2 large Yukon Gold potatoes (about 1 pound)
3 tablespoons olive oil
Kosher salt

Steps:

  • Thinly slice the potatoes about 1/16-inch thick using a mandolin. Put the potato slices in a large bowl of cold water and stir to release the starch. Drain and refill the water as many times as necessary until the water remains clear. Line a baking sheet with paper towels. Transfer the potatoes to the paper towels and pat dry.
  • Line a large microwave-safe plate (the biggest that will fit in your microwave) with two layers of paper towel. Arrange as many potato slices on the paper towels as will fit in one layer without touching. Lightly brush the potatoes on both sides with oil and sprinkle lightly with salt. Microwave at full power for 3 minutes. Flip the slices over and microwave at 60-percent power until crispy and golden brown in spots, about 2 minutes more. Transfer the chips to a serving bowl and repeat with the remaining potatoes.

  • Poke the potato 4 to 5 times on each side with a fork. Wet a clean sheet of paper towel with water and wring out any excess moisture. Wrap the damp paper towel around the potato and place on a microwave-safe plate. Microwave on high for 5 minutes. Remove the paper towel and flip the potato over.
  • Drizzle the potato with olive oil and sprinkle with salt and pepper. Microwave on high, uncovered, 3 minutes more (see Cook's Note). Use a fork to test for doneness.   • Dry the potato slices with a paper towel until there is no more moisture.
  • Transfer the sliced potatoes to a bowl and coat in olive oil.
  • Wipe down a large flat microwavable-safe plate with olive oil to prevent the chips from sticking.
  • Place the chips on the plate in an even layer and sprinkle with salt.
  • Microwave the chips on high for 6-7 minutes or until the chips just start to brown. When the chips develop some color remove them from the microwave and slowly peel from the plate. If chips are sticking, they can also be flipped halfway through!
  • Repeat this process until all the potato slices are cooked.

4 medium potatoes
6 slices bacon
2 tablespoons flour
1/4 cup sugar
1 1/2 teaspoons salt
1/2 teaspoon celery seed
1/8 teaspoon pepper
1 cup water
1/2 cup vinegar

Steps:

  • Wash and pierce potatoes with fork.
  • Place on paper towel and micro on high 10/12 minutes.
  • Turn over and rearrange after 4 minutes or until tender.
  • Remove from micro and cool slightly.
  • Peel potatoes and slice into 1/8 inch slices for about 4 cups.
  • Cut bacon in small pieces and place in 2 qt casserole.
  • Cover with paper towel and micro on high 6 minutes stirring after 3 minutes, until crisp.
  • Set bacon aside on paper towels to drain.
  • Stir flour, sugar and seasonings into bacon fat in casserole dish until smooth.
  • Micro on high 1-2 minutes until bubbly stirring after 1 minute.
  • Add water and vinegar to flour mixture.
  • Micro on high 4 minutes until mixture boils and thickens stirring after 1 minute.
  • Remove from oven and stir until smooth.
  • Add potatoes and bacon, stirring gently so potatoes hold their shape.
  • Cover casserole and let stand until ready to serve.

4 large potatoes (russet, yellow gold, white or red potatoes)
your choice spices (granulated garlic powder, seasoning salt, cayenne pepper, dried dill weed, granulated garlic powder)
vegetable oil, for microwave bacon tray

Steps:

  • If potatoes are old, peel and slice thin, less than 1/16" in thickness (paper thin), slicing across the potato.
  • If the potatoes are new or good skins, DO NOT PEEL, just scrub well, then slice them less than 1/16" in thickness (paper thin), slicing across the potato.
  • Place potato slices in a bowl, sprinkle with some salt (if desired) cover with cold water and let sit for 10 minutes.
  • Remove potato slices in batches onto paper toweling and pat dry.
  • If you have a microwave bacon tray, rub the tray with a vegetable oil, then place the sliced potatoes flat on the tray in a single layer.
  • Sprinkle with your choice of herbs or spices or just leave them plain.
  • Cover with a microwaveable, round heavy plastic cover.
  • Microwave on HIGH (full power) for 5 to 5 1/2 minutes or until they curl slightly and are a very light brown in color.
  • Cooking time could vary slightly, depending on the wattage of your microwave and the thickness of the slices. The thinner the slices, the quicker they cook and the tastier they are.
  • You do not have to turn the sliced potatoes over.
  • If you do not have a bacon tray, use a microwave safe casserole dish.
  • Rub the inside of the dish with some olive oil for the first batch of potato chips.
  • I do not know why, but I find that if you do not rub oil the first time, some chips will tend to stick to the dish.
  • After the first batch is done, you do not have to rub the dish again.
  • Continue to microwave the remainder of sliced potatoes as noted above.
  • If using a bacon tray, after the first batch is cooked, you can reduce the microwaving time to 4 1/2 minutes and even less as you continue to microwave each batch.
  • NOTE: You can also use PARCHMENT PAPER to microwave the potato slices. Lightly spray or rub the parchment paper with some vegetable oil or a Pam spray. Place your potato slices on the parchment paper, then sprinkle them with whatever you like and then place another piece of parchment paper on top. This will help microwave the potatoes more evenly and they should turn out nice and crisp. Microwaving time should be between 5 and 6 minutes.
  • ADDITIONAL IDEAS, suggested by Deb K:.
  • Granulated garlic powder with parsley.
  • Cracked black pepper, grated parmesan and sea salt sprinkled after removing from microwave.

