MILK CHOCOLATE FUDGE
A fellow "chocoholic" gave me this recipe, and it's very popular with my husband and children. I like the fact that you don't need to mess with a candy thermometer.

- In a microwave, melt chocolate chips and cream cheese. Add nuts and vanilla. Gradually stir in confectioners' sugar until blended. Pour into a greased 8-in. square dish. Refrigerate.

Steps:
- Line 9 inch square or 13x9 inch pan with foil so that foil extends over sides of pan; butter foil.
- In large saucepan, combine sugar, margarine and evaporated milk. Bring to a boil over medium heat, stirring constantly.
- Boil 5 minutes, stirring constantly.
- Remove from heat.
- Add marshmallow creme and chocolate chips; blend until smooth.
- Stir in walnuts and vanilla.
- Pour into buttered, foil-lined pan.
- Cool to room temperature. Score fudge into 36 squares.
- Refrigerate until firm.
- Remove fudge from pan by lifting foil; remove foil from sides of fudge.
- Using large knife, cut through scored lines.
- Store in refrigerator.

- Set oven to 350 degrees.
- Line 12 regular size muffin tin with paper liners.
- In a medium-size mixing bowl, mix together the flour, brown sugar, sifted baking cocoa, baking powder, baking soda, salt and cinnamon (if using); mix with a wooden spoon to combine.
- In a two-cup measuring cup or bowl whisk together the milk, egg, oil and vanilla.
- Add the milk/egg mixture to the dry ingredients; mix very well with a wooden spoon to combine well.
- Mix in the chocolate chips and nuts (if using).
- Divide the batter evenly between the lined muffin tins.
- Bake for 22-25 minutes, or until a toothpick inserted in the middle comes out clean (don't overbake!).
- Cool, and frost with favorite chocolate frosting.

- Preheat oven to 325°F (160°C). Line 2 baking sheets with parchment paper.
- In a glass bowl in microwave, melt shortening and semi-sweet chocolate chips on Medium (50%). Add in sugar and then eggs one at a time, stirring well after each addition. Let cool for 5 minutes.
- Mix in sweetened condensed milk and vanilla. Add next 4 ingredients; mix well to combine. Cover with plastic wrap and refrigerate for 1 ½ hours up to 8 hours.
- Sift icing sugar in a shallow bowl. Between palms of hand, roll pieces of chilled dough to form 1 ¼" (3 cm) balls. Drop balls into icing sugar and toss lightly until well coated. Place on prepared baking sheets and flatten very slightly. Repeat with remaining dough and remaining icing sugar, spacing about 1 ½" (4 cm) apart on baking sheet.
- Bake each sheet in preheated oven for 11 - 13 minutes or until just beginning to feel firm when pressed in centre. Let cool on baking sheet on wire racks for 5 minutes. Transfer crackles to wire racks to cool completely.
- Note: For a chewier, softer crackle, try Eagle Brand Regular Sweetened Condensed Milk.

- Line bottom of an 8-inch square baking pan with parchment paper or wax paper.
- Heat all ingredients in a metal bowl set over a pan of barely simmering water, stirring occasionally, until smooth.
- Pour into baking pan and chill, uncovered, until firm, about 4 hours. Run a knife around edges of pan and invert fudge onto a work surface. Remove parchment and cut fudge into 1-inch squares. Serve chilled.
TWO INGREDIENT CREAMY MILK CHOCOLATE FUDGE
This is a wonderful fudge for which everyone wants the recipe and is surprised how easy and quick it is; and that it only takes 2 ingredients -chocolate morsels and canned frosting. - 1. Put the bag of semi-sweet morsels in a glass bowl -don't pile them all to the middle, but kind of spread them out.
- 2. Microwave on high for 90 seconds. Take out and stir well. Do not be tempted to melt longer -when you stir them they will melt (And you will be microwaving them again after adding the can of frosting).
- 3. Then dump/spoon in one whole can of Creamy Milk Chocolate frosting on top of the melted morsels.
- 4. Microwave on high 90 seconds. Take out and stir well. Again, don't be tempted to over-microwave -it may scorch or lumpy.
- 5. Pour/spoon frosting and morsels mixture into a 8"x8" or 9"x9" square Pan. I line the pan with aluminum foil that has been sprayed with Pam. It makes it easier to lift out the cut pieces. You can just spray with Pam or other non-stick cooking spray.
- 6. Refrigerate until chilled and set. Then cut into small squares -it is a rich fudge. Makes 24 to 30 pieces (depending on the size of the squares).
- 7. Enjoy!!!!!
- 8. HINTS: (1) You can use Nestle or Hershey chips/morsels -don't use an off brand or one that is not real chocolate; (2) Sometimes I put a capful of Vanilla extract (not flavoring) and a pinch of salt; (3) I sometimes add a few broken nuts in with the morsels and frosting after it has been melted. Of course, additions no longer make it a two ingredient fudge -but hey, I like to experiment, and it is good with or without the additions; (4) You can use any brand of canned frosting, but don't use the Whipped kind -it doesn't set as well; (5) Either spray your pan with a non-stick spray (such as Pam) or line the pan with aluminum foil (bring it up the sides of the pan too) and spray it As stated in the recipe I posted earlier (Extra Easy and Delicious Fudge), you can try many different combinations of chips/morsels and frostings, such as Butterscotch Chips and Vanilla Frosting or Peanut Butter Chips and Chocolate Frosting, etc. Give this fudge a try and let us know what combinations that you use.
MILK CHOCOLATE HOT FUDGE

- Break up chocolate bars in small saucepan and cover with the sweetened condensed milk. Heat over medium-low until melted and smooth (unless you used the toffee and almond Symphony bar), adding evaporated milk teaspoons at a time to thin to the desired consistency. Use on ice cream, with fruit or just about anything.

- In a heavy-bottomed saucepan, mix evaporated milk, marshmallow cream, butter, sugar and salt, stirring constantly, bring to a full boil; boil 5 minutes (this must be timed, starting at a full boil)
- Remove from heat, add in chocolate chips and vanilla, stir hard until blended
- Stir in chopped walnuts
- Spread mixture in a buttered 8-inch square pan
- Chill until firm
- Cut in small squares If desired, top each square with a walnut half.
