These baby burgers will be a hit at any appetizer buffet, and they're perfect for little hands as well.

1 can (11 oz) refrigerated Pillsbury™ Original Breadsticks (12 Count)
1 egg
3 tablespoons dried minced onion
2 tablespoons milk
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup Progresso™ plain bread crumbs
1 lb lean ground beef
1/2 cup ketchup

Steps:

  • Heat oven to 375°F. Separate dough into 12 breadsticks. Cut each into 4 pieces; place on ungreased cookie sheet.
  • Bake at 375°F. for 10 to 12 minutes or until lightly browned. Immediately remove from cookie sheet; place on wire racks. Cool 5 minutes or until slightly cooled. Split each in half, keeping tops and bottoms together to form miniature buns.
  • Reduce oven temperature to 350°F. Beat egg in medium bowl. Add onion, milk, Worcestershire sauce, salt and pepper. Stir in bread crumbs. Add ground beef; mix well. Press ground beef mixture into thin layer in bottom of ungreased 13x9-inch pan.
  • Bake at 350°F. for 14 to 16 minutes or until thoroughly cooked. Cut into 48 rectangles (8 strips crosswise and 6 strips lengthwise). Fill buns with miniature burgers. Place ketchup in small bowl for dipping sauce. Serve immediately.

4 slices Texas toast (baked according to package directions)
12 medium-sized meatballs (frozen or homemade, cooked)
12 cherry tomatoes (raw sweet onion rings, cut into 4 pieces each)
1 leaf Romaine lettuce (chopped into 12 pieces)
3 thick raw sweet onion rings, cut into 4 pieces each

Steps:

  • Build skewers by placing Texas toast, meatball, tomato, onion, lettuce and another piece of Texas toast on skewers.
  • Serve with your favorite dipping sauce.

BACON CHEESEBURGER BITES

2 slices thick-cut bacon
9 ounces ground beef
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 to 3 splashes Worcestershire sauce
1 clove garlic, pressed
3 slices Cheddar, quartered
1/4 cup baby spinach leaves
12 dill pickle chips
2 tablespoons your favorite burger condiment
3 cherry tomatoes, halved

Steps:

  • Heat a skillet with a lid over medium heat. Add the bacon and cook, turning occasionally, until crisp, about 12 minutes.
  • Meanwhile, mix together the ground beef, salt and pepper, Worcestershire sauce and garlic in a small bowl until well combined. Divide the mixture into 6 equal mini patties. Set aside.
  • Remove the bacon from the skillet and set aside. Add the burger bites and cook until well browned all over and cooked through, 4 to 5 minutes per side. Add 2 of the quartered pieces of cheese to the top of each bite and cover the skillet with the lid. Allow the cheese to melt, 1 minute. Remove the bites to a plate.
  • Tear each bacon piece into bite-size pieces. Start building up the bites by placing a piece of bacon on top of each patty, then a couple of folded leaves of spinach, a couple of pickles, a dollop of your favorite burger condiment, and a half a tomato, securing it all with a toothpick or small skewer. Repeat with the remaining ingredients until all the bites are built, and serve.

2 tablespoons canola oil
2 medium onions, diced
2 tablespoons yellow mustard
Pinch salt
1/3 cup mayonnaise
3 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon hot sauce
1/2 teaspoon garlic powder
1/2 teaspoon paprika

Steps:

  • Caramelized Onions: Heat the canola oil in a large skillet over medium heat. Add the onions and cook until soft and lightly caramelized about 15 minutes. Add the mustard and a pinch of salt and cook for another 2 minutes. Remove the onions from the pan to a small bowl and set aside.
  • Special Sauce: In a medium bowl combine all the ingredients and whisk until smooth.
  • Burgers: Preheat the broiler to low.
  • Form the ground meat mixture into 6 equal patties. Do not over handle or compress the patties, keep them loose. This will help create a tender burger. Over mixing and compacting will result in a tough heavy burger.
  • Heat the canola oil a large heavy-bottomed skillet over medium-high heat.
  • In a small bowl combine the salt, pepper and garlic powder and season the burgers generously with the mixture. Put the patties in the skillet and cook for 4 minutes. Flip and let cook for 1 minute, then top each patty with a piece of cheese. Cook for another 2 minutes until the cheese is melted and the burgers are medium.
  • While the burgers are cooking, lightly brush the buns with melted butter and put them on a sheet pan. Broil until lightly toasted, about 2 minutes.
  • To assemble, split the buns and spread each half with about a tablespoon of the special sauce. Put the burgers on the bottom half of each bun, top with caramelized onions, tomato and lettuce. Cover with the top half of the bun and serve.

1 pound ground beef
1 (1 ounce) package dry onion soup mix
½ cup dried minced onion
¾ cup mayonnaise
1 cup shredded Cheddar cheese
2 (8 ounce) packages dinner rolls
1 (16 ounce) jar dill pickle slices, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a medium baking sheet with aluminum foil.
  • In a medium skillet over medium high heat, stir together ground beef, dry onion soup mix and dry minced onion. Cook until beef is evenly brown. Remove from heat, drain and stir in mayonnaise and Cheddar cheese.
  • Slice tops off the dinner rolls. Arrange the rolls on the baking sheet. Spoon some of the ground beef mixture onto each roll. Garnish with pickle slices. Place tops back on rolls.
  • Tightly wrap the baking sheet with aluminum foil. Bake in the preheated oven 20 minutes.

2 tablespoons ketchup
2 teaspoons instant minced onion
1 teaspoon yellow mustard
8 ounces American cheese, cut into 2-inch cubes (2 cups)
24 miniature sandwich buns, split

Steps:

  • Cook beef in 10-inch skillet over medium-high heat about 8 minutes, stirring frequently, until brown; drain. Stir in ketchup, onion and mustard.
  • Spray 3 1/2- to 4-quart slow cooker with cooking spray. Spoon beef mixture into cooker. Top with cheese.
  • Cover and cook on low heat setting 3 to 4 hours or until mixture is hot and cheese is melted.
  • Serve beef mixture with buns. Beef mixture will hold on low heat setting up to 3 hours.