4 large potato's
4 slice bacon
1 medium onion, chopped
1 Tbsp all purpose flour
1/2 c water
1/4 c vinegar
1/4 c sugar
1 tsp salt

  • 1. Pierce potatoes with fork and cook according to your micro wattage, about 20 mins. Set aside. Place bacon in 2-quart casserole dish, cover with paper towel and cook on high until crisp, according to your microwave, 6 to 8 mins. Remove from dish and set aside. Reserve 4 Tbs drippings. 1/4 cup onion, finely chopped
1/4 cup celery, finely chopped

Steps:

  • Wash and pierce potatoes all over with fork. Microwave on paper toweling for 7 minutes. Turn over and microwave for another 7-8 minutes. Remove from microwave and set aside to cool.
  • Slice bacon into 1/4 inch pieces and distribute around a flat casserole dish. Microwave for 2-4 minutes until bacon is about half cooked. Add onion and celery, stirring to coat with the bacon grease. Continue cooking, stirring after every minute, until veggies are soft.
  • Stir together water, vinegar, sugar, salt, pepper and flour until no lumps remain. Add to cooked bacon in dish and microwave for 1-1/2 minutes. Stir thoroughly. Keep microwaving and stirring every minute until the sauce becomes thick.
  • Remove skin from potatoes, cut into 1/2 inch pieces and add to sauce. Add parsley and stir well, but gently, so the potatoes don't fall apart too much.

3 1/2 c milk, whole or 2% is best devided
4 oz cream cheese
2 Tbsp butter
2 green onions with tops chopped
4 oz sharp white or yellow chedder cheese, grated

broccoli florets steamed and chopped (optional)
sour cream (optional)
bacon, cooked and cut into pieces (optional)

Steps:

  • 1. Slice potatoes in half lengthwise; place in large MICROWAVE SAFE baking dish. Pour 1/2 cup of the milk over potatoes. Microwave, covered, on HIGH 11 minutes. Remove baking dish from microwave. Move center potatoes to ends of baker and outer potatoes to center. Cover; microwave on HIGH 8-11 minutes or until potatoes are easily pierced with a fork. Remove from microwave. Coarsely mash potatoes, set aside.
  • 2. Meanwhile, whisk cream cheese until smooth. Slowly add remaining 3 cups milk, whisking until smooth. Add cream cheese mixture and butter to baking dish. Microwave, covered, on HIGH 3-5 minutes or until mixture is hot.
  • 3. Slice green onions. Carefully remove baking dish from microwave. Grate cheddar cheese over chowder using Rotary Grater; add green onions, salt and black pepper and mix until cheese is melted. Serve with toppings, if desired.

All cooking is done in the microwave! This is my original recipe that I made up. An easy staple on my table that everyone enjoys and everyone can make. Perfect for snacks or sides or appetizers. I call it 'College Guy' because of how simple they are to make and how little things you need. I am in fact, a woman and have been making these since my not-so-long-ago college days! :)

Number Of Ingredients 5

3 potatoes
3 tablespoons Bacos bacon bits
9 ounces shredded cheddar cheese, 1-3 oz per potato
1 tablespoon margarine (optional) or 1 tablespoon butter (optional)
salt

Steps:

  • Slice potatoes lengthwise.
  • Lay out on a microwave plate, skins down. Carve a vertical line about halfway through the potato. This helps it cook even and is not necessary for smaller or thinner potato strips. You could also carve an "X" shape instead.
  • Microwave on HIGH for 10 Minutes.
  • Take out of microwave and if you want to, spread out margarine or butter thinly over the potatoes. Top each potato with a good handful of shredded cheddar cheese. Sprinkle with Bacos.
  • Microwave on high an additional 2 minutes or until cheese is completely melted.
  • Let potatoes sit for a few minutes. They are usually extremely HOT. Also, be careful handling the plate. After they have cooled, salt to taste and enjoy!
