1 onion (diced)
2 tablespoons butter
2 potatoes ( peeled and cut into 1/2" cubes)
1 tablespoon flour
4 cups chicken broth
14 ½ ounces can diced tomatoes (with juices)
½ teaspoon dried basil
½ teaspoon dried oregano
2 cups frozen mixed vegetables (defrosted)
2 cups cooked chicken
2 teaspoons fresh parsley (chopped)

Steps:

  • Cook onion in butter over medium heat until it starts to soften, about 3 minutes.
  • Add potatoes and cook an additional 3-4 minutes. Stir in flour and cook 1 minute more.
  • Add broth, tomatoes and seasonings. Simmer 12 minutes or until potatoes are softened.
  • Stir in vegetables and chicken. Simmer 5 minutes more.
  • Taste and season with salt and pepper.
  • Garnish with parsley and serve.

6 sprigs fresh flat-leaf parsley, plus 3 tablespoons very finely chopped leaves for sprinkling
2 bay leaves
6 whole cloves
1 teaspoon whole black peppercorns
1 whole chicken (4 1/4 pounds), skin and fat removed, quartered
1 medium onion (about 6 ounces), halved lengthwise and thinly sliced
5 celery stalks (about 12 ounces), cut on the diagonal into 1-inch pieces
4 garlic cloves, sliced
7 1/4 cups homemade or low-sodium, gluten-free store-bought chicken stock
2 medium parsnips (about 8 ounces), peeled and cut on the diagonal into 1-inch pieces
1 teaspoon coarse salt
3 medium carrots (about 8 ounces), peeled, cut on the diagonal into 1-inch pieces
8.8 ounces brown riceâ€"millet rotini
1 scallion, white and pale-green parts only, very thinly sliced (about 1/4 cup)
Freshly ground pepper

Steps:

  • Make a bouquet garni: Put the parsley sprigs, bay leaves, cloves, and peppercorns on a piece of cheesecloth; tie into a bundle with kitchen twine.
  • Put bouquet garni, chicken, onion, celery, garlic, and stock into a large stockpot. Bring to a boil. Reduce heat; cover, and simmer 15 minutes. Using tongs, transfer chicken to a large bowl; let cool slightly. Remove meat from bones, and cut into small pieces; set aside.
  • Add parsnips to pot, and cook until slightly softened, about 10 minutes. Stir in 5 cups water and the salt. Bring to a boil. Stir in carrots, pasta, and reserved chicken. Cook until carrots are tender and pasta is al dente, 7 to 10 minutes. Discard bouquet garni. Ladle soup into 6 bowls, dividing evenly. Sprinkle each with chopped parsley and scallion, dividing evenly; season with pepper.

4 medium carrots, cut into 1/4-inch rounds
3 medium celery stalks, cut into 1/4-inch slices
2 medium Yukon Gold potatoes, peeled and cut into 1/2-inch pieces
Coarse salt and ground pepper

Steps:

  • In a large pot, bring broth to a boil over high. Add carrots, celery, and potatoes. Reduce heat and simmer until vegetables are tender, 14 to 16 minutes. Stir in chicken, season with salt and pepper, and cook until chicken is warmed through, 1 to 2 minutes.

1 roasting chicken (about 5 pounds), cut up and skin removed
2 celery ribs, sliced
1 large onion, chopped
2-1/2 quarts water
1 can (14-1/2 ounces) stewed tomatoes
4 medium carrots, sliced
2 medium potatoes, peeled and cubed
1 medium turnip, peeled and cubed
2 tablespoons chicken bouillon granules
1/2 teaspoon minced fresh parsley
3/4 teaspoon each dried basil, oregano and tarragon
3/4 teaspoon salt
3/4 teaspoon pepper
1/2 teaspoon garlic powder
2 cups fresh broccoli florets
2 cups frozen peas, optional

Steps:

  • Place the chicken, celery, onion and water in a Dutch oven; bring to a boil. Skim fat. Reduce heat; cover and simmer until chicken is tender, 1-1/2 to 2 hours. Remove chicken; cool. , Remove meat from bones and cut into bite-size pieces; return to pan. Add the tomatoes, carrots, potatoes, turnip, bouillon and seasonings; bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add broccoli and peas if desired; simmer until vegetables are tender, 15-20 minutes longer.

1 cup uncooked millet
2 bags (1 pound each) frozen broccoli, red pepper, onions and mushrooms, thawed
1 1/3 cups apple juice
1/4 cup reduced-sodium soy sauce
2 tablespoons cornstarch
1/2 teaspoon ground ginger
2 cups cut-up cooked chicken or turkey

Steps:

  • Heat broth to boiling in 1 1/2-quart saucepa. Stir in millet; reduce heat to low. Cover and simmer 20 minutes.
  • Meanwhile, spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add vegetables; stir-fry 2 minutes. Stir in 1/3 cup of the apple juice; reduce heat to medium. Cover and cook about 3 minutes or until vegetables are crisp-tender.
  • While vegetables are cooking, mix remaining 1 cup apple juice, the soy sauce, cornstarch and ginger in small bowl until smooth.
  • Gradually stir apple juice mixture into vegetable mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in chicken; cook until thoroughly heated. Toss with cooked millet.
