I love these bite-sized pancakes because they make perfect appetizers. Top blini with smoked salmon, creme fraiche, or even caviar. Add a sprig of dill and they are sure to impress. My children also love eating these plain too!

1 cup all-purpose flour
¾ teaspoon salt
½ teaspoon baking powder
¾ cup milk
2 tablespoons milk
1 large egg
1 tablespoon melted unsalted butter
1 tablespoon unsalted butter

Steps:

  • Combine flour, salt, and baking powder in a bowl.
  • Whisk 3/4 cup plus 2 tablespoons milk, egg, and 1 tablespoon melted butter together in a separate bowl. Mix into the flour mixture until batter is fully combined.
  • Heat 1 tablespoon butter in a skillet over medium-low heat. Drop batter, 1 tablespoon at a time, onto the heated skillet. Cook until bubbles form, 1 1/2 to 2 minutes. Flip and continue cooking until brown, about 1 minute more. Lay on plate lined with a paper towel to help soak up excess butter. Repeat with the remaining batter.

2/3 cup all-purpose flour
1/2 cup buckwheat flour
1/2 teaspoon salt
1 teaspoon yeast (instant or rapid-rise)
1 cup milk (warm)
2 tablespoons butter (melted)
1 large egg (room temperature, separated)
Garnish: toppings of choice

Steps:

  • Gather the ingredients.
  • In a large bowl, whisk together the buckwheat flour with the all-purpose flour, salt, and instant yeast .
  • Make a well in the center and pour in the milk, mixing until the batter is smooth.
  • Cover the bowl and let the batter rise until doubled, about 1 hour.
  • Stir into the batter the cooled, melted butter and the egg yolk.
  • In a separate bowl, whisk the egg white until stiff but not dry.
  • Fold the whisked egg white into the batter.
  • Cover the bowl and let the batter stand 20 minutes.
  • Heat a nonstick skillet over medium heat.
  • Drop quarter-sized dollops of dough into a pan, being careful not to overcrowd it. Cook for about 1 minute or until bubbles form.
  • Turn and cook for about 30 additional seconds.
  • Remove the finished blini onto a plate and cover them with a clean kitchen towel to keep them warm. Repeat the frying process with the remaining batter.

2 egg yolks

1/2 cup cold melted butter
1/2 cup brown sugar

2-3 loafs pepperidge farm thin sliced white sandwich bread
fruit to dip in(frozen berries)

Steps:

  • combine cream cheese.egg yolks and sugar set aside combine brown sugar and cinnamon and set aside cut crust of bread. using a rolling pin,roll each slice of bread until flat. put a teaspoon of cream cheese mixture in the edge of each slice of rolled bread and roll into a tube. brush melted butter onto each mini blini and then roll in sugar mixture place mini blinis on ungreased cookie sheet(they freeze good,put on cookie sheet freeze then put them in a ziploc) bake at 350 degree 15-20 minutes-until done can dip in fruit before serving if frozen bake at 400 10-15 minutes

1/3 cup buckwheat flour
2/3 cup all-purpose flour
1/2 teaspoon baking powder
3/4 teaspoon kosher salt
3/4 cup plus 2 tablespoons milk
1 extra-large egg
1/4 pound (1 stick) unsalted butter, clarified, divided
1/2 pound smoked salmon, thinly sliced
1/4 cup creme fraiche or sour cream
Fresh dill sprig, for garnish

Steps:

  • Combine both flours, baking powder, and salt in a bowl. In a separate bowl, whisk together the milk, egg, and 1 tablespoon of the clarified butter, then whisk into the flour mixture. Heat 1 tablespoon of the clarified butter in a medium saute pan and drop the batter into the hot skillet, 1 tablespoon at a time. Cook over medium-low heat until bubbles form on the top side of the blini, about 2 minutes. Flip and cook for 1 more minute, or until brown. Repeat with the remaining batter. (I clean the hot pan with a dry paper towel between batches.) Set aside.
  • To serve, top the blini with a piece of smoked salmon. Add a dollop of creme fraiche and a sprig of dill.

