2 cans Diced tomatoes (14.5 oz cans)
3 tbsp Tomato paste
1/4 cup Parmesan cheese
4 cups Vegetable broth (Or chicken broth)
2 cups Water
1 cup Carrots (Diced)
1 cup Celery (Diced)
1.5 cups Onion (Diced)
4 cloves Garlic (Finely minced)
1 tbsp Ginger (Freshly grated)
1 tsp Oregano (Dried)
1 sprig Rosemary (Fresh)
1 tbsp Italian seasoning
1 Bay leaf
Salt (To taste)
Pepper (To taste)
1 can Red kidney beans (15 oz. can, Drained and rinsed)
1 can Northern beans (15 oz. can, Drained and rinsed)
1 cup Zucchini (Diced)
1.5 cups Tubular pasta ( E.g. Ditalini pasta)
2 cups Spinach (Roughly chopped)
1 cup Green beans (Frozen)

Steps:

  • In a slow cooker, add diced tomatoes, tomato paste, parmesan cheese, vegetable broth, water, carrots, celery, onions, garlic, ginger, oregano, rosemary, Italian seasoning, bay leaf, salt and pepper.
  • Cook on Low heat for 6-8 hours or High heat for 3-4 hours.
  • Add red kidney beans, Northern beans, zucchini, pasta and cook on High heat for an additional 20- 25 minutes until pasta is tender.
  • Stir in the spinach, green beans and cook for an additional 10 minutes until cooked through. Enjoy!

1 cup carrots, sliced
1 cup celery, sliced
1 1/2 cups yellow onion, diced
28 oz can diced tomatoes, with juices
2 Tbsp tomato paste
parmesan rind, or 1" chunk of parmesan
2-3 Tbsp minced garlic
2 bay leaves
1 1/4 Tbsp dried Italian seasoning
pinch of red pepper flakes
4 cups fat free vegetable stock or broth
2 cups water
2 Tbsp vegetable base
15 oz can dark red kidney beans, drained and rinsed
15 oz can cannelini beans, drained and rinsed
1 cup diced zucchini
1 1/2 cups dried ditalini or other small pasta
1 cup frozen cut green beans
1 1/2 cups baby spinach, roughly chopped

Steps:

  • Add first 15 ingredients to 6 quart or larger slow cooker. Stir to combine, cover, and cook on LOW for 6-8 hours, or HIGH for 3-4 hours.
  • 30 minutes before you want to serve the soup, add zucchini and ditalini pasta, stir, cover and cook on HIGH for 20-25 minutes.
  • 5 minutes before serving, add in frozen green beans and baby spinach, stir, cover and cook on HIGH for 5 minutes.
  • When serving, if desired, grate parmesan cheese over the soup and enjoy!

1/4 cup sun-dried tomato pesto (homemade or store-bought)
1 parmesan rind
4 cups vegetable stock

8 ounces dried cannellini beans (about 1 cup)
3 medium carrots, sliced 1/2 inch thick
3 cloves garlic, thinly sliced
2 bay leaves
2 large stalks celery, sliced into 1/2-inch pieces
1 medium sweet potato (about 10 ounces), peeled and cut into 1/2-inch pieces
1 medium yellow onion, chopped
1/4 teaspoon crushed red pepper flakes
Parmesan rind, optional, for simmering
Kosher salt and freshly ground black pepper
One 28-ounce can crushed tomatoes
One 28-ounce can diced tomatoes
3 tablespoons tomato paste
2 cups thinly sliced curly kale
Freshly grated Parmesan, for serving

Steps:

  • Add the beans, carrots, garlic, bay leaves, celery, sweet potato, onion, crushed red pepper flakes, Parmesan rind, if using, 1 tablespoon salt and a few grinds of black pepper to the insert of a 6-quart slow cooker. Stir in the crushed tomatoes, diced tomatoes, tomato paste and 4 cups water. Cover and cook until the beans are tender, 6 hours on high or 8 hours on low.
  • Stir in the kale, cover and let simmer until just wilted, about 10 minutes. Ladle the soup into bowls and garnish with freshly grated Parmesan. Serve with toasted baguette, if desired.
  • If using pasta, spoon 1/2 cup cooked pasta into each bowl and ladle the soup on top. Store the pasta and soup in separate containers.

2 lb lean ground beef
1 Tbsp olive oil
1 lg super-sweet onion, chopped
1 Tbsp chopped garlic
1 Tbsp chili powder
2 tsp ground cumin
1/2 tsp ground black pepper
3 can campbells minestrone soup, undiluted
3 can ranch style beans, undrained
1 can small white beans, drained
1 can black beans, drained
1 can hominy, drained
2 can diced tomatoes, undrained
1-2 can rotel original tomatoes and green chilis (more tomatoes add more heat)

Steps:

  • 1. Directions •Turn on the crock pot to high. Set aside. •In a large skillet, brown the lean ground beef in the olive oil. •When the ground beef is just getting brown, add the onion. Cook until the onion gets soft. •Now, add the chopped garlic and spices. Cook only about 30 seconds. Don't burn it. •Put the beef, onion, garlic and spices in the preheated slow cooker, •Add all the canned ingredients. Stir gently to keep from breaking up the ingredients. •When the ingredients begin to simmer, stir the goulash one last time and turn the slow cooker down to low. It can continue to cook on low for up to 6 hours. •Serve it with optional sides of tortilla chips, cheese, sour cream, etc.

With fall-apart beef, tomatoes and peppers in a creamy, rich stew, our slow-cooker goulash recipe couldn't be easier or more comforting

3 tbsp olive oil
2kg braising or stewing steak, cut into chunks
2 large onions, finely chopped
4 mixed peppers, cut into 4cm chunks
3 garlic cloves, crushed
2 tbsp flour
2 tsp caraway seeds
2 tsp hot smoked paprika
1 tbsp sweet smoked paprika, plus extra to serve
4 tbsp tomato purée
4 large tomatoes cut into small chunks
400-500ml beef stock
300ml soured cream
small bunch of parsley, chopped

Steps:

  • Heat the slow cooker to low and heat 2 tbsp oil in a deep frying pan over a medium heat. Season and sear the beef in batches until brown on all sides. Transfer to a plate.
  • Put the remaining oil in the pan and fry the onions for 10 mins until lightly golden. Add the peppers and garlic, and fry for another 5-10 mins, then stir in the flour and all of the spices. Cook for 2 mins more, then stir in the tomato purée, tomatoes and 400ml beef stock. Season well. Bring the mixture to a simmer, then tip into the slow cooker with the seared beef. Add the remaining stock, if needed, to cover the meat completely. Cover and cook for 6-7 hrs until the beef is tender and the sauce has thickened slightly.
  • Season to taste, then swirl the soured cream and most of the parsley through the stew. Scatter over the remaining parsley and some sweet smoked paprika, then serve with small roasted potatoes or brown rice, if you like.
