Mini Tacos Nachos make a quick, easy and delicious way to serve nachos. Start with Jose Ole mini cheese tacos and top with your favorite nacho toppings.

2 cartons Jose Ole Nacho Bites
1 pound ground turkey (cooked)
1 packet taco seasoning
2 cups cheddar cheese (shredded )
1 can black beans (rinsed, drained and heated through)
1 cup salsa (your favorite )
*optional - green onion slices

Steps:

  • Heat Jose Ole Nacho Bites according to package directions. Layer on toppings of your choice and heat under broiler until hot and cheese is melted.
  • Serve with your favorite toppings - green onions, sour cream, black olives, tomatoes

Steps:

  • Carne Asada: Combine 2 minced garlic cloves, 2 tablespoons lime juice and 1 teaspoon kosher salt; rub all over 8 ounces skirt steak and refrigerate 30 minutes. Grill over high heat, turning, until charred, 6 to 8 minutes. Let rest, then chop.
  • Super Melty Cheese (SMC): Melt 2 tablespoons butter in a saucepan over medium heat; add 1 tablespoon flour and whisk until smooth and toasted, 5 minutes. Whisk in 1 cup each whole milk and heavy cream; bring to a boil. Add 2 ounces each grated mild cheddar, monterey jack, Oaxaca and asadero cheese. Whisk until melted. Stir in a pinch each of cayenne and cumin, 1 tablespoon each minced pickled jalapenos and pickled jalapeno juice and 2 tablespoons pico de gallo. Remove from the heat and keep warm.
  • Black Beans: Rinse 1 cup dried black beans, then soak in water overnight; drain. Transfer to a saucepan, cover with water by 2 inches and bring to a boil; reduce to a simmer. Add 1/2 cup minced sweet onion, 1 clove minced garlic, 1/2 tablespoon kosher salt and 1 sprig epazote (or 1 teaspoon dried Mexican oregano). Simmer until the beans are tender, about 1 hour, adding more water as needed. Discard the epazote.
  • Make the carne asada, super melty cheese (SMC) and black beans (see above).
  • Spoon some of the SMC in a large tin can (an empty 110-ounce can works well, or you can use a pot or a metal bucket). Layer 1/4 pound tortilla chips one-quarter of the way up.
  • Spoon more SMC over the chips, then sprinkle with a layer each of carne asada and black beans. Sprinkle with pico de gallo, shredded cheddar, sliced jalapeno, crumbled Cotija cheese, sliced red onion, julienned radish and chopped cilantro; drizzle with Mexican crema.
  • Repeat to make 3 more layers of chips, SMC, meat, beans and toppings. Place a large round platter or tray on top of the nachos; invert onto the platter and remove the can. Garnish with more pico de gallo, cilantro, red onion and jalapeno.

Simple and delicious mini taco bites are the perfect party appetizer or cute weeknight dinner!

1 vine tomato, chopped
2 tablespoons onion, small dice
1/2 small jalapeño pepper, small dice
1 small garlic clove, minced
1 teaspoon fresh lime juice
Kosher salt, to taste
Ground black pepper, to taste
6 flour tortillas
3 teaspoons vegetable, canola, or olive oil
1 pound lean ground beef
1 (7 to 8-ounce) can picante sauce (or red salsa)
2 teaspoons chili powder
1 teaspoon ground cumin
1/4 cup crema or sour cream
2 tablespoons fresh cilantro leaves

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Make pico de gallo: combine tomato, onion, jalapeño, garlic, cilantro, and lime juice. Season with salt and pepper and stir.
  • Use a 3-inch cookie cutter to cut out 4 small taco shells from each tortilla. Save the scraps and toast them for a crispy garnish for salads or soups . Warm the tortillas for 10 to 20 seconds, covered, in a microwave, or wrap in foil and heat in a warm oven until pliable.
  • Brush both sides of each tiny tortilla using 2 teaspoons of oil and sprinkle with salt, keeping them covered and warm in between. Press into openings of a mini muffin tin. Repeat with 11 more little tortillas, lightly reheating if needed to keep them pliable.
  • Repeat with a second mini muffin tin or repeat after cooking first batch of mini taco shells, for a total of 24.
  • Bake for 10 to 12 minutes or until lightly browned.
  • Meanwhile, heat a large skillet over medium heat. Add 1 teaspoon of oil followed by ground beef . Cook, breaking up into small pieces, until no longer pink. Use a spoon to scoop out any excess oil.
  • Add picante sauce, chili powder, and cumin. Season with salt and pepper and stir. Simmer for about 5 to 10 minutes, or until no longer watery. Taste for seasoning.
  • Add a heaping spoonful of beef mixture to each tortilla shell, followed by a dollop of crema, a scoop of homemade pico de gallo, and a sprig of cilantro.

MINI TACO NACHOS

Everyone always loves these individual nachos. You can make the meat mixture up ahead of time and store in the fridge in tupperware until ready to use. The meat mixture freezes well too. If you are short on spices, just use a taco packet instead. I often use leftover taco meat that I need to use up.

1/2 lb ground beef
1/2 red onion, diced
2 serrano peppers, minced
2 teaspoons chili powder (or to taste)
1/2 teaspoon ground cumin (or to taste)
1/4 teaspoon ground coriander (or to taste)
1/4 teaspoon dried Mexican oregano (or to taste)
1/4 teaspoon garlic powder (or to taste)
1/4 teaspoon onion powder (or to taste)
1/4 teaspoon cayenne (or to taste)
salt, to taste
1/4 cup beer
1 bunch green onion, sliced
1 cup shredded cheddar cheese
1 (12 1/4 ounce) bag Tostitos Scoops

Steps:

  • Brown ground beef in a large skillet until browned and cooked through. Drain grease if necessary. Add onions and peppers and saute with meat until soft, about 3-5 minutes.
  • Sprinkle seasonings (chili powder, cumin, coriander, oregano, garlic powder, onion powder, cayenne and salt) on meat mixture. Add beer and stir until mixture is combined and slightly reduced.
  • ***At this point, you could store meat mixture in the fridge until ready to use or allow mixture to cool slightly before starting nacho assembly. ***You could also skip those first 2 steps if you have leftover taco meat!
  • Line baking sheets with aluminum foil that's been sprayed with nonstick cooking spray.
  • Spread out tortilla chips on baking sheet in rows. (I can usually get about 7 rows of 5 on each baking sheet).
  • Fill each tortilla chip with 1-2 teaspoons of meat mixture. Then top each chip with 1-2 teaspoons of shredded cheese. Finally, sprinkle green onions on top of cheese.
  • Bake at 375 degrees for 5-7 minutes.
  • Serve with salsa, guacamole, sour cream and/or hot sauce!
