You are bound to find fried pies in the south at fairs and festivals. My former mother in law use to make these. I loved to watch her make them. We love em nice and warm!

Number Of Ingredients 8

2 cup(s) all-purpose flour
1/2 cup(s) shortening
1 teaspoon(s) salt
1/2 cup(s) cold water
2 - apples, peeled and diced, i use granny smith
1/3 cup(s) sugar
1/2 teaspoon(s) cinnamon
1/2 cup(s) to 1 cup vegetable oil

Steps:

  • In a medium saucepan, add apples, sugar and cinnamon. Cook on low heat until apples are soft, then remove from heat and mash to create a thick applesauce. Set aside.
  • In a separate bowl, sift flour and salt. Cut in shortening. Add water and mix until dough sticks together and you can form a ball. Dump dough onto a well-floured surface and roll it out to about 1/8 of an inch thick. Cut out 4-inch circles with a large cookie or biscuit cutter.
  • On each round drop 1 large tablespoon of apple mixture. Using your finger, moisten edges of dough. Fold in half then press edges closed with a fork.
  • Heat oil in a large skillet over medium-high heat. Fry pies two to three minutes on each side, until golden. Drain on paper towels and, while still hot, sprinkle with powdered sugar, if desired.
  • Note: If you don't want to make a dough for these pies, use canned biscuits, skip step 2, roll out biscuits and follow steps 3 and 4. Note 2: If you don't want to deal with cooking apples, you can also use apple pie filling. Enjoy!

8 ounces thin lo mein noodles
1 tablespoon peanut oil
1 carrot, julienned
1/2 head napa cabbage, sliced thin
1/2 onion, sliced
1/4 cup chicken broth
1/4 cup low-sodium soy sauce
1 teaspoon sesame oil
Sliced green onions, for topping

Steps:

  • Bring a pot of water to a boil and cook the noodles according to the package directions. Drain and set aside.
  • Heat a skillet over medium-high heat and add the peanut oil. Add the carrots, cabbage and onions and cook for 1 minute. Add the chicken broth, soy sauce and sesame oil, then toss in the noodles. Top with sliced green onions.

2 cups shredded red cabbage (about 1/4 head)
1 red bell pepper, small dice (about 1 cup)
1 medium onion, small dice
6 radishes, thinly sliced (about 3/4 cup)
2 tablespoons kosher salt
1/2 cup rice wine vinegar
1/3 to 1/2 cup honey
1/2 teaspoon mustard powder
1/2 teaspoon turmeric
1/2 teaspoon prepared horseradish
1/4 teaspoon ground cloves
1 bay leaf
1 Thai chili, quartered if fresh and left whole if dried

Steps:

  • Mix the cabbage, bell pepper, onion, and radishes with the salt and place in a strainer set over a bowl. Refrigerate overnight.
  • Press out as much liquid as possible from the vegetables.
  • Combine the vinegar, honey, mustard, turmeric, horseradish, cloves, bay leaf and chili with 1/2 cup water in a large pot and boil for 5 minutes. Add the vegetable mixture, toss to coat and bring it back to a boil. Remove from the heat and let cool to room temperature. Transfer to a container and store in the refrigerator for up to 7 days.

SOUTHERN CHOW CHOW

5 cups white distilled vinegar
3 cups granulated sugar
2 tablespoons kosher salt
1 tablespoon whole cloves
1 tablespoon mustard seeds
1 tablespoon whole black peppercorns
1 teaspoon yellow mustard powder
1 teaspoon ground turmeric
Pinch crushed red pepper flakes
1 bay leaf
4 green tomatoes, finely diced
2 green bell peppers, finely diced
1 red bell pepper, finely diced
1 large sweet onion, such as Vidalia, finely diced
1/2 head cabbage, shredded (about 6 cups)

Steps:

  • Clean and sterilize 2 quart-size canning jars with lids.
  • Add the vinegar, sugar, salt, cloves, mustard seeds, peppercorns, mustard, turmeric, red pepper flakes and bay leaf to a large saucepan over medium heat. Bring to a simmer and cook, stirring occasionally, until the sugar dissolves and the flavors start to marry, about 5 minutes.
  • Add the green tomatoes, green and red bell peppers, onion and cabbage and bring to a boil, lower the heat and let simmer, stirring occasionally, for 15 to 20 minutes. Remove from heat. Divide the mixture between the two jars and let cool to room temperature. Serve immediately or seal and refrigerate for up to 6 weeks.

12 ½ pounds green tomatoes, chopped
8 large onions, chopped
10 green bell peppers, chopped
3 teaspoons salt
6 chopped green chile peppers
1 quart distilled white vinegar
1 ¾ cups white sugar
½ cup prepared horseradish
1 tablespoon ground cinnamon
1 tablespoon ground allspice
¼ teaspoon ground cloves

Steps:

  • In a large bowl combine tomatoes, onions, bell peppers and salt. Let stand overnight.
  • Drain the tomato/pepper mixture and add the hot chile peppers, vinegar, sugar, and horseradish. Wrap the cinnamon, allspice, and cloves in cheesecloth or a porous bag, and add to tomato/pepper mixture.
  • Boil for 15 minutes, or until tender.
  • Pack tightly in sterilized jars and seal.
