1 1/2 pounds ground pork
8 ounces ground beef
8 ounces green cabbage, shredded
1/2 red onion, shredded
2 tablespoons yellow mustard
2 tablespoons pickle juice
1 tablespoon mayonnaise
1 tablespoon apple cider vinegar
2 teaspoons kosher salt
1 teaspoon cayenne
1 teaspoon onion powder
1 cup ketchup
1/2 cup apple cider vinegar
2 tablespoons bourbon
2 tablespoons molasses
2 tablespoons brown sugar
2 tablespoons Worcestershire
1 teaspoon honey
1 tablespoon yellow mustard
1 teaspoon cayenne pepper
1 teaspoon paprika
Kosher salt and freshly ground black pepper
Canola oil, for frying
1 cup all-purpose flour
1 teaspoon baking powder
1 green tomato
Kosher salt and freshly ground black pepper
1 cup buttermilk
4 burger buns

Steps:

  • For the burger: Preheat the grill to medium-high heat. Combine the pork and beef, sprinkling with salt and pepper. Form 4 patties and indent well in the middle. Put the burgers on the very hot grill, flipping when they release. Do not flatten with a spatula. Cook the pork fully, to an internal temperature of 130 degree F.
  • For the coleslaw: Combine the cabbage, onions, mustard, pickle juice, mayonnaise, vinegar, salt, cayenne and onion powder in a large bowl and mix well. Let sit for the flavors to meld together.
  • For the BBQ sauce: Combine the ketchup, vinegar, 1/2 cup water, the bourbon, molasses, brown sugar, Worcestershire sauce, honey, mustard, cayenne, paprika and some salt and pepper in a saucepan over medium-high heat. Bring to a boil, then reduce the heat and simmer on low for 30 minutes. Thin with additional water if needed.
  • For the tomatoes: Bring a few inches of oil to 340 degrees F in a cast-iron skillet. Whisk the flour with the baking powder in a shallow bowl to combine. Slice the tomato thin and season with salt and pepper. Dredge in the flour mixture, then the buttermilk, then the flour again. Fry the breaded tomatoes until crisp and brown, about 2 minutes on each side. Season.
  • To assemble: Layer a burger, some coleslaw and some BBQ sauce on a bun. Top with a fried green tomato. Repeat with remaining ingredients. Serve immediately.

2 pounds ground beef
1 (1.25 ounce) envelope onion soup mix
½ cup mayonnaise
2 cups shredded Cheddar cheese
24 dinner rolls, split
½ cup sliced pickles

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.
  • Mix together the ground beef and onion soup mix in a large skillet; cook and stir over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Remove from heat. Stir the mayonnaise and Cheddar cheese into the ground beef mixture.
  • Lay the bottoms of the dinner rolls on the prepared baking sheet. Spread the cheese and beef mixture on the bottom half of each roll. Replace the tops. Cover with another sheet of aluminum foil sprayed with cooking spray.
  • Bake in the preheated oven until the burgers are heated through and cheese melts, about 30 minutes. Serve with sliced pickles.

1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
12 to 15 small potato rolls, split in 1/2
Mustard sauce, recipe follows
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon cayenne pepper
Salt and freshly ground black pepper

Steps:

  • Preheat a flat top grill pan to high heat.
  • Add sliced onion to grill pan and cook until tender, about 10 minutes.
  • In a medium bowl, mix ground beef, onion powder, salt and freshly ground pepper. Make burgers equal in size, about 2-inches across.
  • Cook burgers on the flat top for 3 to 4 minutes on each side. Serve on split rolls with grilled onions and mustard sauce.
  • Mix all ingredients in a mixing bowl.

1 small shallot, finely chopped
2 clove garlic, finely chopped
1 teaspoon Neely's Dry Rub seasoning
1 tablespoon Worcestershire sauce
2 teaspoons salt
Freshly ground black pepper
Butter
6 brioche buns
6 slices pepper jack cheese
12 slices smoked apple wood bacon, fried crisp
1/2 cup Neely's "Secret Sauce", recipe follows
1 pint cole slaw (recommended: Neely's Cole Slaw)
2 beef steak tomatoes, sliced
1/3 cup sour cream
2 tablespoons mayonnaise
2 tablespoons buttermilk
2 tablespoons BBQ sauce (recommended: Neely's BBQ sauce)
1/2 lemon, juiced
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper

Steps:

  • Preheat your grill to medium-high heat.
  • In a large mixing bowl, break up the meat with your hands. Add the chopped shallot, garlic, Neely's Dry Rub, Worcestershire sauce, and salt and pepper, to taste. Mix with a wooden spoon until thoroughly incorporated. Using your hands, divide the meat into 6 equal balls. Flatten them into patties and use your thumb to create an indent in the center of each burger.
  • Grill the burgers, uncovered, for 3 minutes on the first side. Flip and continue cooking for another 3 minutes for medium-rare, and 4 minutes for medium. Remove from grill and immediately top with the cheese.
  • Butter the buns and place on the grill. Toast for about 1 minute and remove from grill.
  • Build your burgers by topping with the bacon, Secret Sauce, coleslaw, and tomatoes. Add onion rings if desired.
  • Mix all the ingredients together in s medium bowl. Cover with plastic wrap and refrigerate until serving, allowing the flavors to develop. Can be made a day ahead.

8 mini burger buns (about 2 1/2 inches in diameter), split

Steps:

  • Heat gas or charcoal grill. In medium bowl, mix ground beef and dry soup mix. Shape into 8 equal patties.
  • Place patties in grill basket; place on grill over medium heat. Cover grill; cook 8 to 10 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.
