3/4 cup unsalted butter, room temp
1/4 cup granulated sugar
1 teaspoon vanilla
1/8 teaspoon salt
1 1/2 cups unbleached all-purpose flour
1 (14 ounce) can sweetened condensed milk
6 ounces dark chocolate or 6 ounces semisweet chocolate
1 tablespoon butter
coarse sea salt (optional)

Steps:

  • Crust:.
  • Preheat oven to 350* and lightly grease a 9 x 9 baking pan.
  • Cream the butter and sugar until fluffy.
  • Add vanilla and salt. Stir in the flour just until the dough begins to come together in walnut-sized chunks.
  • Press the dough into the prepared pan and bake 20 minutes or until golden brown around the edges. Begin making filling as soon as you put the dough in the oven.
  • Filling:.
  • Pour the milk into a heavy saucepan and cook over low heat, stirring often, 60-90 minutes, until golden brown.
  • When thick and deep golden, spread caramel evenly over cooled crust and refrigerate until caramel is cool and set.
  • Topping:.
  • Melt the chocolate and butter slowly over low heat and spread over the cooled caramel layer. Sprinkle sea salt over the chocolate (if desired). Refrigerate until set.
  • Store the bars, covered, in the fridge.

Millionaire's shortbread bars traditionally have a bottom layer of shortbread cookie, a middle caramel layer, and a top chocolate layer. For my recipe, I made the cookie layer with almond flour to get a delicious nutty flavor. The middle layer is a caramel made mostly out of dates. Finally, I made the top chocolate out of cacao, coconut oil, and agave. Keep leftovers in the refrigerator.

1 ½ cups almond flour
¼ cup grapeseed oil
3 tablespoons agave syrup
1 teaspoon vanilla extract
⅛ teaspoon salt
11 Medjool dates, pitted
¼ cup hot water
¼ cup almond butter
6 ½ tablespoons raw cacao powder
⅓ cup coconut oil, melted
2 tablespoons agave syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a loaf pan with parchment paper.
  • Mix almond flour, grapeseed oil, 3 tablespoons agave syrup, vanilla extract, and salt together in a bowl. Press evenly into the bottom of the loaf pan to create the crust.
  • Bake in the preheated oven until pale golden, about 20 minutes. Let cool.
  • Process dates into a paste in a food processor. Add hot water and almond butter; process until very smooth. Spread mixture evenly over the crust.
  • Whisk cacao powder, coconut oil, and agave syrup together in a bowl. Pour over date layer.
  • Refrigerate until cacao layer is firm, 8 hours to overnight. Cut into squares.

These vegan, gluten-free chocolatey treats with dates, cashews and maple syrup are just as sticky and moreish as the original Millionaire's shortbreads

150g cashew nuts
50g rolled oat
4 medjool dates , pitted
50g coconut oil , melted
350g pitted medjool dates
125ml unsweetened almond milk
25ml maple syrup
150g coconut oil
1 tsp vanilla extract
150g coconut oil
5 tbsp cocoa powder
2 tsp maple syrup

Steps:

  • Grease a 20cm square cake tin and line with baking parchment. Tip the cashew nuts and oats into a food processer and blitz to crumbs. Add the dates and coconut oil, and blend again. Transfer to the tin and use a spoon to press the nutty mixture into a compact, even layer that covers the base. Chill while you prepare the filling.
  • For the filling, add the dates, almond milk, maple syrup and coconut oil to a saucepan with a generous pinch of salt and bring to a simmer. Boil for 2-3 mins until the dates are really soft, then tip into the blender, add the vanilla extract and blitz to a smooth purée. Add a little more salt if the mixture is too sweet. Pour over the nutty base and spread to the sides of the tin, getting the surface as smooth as possible. Chill while you prepare the topping.
  • Gently heat the coconut oil in a saucepan until melted. Remove from the heat and whisk in the cocoa and maple syrup until there are no lumps. Cool for 10 mins, pour over the caramel layer and return to the fridge for at least 3 hrs or until firmly set. To serve, cut into squares. Will keep in the fridge for up to 1 week.

Shortbread:
1 cup (2 sticks) salted butter, at room temperature
1/2 cup sugar
2 cups all-purpose flour
Toffee
2 sticks salted butter
1 cup sugar
1 (14 ounce) can sweetened condensed milk
3 tablespoons maple syrup
1 cup chopped pecans

Steps:

  • Preheat oven to 350°F.
  • Cream the butter and sugar together on medium speed until light and fluffy, about 3-5 minutes.
  • Add the flour and beat on low speed until crumbly, making sure not to over-mix the dough.
  • Press into the bottom of an 8 x 11-inch baking dish and cook for 18 to 20 minutes, or until light golden brown.
  • In a new bowl combine the butter, sugar, condensed milk, and maple syrup in a medium saucepan.
  • Bring to a boil over medium heat, stirring constantly.
  • Once the mixture is boiling, continue to stir until it is thick and golden brown (being careful not to burn) about 5-7 minutes.
  • Pour over the cooked shortbread.
  • Sprinkle with chopped pecans.
  • Allow to set in refrigerator overnight.