1 cup Milk
1 Egg
1/4 cup Creme Fraiche, Sour Cream or Full-Fat Greek Yogurt
1/2 lb Smoke Salmon, thinly sliced
Fresh Dill Sprigs, for topping

Steps:

  • Heat griddle or large nonstick skillet over medium-high heat (about 375°F). Grease with vegetable oil or butter.
  • In large bowl, stir pancake mix, milk and egg with whisk or fork until smooth. Drop batter in tablespoons onto hot greased skillet.
  • Cook 1 to 2 minutes until bubbles begin to form on surface and edges are dry. Turn; cook about 1 minute more or until golden brown. Transfer to plate. Repeat with remaining batter.
  • To serve, top each pancake with a dollop of creme fraiche, a small, thin slice of smoked salmon and a sprig of dill.

1 cup buckwheat flour
1 package active dry yeast
1 tablespoon sugar
1/2 teaspoon salt
2 cups warm milk
6 tablespoons butter, melted
3 eggs, lightly beaten
Butter for frying
Sour cream and sturgeon, salmon or golden caviar

Steps:

  • Combine flours, yeast, sugar and salt in a bowl. Stir in warm milk, butter and eggs and mix until smooth.
  • Set bowl aside in a warm place such as an oven with pilot light on and allow to rise until double in volume, about two hours. Stir batter.
  • Heat a large, heavy skillet and lightly butter it. Make blini with about a tablespoon of batter each, turning them as they brown and browning the other side. You should be able to fit four blini in a 10-inch skillet. As the blini are finished cooking, place them on a baking sheet in an oven heated to 150 degrees to keep warm.
  • Serve blini topped with sour cream and more or less of whichever kind of caviar your taste and budget may allow.

These Russian Pancakes commonly known as Blinchiki, Crepes, Blintzes or Blini are a staple food in Slavic countries. Often they are stuffed and rolled. I love eating them with butter, sour cream and blueberry jam. This is my lower fat blini recipe. Easy and delicious Russian Crepes or Blini Recipe (Блины)

Ingredients
3 1/2 cups flour
4 eggs
2 cups water
2 cups milk (low fat optional)
1/2 teaspoon salt
2 tablespoons sugar
2 tablespoons oil
oil for frying
stick of butter for blinchik stack

Steps:

  • Using an electric mixer, beat together the eggs, milk, water, oil, sugar and salt. Add the flour and continue to mix until it's completely smooth and has no lumps. It should have the consistency of a heavy cream, not runny like milk.
  • Use 2 nonstick frying pans, so you can cook the crepes twice as fast. You'll get the rhythm, trust me. Grease the pans with oil and heat over medium high heat. Pans must be hot before you start.
  • Using about 2/3 of a ladle, quickly pour into a tilted pan, and quickly spread it covering the surface of the frying pan. This needs to happen quickly, or you will have a thick, oddly shaped blinchik. The first few will always look wonky, it gets better as you get your rhythm going. If you have any holes in your blinchik, then fill with more batter. The goal is to make thin blini.
  • Cook the blinchik for about 2 minutes until it is lighlty golden, and the edge starts to separate from the side of the frying pan. Using your fingers, (or a spatula) pick up the edge of the blinchik and flip it over and cook for about 2 minutes until golden brown.
  • Place the hot blinchik on a plate, and smear the top side with the stick of butter. This is to prevent the next blinchik from sticking to each other. You will make a blini stack.
  • Repeat this process, greasing pan with oil, until all the batter is gone.
  • Best served warm with light sour cream and jam or honey.

2 (8 ounce) packages cream cheese, room temperature
1/2 cup sugar
2 egg yolks
2 loaves white bread, thin sliced with crusts trimmed (1lb.each)
1 cup butter, melted (2 sticks)
cinnamon-sugar mixture
sour cream
jelly

Steps:

  • Combine cream cheese, sugar and yolks in mixing bowl and beat until smooth.
  • Flatten each slice of bread with rolling pin and spread with some of cream cheese mixture.
  • Roll jelly roll fashion and dip in melted butter.
  • Sprinkle with cinnamon and sugar to taste.
  • (If preparing ahead, place in a single layer on baking sheet and freeze. When solidly frozen, transfer to plastic bags and return to freezer until ready to use).
  • When ready to serve, preheat oven to 400°F.
  • Leave blinis whole or cut each in half and place on baking sheet.
  • Bake until light golden brown, fresh blinis 8 to 10 minutes, or frozen blinis (thawing is unnecessary) 10 to 15 minutes.
  • Serve hot accompanied by sour cream and jelly on the side.
