1 package (8 ounces) reduced-fat cream cheese
1 egg white
1/2 cup frozen chopped spinach, thawed and squeezed dry
3 tablespoons chopped green onions (white part only)
1 teaspoon salt-free seasoning blend
1/4 teaspoon ground nutmeg
2 packages (1.9 ounces each) frozen miniature phyllo tart shells
3 turkey bacon strips, diced and cooked

Steps:

  • In a small bowl, beat the first six ingredients until blended. Spoon filling into tart shells. Place on an ungreased baking sheet., Bake at 350° for 10 minutes. Sprinkle with bacon; bake 2-5 minutes longer or until filling is set and shells are lightly browned. Serve warm.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 cup finely chopped red onions
1 pkg. (10 oz.) frozen chopped spinach, thawed, squeezed dry
1/3 cup OSCAR MAYER Real Bacon Bits
3 Tbsp. flour
1 cup VELVEETA Pepper Jack Shredded Pasteurized Prepared Cheese Product
4 eggs, beaten

Steps:

  • Heat oven to 350°F.
  • Mix cream cheese and onions in medium bowl until blended. Add spinach, bacon, flour and VELVEETA; mix well. Stir in eggs.
  • Spoon into 24 mini muffin pan cups sprayed with cooking spray.
  • Bake 14 to 16 min. or until centers are set and tops are golden brown. Serve warm or chilled.

These easy and quick mini cheeseburgers appetizers are prepared with ready made frozen crispy crown potatoes. For more variety customize and secure with long bamboo picks. They are perfect for game day, movie night and kid sleepovers.

27 crispy crown potatoes (found in the freezer section)
3/4 lb lean ground beef
2 pinch salt
2 pinch fresh ground black pepper
2 pinch onion powder
3 slices yellow american cheese
3 slices crispy cooked bacon

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Arrange crispy crowns in single layer on baking sheet. Bake 20 minutes turning halfway through.
  • 3. Meanwhile in a small bowl mix ground beef, salt, pepper and onion powder. Shape into little patties about 1 inch round and relatively flat. Place in single layer on separate baking sheet. Place in oven and bake 10 minutes flipping halfway through.
  • 4. Divide each cheese and bacon slice into ninths. On baking sheet top each crispy crown with a burger, cheese slice and bacon. Place back in oven until the cheese is melted; approximately 2-3 minutes.
  • 5. NOTES You can bake both the crispy crowns and burgers in the same oven simultaneously just on different baking sheets.

These are wonderful to serve as an appetizer and I have done so many times at my get togethers, everone loves these! to save even more time you can purchase the ready-made small tart shells and the recipe may be doubled if desired.

Yield 24 mini quiches

Number Of Ingredients 9

2 frozen 9-inch pie shells (thawed)
3 slices bacon
1/4 cup chopped green onion
2 eggs
1/2 cup half-and-half cream
1/3 cup grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1 (9 ounce) package frozen spinach, thawed and well drained (use your hands to squeeze out any extra moisture)

Steps:

  • Set the oven to 375 degrees.
  • On a lightly floured surface, with a 1-1/2-inch biscuit cutter, cut out 12 rounds from the thawed pie crust.
  • Press each of the rounds into the bottom, and up the sides of ungreased mini muffin cups.
  • Repeat with the second pie crust.
  • In a skillet, cook the bacon until brown and very crisp; drain.
  • Add in the onions to the same skillet with the bacon drippings, cook for 5 minutes, or until tender, stirring constantly; drain.
  • Place the onions in a medium bowl.
  • Crumble the bacon into small pieces, and add in with the cooked green onion.
  • Add in the eggs to the bacon and onions; beat well.
  • Stir in the cream, salt, nutmeg and the Parmesan cheese.
  • Add in the squeezed spinach; mix well to combine.
  • Divide the mixture evenly into crust-lined cups.
  • Bake for 20-25 minutes, or until puffed and golden brown.
  • Cool in pan on wire rack for 10 minutes.
  • Loosen quiches from pan with tip of knife.
  • Serve warm or cool.
  • Store in the refrigerator.
