These little meatloaf muffins are great freshly made or out of the freezer. There is no chopping so they go together fast. I can't keep them in the freezer very long, my family doesn't thaw them first, they just pop them in the microwave till their hot. They are a fast meal or snack.

Yield 18 muffins

Number Of Ingredients 11

1 cup ketchup
3 tablespoons brown sugar
1 teaspoon ground mustard
2 eggs, beaten
4 teaspoons Worcestershire sauce
3 cups Crispix cereal, crushed
3 teaspoons onion powder
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
3 lbs ground beef

Steps:

  • In a large bowl, combine ketchup, sugar and mustard.
  • Set aside 1/2 cup for topping.
  • To the rest of the mixture, add eggs, worcestershire sauce, cereal and seasonings, mix well.
  • Let stand for 5 min.
  • Crumble beef over mixture and mix well.
  • Press meat mixture into 18 muffin cups (about 1/3 c. each).
  • Bake at 375 degrees for 18-20 min.
  • Drizzle with reserved ketchup mixture; bake 10 min.
  • longer or until meat is no longer pink and meat thermometer reads 160.
  • Serve desired number of meat loaves.
  • Cool remaining loaves; freeze on lightly greased cookie sheets.
  • When frozen, transfer to bags; freeze for up to 3 months.
  • To use frozen meat loaves- thaw in the frig.
  • Place in a greased baking dish.
  • Bake at 350 degrees for 30 min.
  • or until heated through, or cover and microwave on high for 1 min.
  • or until heated through.

These are cute using a mini meatloaf pan. They are fun to serve at parties like appetizers. Everyone is surprised to get their own little meatloaf. You could of course just make one big meatloaf but would have to adjust the baking time. These are good and cheesy and stay together well.

Number Of Ingredients 15

MEATLOAFS
1 lb gd beef
1 large egg
1 medium onion chopped
4 clove garlic minced
1/2 c oatmeal
1/4 c milk
1 tsp each salt, gd. savory, and gd marjoram
1/2 tsp black pepper
1 1/2 c shredded cheddar cheese
GLAZE
1 c ketchup
1/2 c brown sugar
1 tsp yellow mustard
1 tsp whole grain mustard

Steps:

  • 1. Preheat oven 350 degrees. Spray a mini meatloaf pan with spray.
  • 2. Mix ingredients together for meatloafs. Adjust the moist by using more or less milk. Spoon the mixture into the 8 mini meatloafs pan leaving enough head room for glaze.
  • 3. Combine the ingredients for glaze together and spoon over top each meatloaf.
  • 4. Bake 45 minutes.

CHEESY SALSA-MINI MEATLOAFS



Cheesy Salsa-mini meatloafs image

I took this one off Kraft recipes, but have made some changes also. My son and granddaughter love it. It can be made with more spice by just changing what salsa you use.

Number Of Ingredients 6

1 lb - ground beef
1/2 cup - finely chopped onions
12 - saltine crackers - finely crushed- about 1/2 cup
1 1/2 cups - mexican style finely shredded four cheeses - divided
1 cup - thick and chunky salsa - divided
MAKE IT

Steps:

  • HEAT oven to 400ºF.
  • MIX first 4 ingredients with 1 cup cheese and 1/2 cup salsa.
  • PRESS into 12 muffin cups sprayed with cooking spray. Use back of spoon to make indentation in center of each. Place muffin pan on foil-covered baking sheet.
  • BAKE 20 to 25 min. or until meat loaves are done (160°F). Top with remaining salsa and cheese; bake 3 min. or until cheese is melted.
  • TIPS I didn't have any saltines the first time so I used about a 1/2 cup quick oatmeal. I didn't have enough Mexican cheese so I used what ever I had. I used at different times, all mild salsa, about 1/2 & 1/2 of mild and medium, and all medium. I liked the 1/2 & 1/2 the best. It took longer in my oven than the recipe calls for, but in a friends oven it came out perfect in 25 min, plus the 3 extra.

MINI CHEDDAR MEATLOAFS WITH BALSAMIC KETCHUP GLAZE



Mini Cheddar Meatloafs with Balsamic Ketchup Glaze image

These are really cute and tasty. I have done this with mini cupcake pan for little appetizers. If you can't find the Heinz balsamic vinegar ketchup just use regular ketchup and a little balsamic vinegar.

1 cup(s) sharp cheddar cheese
1/2 cup(s) cooking oats
1 large onion chopped
4 clove(s) garlic minced
1 teaspoon(s) salt
1 pound(s) ground beef
GLAZE
1 cup(s) heinz balsamic vinegar ketchup
1 cup(s) brown sugar
2 teaspoon(s) yellow mustard

Steps:

  • Mix first eight ingredients together. Place in greased muffin pan.
  • Combine the ketchup, brown sugar, and mustard. Pour over top each loaf.
  • Bake 350 degrees for 45 minutes.
