MIMI'S AMERICAN CHOP SUEY
When I was little my mom made this recipe a lot. It was during World War II and it was very inexpensive to prepare. I loved it. I guess you would call it a comfort food for me as I was always so happy when I asked, "What's for supper" and Ma answered, "Chop Suey". She never called it "American Chop Suey" except on her recipe card. It was always "Chop Suey". I can't believe that I haven't posted this as I still make it often. I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now. You will have most the ingredients in your pantry and freezer--there are only five plus salt and pepper.

Steps:
- Cook the macaroni till done, but not overdone.
- Heat a skillet and fry hamburg and onion will done.
- Add the tomato sauce and tomato soup; mix well.
- Add the marcaroni.
- Heat and serve.

- 1. Heat the butter in a large pot over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook, stirring, for about 1 minute. Then add the ground beef and continue to cook, stirring and breaking up the chunks of meat with a spoon. Cook until the meat is no longer pink, about 7 minutes. Sprinkle the herbs and pepper over the meat, add salt to taste, and mix in well.
- 2. Add the canned tomatoes with their juices, the tomato sauce, paste, and juice. Add sugar to taste. Simmer while you cook the pasta.
- 3. Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook, stirring occasionally, until al dente. Drain. Mix the macaroni into the chop suey. Serve hot.

- In large pot over medium heat melt butter. Add onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Stir in garlic for about 1 minute. Stir in ground beef and cook, stirring and breaking up meat chunks with a spoon. Cook until meat is done, about 7 minutes until no longer pink. Toss herbs and pepper over the meat mixture, add salt to taste, and stir until well mixed.
- Add canned tomatoes with their juices, tomato sauce, tomato paste, and tomato juice. Add sugar to taste. Simmer gently while you prepare the pasta.
- Bring a large pot of salted water to the boil over high heat. Add macaroni and cook until al dente, stirring occasionally. Drain the macaroni and add to the chop suey.
- Serve hot.
AMERICAN CHOP SUEY, ITALIAN STYLE
American Chop Suey with a chunky meat sauce, garlic, oregano and lots of flavor. Not bland like Mom used to make, but simple enough that my whole family gobbles it up. Very quick and easy to make for a great weeknight dinner. Add salad and bread, good to go. A healthy sprinkling of GOOD parmesan cheese is a must!

- In large skillet over medium-high heat, brown ground beef with onion and 1 clove garlic; drain.
- Add oregano, basil, salt, pepper, and rest of garlic; mix into beef. Return to heat, add tomatoes, water and sugar, stir to mix well. Heat till slightly bubbly, then cover and reduce heat to low. Simmer for 30-60 minutes, stirring occasionally.
- Meanwhile, cook elbows according to package directions.
- Mix drained elbows into sauce in skillet and sprinkle generously with a good quality parmesan cheese.

This recipe was my grandmother's and it has such amazing flavor. The key to flavor is cooking it on medium low heat for about 3 hours. You want the bacon to melt in your mouth. Preparation is quick and easy. You can start this recipe around 1:00 in the afternoon and dinner is on the table at 5:00

- In a medium pot (large pot if you double the recipe)add the onion and cook until translucent.
- Add the bacon and cook until the bacon is slightly browned, DO NOT DRAIN, that is where the flavor comes from.
- Add the ground beef and cook until browned.
- Add the crushed tomatoes along with one equal can of water and mix very well gently.
- Allow to come to a slight boil then turn heat down to medium low.
- Cook for 3 hours, stirring every 20 to 30 minutes uncovered.
