1 can (15 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 teaspoon dried basil
1/2 teaspoon garlic salt
1/4 teaspoon onion powder
1/4 teaspoon sugar
1 tube (11 ounces) refrigerated thin pizza crust
1-1/2 cups shredded part-skim mozzarella cheese
OPTIONAL TOPPINGS:
pepperoni, olives, sausage, onion, green pepper, Canadian bacon, pineapple, tomatoes, fresh basil and crushed red pepper flakes

Steps:

  • Preheat oven to 425°. In a small bowl, mix the first 6 ingredients., Unroll pizza crust; cut into 16 squares. Press squares onto bottom and up sides of 16 ungreased muffin cups, allowing corners to hang over edges., Spoon 1 tablespoon sauce mixture into each cup. Top with cheese; add toppings as desired. Bake 10-12 minutes or until crust is golden brown. Serve remaining sauce mixture with pizzas., Freeze option: Freeze cooled baked pizzas in a resealable freezer container. To use, reheat pizzas on a baking sheet in a preheated 425° oven until heated through.

1 can (8 ounces) pizza sauce
1/4 cup finely chopped onion
1/3 cup finely chopped green pepper
2 ounces sliced turkey pepperoni, chopped
1 cup shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 375°. Separate tubes of dough into 8 rolls each; halve the rolls. Press dough onto the bottom and up the sides of miniature muffin cups coated with cooking spray. , Spoon pizza sauce into each cup. Sprinkle with onion, green pepper, pepperoni and cheese. 4 flour tortillas, 8-inch (20 cm)

Steps:

  • Preheat oven to 425°F (220°C)
  • In a large bowl mix marinara sauce, parmesan cheese, pepper, salt, and oregano.
  • Lightly oil a 12-cup muffin tin or coat with nonstick spray.
  • Lay tortilla on a flat surface. Using an empty can, cut 3-4 medium circles, pressing firmly enough in a rocking motion to cut through the tortilla.

10 tablespoons pizza sauce (such as Ragu® Homestyle)
10 slices pepperoni
10 tablespoons shredded mozzarella cheese, or as needed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spray 10 muffin cups with cooking spray.

Mini corn muffins with pizza toppings are a great snack or tucked into a lunchbox. My kids love these. Can be frozen and reheated as most muffins. I have added garlic, spices, and cheese to the batter, also some fresh corn added to the batter would be nice.

Number Of Ingredients 11

1 1/2 cups all-purpose flour
1/2 cup fine yellow cornmeal
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg, lightly beaten
1 1/4 cups milk
1/4 cup oil
1/2 cup pizza sauce or 1/2 cup marinara sauce
1/3 cup grated parmesan cheese
1/3 cup cooked sausage or 1/3 cup vegetables

Steps:

  • Heat the oven to 400ºF and line 36 mini muffin cups with paper liners or grease a mini muffin pan.
  • Sift the flour, cornmeal, sugar, baking powder, and salt into a large mixing bowl.
  • In a separate bowl, blend the egg, milk, and oil. Make a well in the center of the dry mixture and add the liquid. Stir just until combined.
  • In a small bowl combine pizza sauce and parmesan.
  • Spoon the muffin batter into the muffin cups evenly, filling them about 1/2-3/4 full. Spoon about 1 tsp of sauce mixture on top of each one mixing slightly. Then sprinkle with chopped pepperoni or other desired finely chopped pizza toppings. Shredded mozzarella does better if you wait until they are almost done baking and just let it melt over.
  • Bake the muffins for 15 minutes, until they puff and brown at the edges. Cool in the pan for several minutes then serve.
