TOOTSIE ROLL FUDGE

When my husband came home with 50 pounds of Tootsie Rolls he bought at a discount store, I had to figure out a way to use them-so I came up with this recipe! A red or green M&M's candy atop each piece makes them extra jolly.

Yield about 2 pounds.

Number Of Ingredients 8

1 teaspoon plus 2 tablespoons butter, divided
2 cups Tootsie Roll Midgees
2 tablespoons peanut butter
3-3/4 cups confectioners' sugar
2 tablespoons milk
1 teaspoon vanilla extract
1 cup chopped pecans
1/3 cup green and red M&M's

Steps:

  • Line a 9-in. square pan with foil. Grease the foil with 1 teaspoon butter; set aside. In a heavy saucepan, melt the Tootsie Rolls, peanut butter and remaining butter over low heat, stirring constantly. Gradually stir in the confectioners' sugar, milk and vanilla (mixture will be very thick). Fold in pecans., Spread into prepared pan. Using a sharp knife, score the surface into 1-in. squares. Press a M&M's candy into the center of each square. Cool. Using foil, remove fudge from pan; cut into squares. Store in an airtight container.

½ cup unsweetened cocoa powder
3 cups confectioners' sugar
1 teaspoon vanilla extract
¾ cup dry milk powder
½ cup white corn syrup

Steps:

  • Mix all ingredients together. Knead like you would for bread. Roll into rope shapes and cut into desired lengths.

A favorite treat for chocolate lovers! Make your own at home. Here's a recipe a friend sent me, since she knows I loooove Tootsie Rolls!

Number Of Ingredients 6

1 cup granulated sugar
1/2 cup light corn syrup
2 1/2 tablespoons shortening
4 teaspoons cocoa
2 tablespoons evaporated skim milk
1/2 teaspoon vanilla

Steps:

  • Combine sugar, corn syrup, shortening, and cocoa in a medium saucepan over medium/high heat.
  • Bring mixture to a boil, then reduce heat to medium, and simmer candy until temperature comes to 275 degrees on a candy thermometer.
  • Remove pan from heat.
  • When bubbling stops, add condensed milk and beat in pan with electric mixer for about 30 seconds.
  • Add vanilla, then continue to beat candy until it begins to firm up and you can no longer beat it.
  • Pour candy out onto wax paper.
  • When cool, divide candy into several portions and roll into long ropes that are approximately 1/2 inch thick.
  • Use a sharp knife to slice candy into 1 1/8-inch-long portions.
  • Arrange the candy on a plate and let it sit out overnight so that it firms up.

A homemade chocolate candy treat that makes a great gift.

or colored foil, for wrapping wax paper
12 oz semisweet chocolate chips
1/2 cup light corn syrup
3/4 teaspoon warm water
1 3/4 teaspoons orange extract

Steps:

  • Line a baking tray (with sides) with plastic wrap and set aside.
  • In a medium microwave safe bowl, melt chocolate. Stop to stir every 5-10 seconds so chocolate will not burn. Add the remaining ingredients and stir well. Scrap mixture onto the prepared baking sheet and press down with the back side of a spatula to a 1″ thickness. (Paula's Note: It will not completely cover the pan). Cover mixture with another piece of plastic wrap and let it set overnight at room temperature. The mixture will be stiff, but still moldable and flexible the next day.
  • Peel off the plastic wrap and cut into strips (about 1/2″-3/4″ wide). Form each strip into a log and roll out the logs between your hands or on your work surface until they are about 1/2″ in diameter. Cut into sections as long as you like and set aside for a few minutes to harden up again after you have heated them with your hands. Wrap in waxed paper or colored foil squares.
  • Paula's Gift Packaging Tip: I love giving gifts in vintage containers I find while junkin'. With my Homemade Tootsie Rolls, I wrapped them in silver foil candy squares and filled a Vintage drinking glass. I finished with a coordinating gross grain ribbon tied on the glass.

1/4 cup cocoa powder (good quality)
1 cup confectioners' sugar
1/4 cup powdered milk
1/4 cup simple syrup (honey or corn syrup OK)
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract (good quality)
1 pinch salt

Steps:

  • Sift together the cocoa powder, confectioner's sugar, dry milk and salt.
  • Whisk together corn syrup, melted butter and vanilla.
  • Stir the wet into the dry.
  • At first it will look like there isn't enough liquid. Keep going.
  • Then, using your hands knead the mixture together for a few minutes.
  • Using a sharp knife, cut the dough into managable pieces and roll it into a long, thin rope; cut the rope into 1-inch "tootsie rolls."
  • Transfer the cut tootsie rolls to a baking sheet or cooling rack.
  • Repeat until done.
  • Place them in the fridge for 1 hour and until firm.
  • Wrap the "tootsie rolls" in parchment or wax paper that are about 3 1/2 x 2 1/2 inch rectangles.
  • Yeild depends on how thin your ropes are. Time does not include chill time.
