24 mini chocolate chip cookies
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup sugar
1 tsp. vanilla
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 Tbsp. flour
1 egg
3/4 cup cherry pie filling

Steps:

  • Heat oven to 350ºF.
  • Place 1 cookie, flat side down, in each of 24 paper-lined mini muffin pan cups. Beat cream cheese, sugar and vanilla with mixer until blended. Add sour cream and flour; mix well. Add egg; beat on low speed just until blended. Spoon over cookies.
  • Bake 13 to 15 min. or until centers are almost set.
  • Cool 1 hour before removing from pan. Refrigerate 2 hours.
  • Top with pie filling just before serving.

I am always asked to make my cheesecake for gatherings & holidays. But the problem is everyone likes something different. So around times like Thanksgiving when I would have to make 3 different kinds to please everyone, I make bite sized mini's instead!

2 (8 ounce) packages cream cheese
2 eggs
1/2 cup granulated sugar
1 tablespoon vanilla
12 vanilla wafers

Steps:

  • Preheat oven to 350 degrees.
  • Place foiled muffin cups into mini-muffin tin (12 total).
  • Add one vanilla wafer to each muffin cup.
  • In a medium bowl, mix cream cheese, sugar and vanilla on medium speed until smooth.
  • Add eggs, one at a time, mixing well after each addition, then mix until creamy.
  • Fill each muffin cup 3/4 full.
  • Bake 12 to 15 minutes or until the center is set and bounces back after lightly tapping it.
  • Cool completely on wire rack.
  • Refrigerate at least 3 hours, overnight is best.
  • Top with fresh sliced berries, or berries with powdered sugar, whip cream or berry glaze before serving. Even try your favorite candy bar crushed.

1 (10 ounce) package chocolate-covered mint cookies (such as Girl Scout Thin Mints®), finely crushed
4 (8 ounce) packages cream cheese, softened
1 ½ cups white sugar
¾ cup milk
4 eggs, at room temperature
1 cup sour cream
¼ cup all-purpose flour
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with cupcake liners.
  • Spread a heaping teaspoon of crushed cookies over the bottom of each muffin cup.
  • Beat cream cheese and sugar in a large bowl using a electric mixer until smooth. Blend in milk. Add eggs, 1 at a time, mixing well after each addition. Add sour cream, flour, and vanilla extract; mix until smooth. Fill each muffin cup half-full with batter.
  • Bake in the preheated oven until the center of a cupcake no longer jiggles when pressed, 25 to 35 minutes. Let cool, 1 to 2 hours.

3/4 cup graham cracker crumbs
1 tablespoon light brown sugar
1 1/2 tablespoons butter, melted
1/4 teaspoon cinnamon
1 (8 ounce) package cream cheese, room temperature
1/2 cup canned pumpkin puree, plus
1 tablespoon canned pumpkin puree
1 egg, at room temperature
2 tablespoons sour cream, at room temperature
1/2 cup sugar
1/2 teaspoon cinnamon
1/8 teaspoon fresh ground nutmeg
1 pinch clove
1 tablespoon flour
1/2 teaspoon vanilla
8 ounces whipped cream, Cool Whip if desired for mini tarts

Steps:

  • Preheat oven to 350°F.
  • Place an ovenproof glass pie plate in oven, 1/2 to 3/4 with water
  • Prepare crust: by combining crust ingredients in a small bowl. Mix to combine with a fork.
  • For 9" tart: Add the graham crumbs into a 9" tart pan. Spread along the bottom and at least halfway up the sides, taking care to even out the crust and tamp down, I used the bottom of a metal measuring cup.
  • For mini tarts: Add one rounded tablespoon of moist crust crumbs into each mini cheesecake space. Use a small bottle (such as a spice bottle, or a shot glass) to press down the crumbs, to form a crust.
  • Prepare the filling: Beat the cream cheese until very smooth. Add pumpkin, eggs, sour cream, sugar and spices. Blend until well combined. Add flour and vanilla, and beat until well combined and no lumps.
  • Pour or spoon filling into prepared crusts. / Divide batter among the muffin tins.
  • TART, bake for 25-30 minutes. Remove from oven and cool.
  • MINI CHEESECAKES, bake in pre-heated oven for 17- 20 minutes. Remove from oven and cool.
  • When completely cooled, cover lightly with plastic wrap and refrigerate for 2 hours minimum.
  • Serving options: Top with a dollop of whipped cream or if using a topping (you can pipe it on with a frosting bag & tip) , Cool Whip works best and holds up for hours, even overnite. DELISH!

1 cup graham cracker, crushed
1 ounce unsalted butter, melted
1 teaspoon gelatin, unflavored, equal to 1/2 package
1 tablespoon cold water, cold
1 1/2 cups fat-free cottage cheese
3/4 teaspoon vanilla extract
1/3 cup Splenda sugar substitute

Steps:

  • To prepare crust, toss together graham cracker or vanilla cookie crumbs and margarine.
  • Press mixture into the base of the cupcake liners. Set aside.
  • Stir together gelatin and cold water.
  • Place in a small pan and let stand for 1 minute, until softened.
  • Cook over medium high heat for a couple of minutes, stirring once or twice until gelatin dissolves. Remove from heat and let cool.
  • Puree cottage cheese, vanilla and SPLENDA in a food processor until smooth.
  • Add gelatin with processor running, and puree until mixture is smooth.
  • Pour into cupcake liners.
  • Refrigerate about 3 to 4 hours.

CRUST:
1/2 c butter, room temperature
1/2 c brown sugar, lightly packed
1 1/2 c flour
1/2 c walnuts, ground
CHEESECAKE:
1 c white sugar
2-8 oz. pkg cream cheese, room temperature
2 eggs
3 Tbsp sour cream
2 Tbsp lemon juice
1 Tbsp flour
1 tsp vanilla
1/4 tsp lemon extract

Steps:

  • 1. Pre-heat oven to 350 degrees F. Grease a 9x13 pan
  • 2. Cream butter and brown sugar until creamy. Add flour and walnuts and mix well. Set aside 1 cup of mixture for topping. Press remainder in pan and bake for 12-15 minutes until lightly brown.
  • 3. Blend cream cheese and white sugar until smooth. Add eggs, sour cream, lemon juice, 1 T. flour, vanilla and lemon extract. Beat well. Spread over bottom crust: sprinkle with reserved topping mixture.
  • 4. Return to oven and bake for 35 minutes, or until lightly brown. Remove and cool. When cool, refrigerate until ready to serve. Keep in refrigerator until ready to serve.
  • 5. Helpful hint: Cut into squares before refrigerating...makes it easier to remove after they are cold. Sooo yummy!!! Enjoy....

2/3 cup boiling water
1 pkg. (0.3 oz.) JELL-O Lemon Flavor Sugar Free Gelatin
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
1 cup thawed COOL WHIP FREE Whipped Topping

Steps:

  • Place 1 wafer in bottom of each of 8 foil cup-lined muffin cups; set aside. Add boiling water to gelatin mix in bowl; stir 2 min. until completely dissolved. Cool 5 min., stirring occasionally.
  • Pour gelatin into blender. Add cream cheese; cover. Blend on medium speed 30 to 45 sec. or until blended. Add COOL WHIP; cover. Blend on lowest speed 5 sec. or just until blended. Pour into prepared muffin cups.
  • Refrigerate 2 to 3 hours or until firm.
