)
1 large tomato, about 3/4 pound
4 garlic cloves, mashed to a paste
2 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon toasted coarsely ground cumin

Steps:

  • Cut pork into 2-by-2-by-3/4-inch pieces. (You should have about 24 pieces.) Mix 1 tablespoon salt and 1 teaspoon chile powder. Use mixture to season pork on both sides.
  • To skewer, lay meat flat on cutting board. Thread meat onto two skewers spaced equidistant from center; do this first with one skewer, then the other. Put 3 pieces of pork onto each set of skewers, for eight brochettes total.
  • Cook the tomato (left whole) over hot coals or under broiler until charred and blackened, about 5 minutes. Cut in quarters but do not remove skin.
  • In a blender or food processor, put 1/2 teaspoon salt, 2 tablespoons chile powder, the charred tomato, the garlic, the lime juice, the olive oil and 1 teaspoon cumin. Blend to obtain a smooth sauce and transfer to a bowl.
  • Lay brochettes on a tray in 1 layer. Spoon 8 tablespoons chile sauce over pork and spread to cover evenly. (Save remaining sauce.) Leave at room temperature for 1 hour, or refrigerate several hours, then bring to room temperature.
  • Grill over medium-hot fire for about 3 minutes per side. Sprinkle with remaining toasted cumin. Serve with reserved sauce.

1 lb lean boneless pork
3 tablespoons Spanish olive oil, plus extra for oiling
1 large lemon, juice and rind of, grated
2 garlic cloves, crushed
2 tablespoons chopped fresh flat leaf parsley, plus extra (to garnish)
1 tablespoon Ras El Hanout Spice Blend (Ras-El-Hanout (Moroccan Spice Blend))
salt and pepper
12 skewers

Steps:

  • Cut the pork into pieces about 3/4 in square and put pieces in a large dish that will hold them in a single layer.
  • Prepare the marinade by placing all the remaining ingredients in a bowl and mixing them together. Pour over the pork and toss the meat until well coated. Cover and place in the refrigerator no less than 8 hours. Stir meat 2-3 times during that time.
  • Soak wooden skewers about 20 minutes in cold water before using. If using metal skewers, grease them.
  • Preheat broiler or grill pan. Thread 3 marinated pork pieces, leaving a little space between each piece, onto each prepared skewer. Cook the brochettes for 10-15 minutes or until tender and lightly charred, turning several times and basting with the remaining marinade during cooking. Serve garnished with parsley.

3/4 cup cream sherry, such as Bristol Cream
3 tablespoons fresh lemon juice (about 1 large lemon)
2 tablespoons dried oregano
1 tablespoon smoked paprika
1 teaspoon ground cumin
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
3 cloves garlic, minced
One 1-pound pork tenderloin, trimmed and cut into 34 to 30 (3/4-inch) cubes
2 tablespoons extra-virgin olive oil
1/3 cup heavy whipping cream
Nonstick vegetable oil spray
1 Belgian endive spear, separated into 8 to 10 leaves

Steps:

  • In a medium bowl, whisk together the sherry, lemon juice, oregano, paprika, cumin, 3/4 teaspoon salt, 1/2 teaspoon pepper and the garlic.
  • Place the pork in a medium glass bowl. Pour half of the marinade over the pork. Add the oil and toss to coat. Cover and refrigerate for 1 to 2 hours.
  • Pour the remaining marinade into a small saucepan. Add the cream, remaining 1/4 teaspoon salt and 1/4 teaspoon pepper, and bring to a boil over medium heat. Boil until the sauce is thick enough to coat the back of a spoon, 4 to 5 minutes.
  • Spray a grill pan or grilling rack with nonstick spray. Place the grill pan over medium-high heat or preheat a gas or charcoal grill.
  • Remove the pork from the marinade. Discard the marinade. Thread 3 pieces of pork onto each skewer. Grill the skewers until the pork is golden and cooked through, about 4 minutes per side. Place a skewer in each endive leaf. Drizzle the skewers with sauce and serve.

24 medium mushrooms
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon thyme
1/2 teaspoon rosemary
1/2 teaspoon summer savory

Steps:

  • Clean the mushrooms well. You can scuff up the skin a little, so that the mushroom juices combine with the herbs.
  • Mix the herbs together and crush them with a mortar and pestle, or just crush them together.
  • Put 6 mushrooms on each of 4 bamboo skewers. Salt and pepper them, and sprinkle the herb mix over them.
  • Put them under a hot grill (or on the BBQ) and turn them frequently. Sprinkle more herbs and salt and pepper once or twice.
  • The mushrooms should be hot, and cooked but still crisp when they are done.

24 x 12-15cm wooden skewer s
2 tsp coriander seed
500g minced pork
1 garlic clove , crushed
2cm piece of ginger , peeled and finely chopped
1stalk of lemongrass , finely chopped
20g pack fresh coriander , roughly chopped
2-3 tsp Thai red curry paste
2 tsp tomato purée
200ml carton coconut cream
1 tsp light muscovado sugar
¼ tsp Thai fish sauce or soy sauce
½ lime , juice only

Steps:

  • Soak the skewers in warm water. Put the dip ingredients into a saucepan, bring to the boil and simmer for 5 minutes until slightly thickened. Pour into small serving bowls.
  • Crush the coriander seeds with a pestle and mortar. Tip them into a food processor and add the pork, garlic, ginger, lemongrass, coriander, ½ tsp sea salt and plenty of black pepper. Pulse until the mix becomes pasty.
  • Preheat the grill to medium high. Using wet hands, divide and shape the mixture into 24 equal-size sausage shapes around each skewer.
  • Put the brochettes on an oiled baking sheet and grill for 7-10 minutes, turning until golden. Serve on a plate, with the dip in small bowls.
