I modified the microwave peanut brittle found on this site to suit my in-laws preference for pecan brittle.

1 cup white sugar
½ cup corn syrup
1 ½ cups pecan pieces
3 tablespoons butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • Combine sugar and corn syrup in a microwave-safe bowl. Heat in a microwave at 70%, or 700W, power for 4 minutes. Remove and stir. Microwave again at 70% power for 4 minutes. Add pecans, butter, and vanilla extract.
  • Microwave at 100%, or 1000W, power for 3 minutes. Add baking soda and stir until frothy.
  • Pour out onto a parchment paper-lined cookie sheet and let cool for 15 minutes.

A friend gave me some of this a few years ago for Christmas and I couldn't stop eating it. I thought it was the best thing I ever tasted, so I got the recipe from her and now I make it for gifts.

1 c pecans, halved
1 tsp butter
1 c white sugar
1/2 c white corn syrup
1 tsp vanilla
1 tsp baking soda
MICROWAVE PECAN BRITTLE

Steps:

  • 1. In a microwave, cook or pecans, sugar, corn syrup for 4 minutes. Add a teaspoon of butter or margarine and a teaspoon of vanilla, stir and cook for 2 minutes more.
  • 2. Remove and add a teaspoon of baking soda. Stir until light and foamy.
  • 3. Pour into a greased cookie sheet, let cool one hour. Flip over and crack with back of a spoon into desired pieces.
  • 4. Note: Be sure to use a microwave safe bowl. Be very careful not to get the hot mixture on you. You may have to adjust times according to your microwave.

1 cup chopped pecans
1 cup white sugar
½ cup light corn syrup
⅛ teaspoon salt
1 tablespoon butter
1 teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Butter a baking sheet.
  • Combine pecans, sugar, corn syrup, and salt in a glass 4-cup measuring cup.
  • Heat in microwave for 3 1/2 minutes; stir and heat for 3 1/2 more minutes. Stir butter into pecan mixture and heat in microwave for 2 more minutes.
  • Stir baking soda and vanilla extract into pecan mixture until foamy; pour onto the prepared baking sheet. Allow to cool completely before breaking brittle into pieces. Store in an airtight container.

How to make Microwave Jalapeno Pecan Brittle

Number Of Ingredients 8

1/2 cup firmly packed brown sugar
1/2 cup sugar
1/2 cup light corn syrup
1 1/2 cups pecans
2 tablespoons butter or margarine
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla

Steps:

  • Grease a cookie sheet and spatula with butter or margarine. Combine sugars and corn syrup in a large microwave bowl (it will boil up pretty high). Microwave, uncovered, on high for 4 min. Stir in nuts, butter and salt. Microwave 4 more min. Remove from microwave and quickly stir in soda. It will become light and foamy. Quickly pour onto prepared cookie sheet, spreading thin. When cooled break into pieces and store in air tight container.
  • For an extra treat add 4 tbl chopped pickled jalapeno and a few drops of green food coloring when you add the nuts. This makes a good Christmas present.
