Since this recipe uses mostly canned & frozen ingredients, it is nice to have a stock of them on hand for times when you need a quick meal. Low-fat and stocked with protein, this consists of a complete meal.

10 ounces cream of mushroom soup, concentrate
3 eggs
10 ounces of frozen chopped broccoli, thawed
1 cup quick-cooking rice
7 ounces tuna, not drained
1/2 cup of grated cheddar cheese
3 tablespoons of grated parmesan cheese
1/4 teaspoon pepper

Steps:

  • In a bowl, mix the cream of mushroom with the eggs until smooth.
  • Add brocoli, rice, tuna (with its juice), cheddar, 1 tbsp of parmesan, and pepper.
  • Mix well.
  • Pour in a 25 cm (10 inch) microwave-safe quiche pan.
  • Cover with wax paper and cook 5 minutes at medium-high power.
  • Stir and sprinkle remaining parmesan.
  • Cover and continue cooking 6 to 8 minutes, until a toothpick inserted in the flan comes out dry.
  • Cool for 5 minutes before serving.

What we have here is equal parts tuna and rice by weight, which for me, gives this the perfect balance between protein and starch. While this may remind some people of a fried rice dish, this is significantly lighter, and actually very low on the fat content, but that doesn't mean it's not satisfying, and like most rice dishes, it's very comforting.

1 cup uncooked long-grain rice
1 ½ cups water
1 (7 ounce) jar tuna packed in olive oil
½ cup finely diced red bell pepper
¼ cup finely diced jalapeno pepper
¼ cup finely sliced green onions
⅓ cup seasoned rice vinegar
2 tablespoons soy sauce
½ teaspoon sesame oil
2 teaspoons Sriracha hot sauce
½ lemon, juiced, or to taste
1 pinch Korean red pepper flakes (gochugaru), or to taste
1 teaspoon finely sliced green onion, or to taste

Steps:

  • Pour rice into a heavy pot and add water; swirl to allow rice to settle. Bring to a simmer over medium-high heat; do not stir. Reduce heat to low, cover, and continue to simmer for 15 minutes.
  • While rice is cooking, place tuna into a large mixing bowl and break up with your hands or a fork. Toss in red bell pepper, jalapeno, 1/4 cup green onions, rice vinegar, soy sauce, sesame oil, Sriracha, and lemon juice. Mix with a fork until thoroughly combined.
  • Turn off heat and let rice sit, covered, for 10 minutes.
  • Fluff rice with a fork to separate the grains and break up any large clumps; transfer into the mixing bowl. Mix thoroughly with a spoon until all the ingredients are evenly incorporated. Taste and adjust seasoning if needed. Serve warm, at room temperature, or cold like a rice salad, topped with red pepper flakes and 1 teaspoon green onion.

¼ cup butter, cut into small pieces
¼ cup milk
1 (10.5 ounce) can condensed cream of mushroom soup
1 (5 ounce) can tuna, drained and flaked
½ cup frozen corn
½ cup frozen peas
¼ cup chopped celery
¼ cup onion, chopped
¼ cup crushed buttery round crackers

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook boxed macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • Drain macaroni and return to the pot. Add butter, milk, and cheese sauce package; mix until well combined. Stir in condensed soup, tuna, corn, peas, celery, and onion. Transfer to a microwave-safe casserole dish. Level the mixture out and spread crushed crackers on top.

100 g potato chips, crushed
175 g cheddar cheese, grated
1 large onion, finely chopped
50 g mushrooms, finely chopped
3 eggs, beaten
1/2 pint milk

  • Mix tuna and crisps in a large bowl.

3 cups white sugar, divided
2 cups milk
1 tablespoon vanilla extract
4 eggs

Steps:

  • Heat 1 cup of sugar (dry) in a saucepan over medium heat. Do not stir until you start to see the sugar melting and bubbling. When the sugar is completely melted and golden brown, pour it into a 9 inch glass or ceramic pie plate and tilt to coat.
  • In a large bowl, mix the milk, remaining sugar, vanilla and eggs until well blended. Pour into the pie plate.
  • Cook in the microwave at 50% power for 7 minutes, then cook at 100% power for 8 minutes. A knife inserted into the center of the flan should come out clean when it is done. If it is not done after the 8 minutes, cook at one minute intervals, checking each time. Cool and refrigerate before serving.
  • To serve, warm the bottom of the pie plate over a pan of simmering water to loosen the caramelized sugar. Place a serving plate on top of the dish, and invert so that the flan is on the serving dish and the caramelized coating is on top.
