EASY CHEESY ENCHILADA CASSEROLE



Easy Cheesy Enchilada Casserole image

This easy and delicious casserole is simple to put together and full of Mexican flavors.

18 corn tortillas
28 oz enchilada sauce
1 ¼ lbs hamburger
2 jalapenos
4 cups shredded cheddar cheese
14 oz chili beans (drained)
1 tablespoon dried onions (optional)

Steps:

  • Preheat oven to 375*
  • Brown hamburger in a large skillet until no longer pink, adding 1 tsp salt, 1 tsp pepper and dried onions. Drain
  • Chop jalapenos and remove the seeds. See tip in post above. (Jalapenos are optional)
  • Return hamburger to pan and add ½ cup of enchilada sauce to the hamburger. Add chopped jalapenos and drained beans. Cook for 5 minutes
  • Layer ¼-½ cup of enchilada sauce on the bottom of a greased 3 quart casserole dish. 6 corn tortillas, ⅓ of hamburger mixture, ½ cup cheese
  • Repeat until you have 3 layers of corn tortillas
  • Pour any remaining enchilada sauce on top of final layer and add the remaining cheese
  • Cover with foil and bake for 30-35 minutes or until cheese is bubbly and casserole is warmed through
  • You can remove foil for the remaining 10 minutes of cooking to brown the cheese a little if you would like
  • Let the casserole sit for 5 minutes for easier cutting and serving

Steps:

  • Top each of 4 toast slices with 1 each 2% Milk American Singles and 2% Milk Pepperjack Singles. Cover with remaining toast slices to make 4 sandwiches.
  • Microwave, 1 sandwich at a time, on microwaveable plate on HIGH 30 to 45 sec. or until Singles are melted.

1-1/2 pounds lean ground beef (90% lean)
1 medium onion, chopped
1 can (12 ounces) tomato paste
1 cup water
1 envelope taco seasoning
10 flour tortillas (6 inches), warmed
1 jar (8 ounces) process cheese sauce
1 can (4 ounces) chopped green chilies

Steps:

  • Crumble beef into a large microwave-safe bowl; stir in onion. Cover and microwave on high for 3-5 minutes or until meat is no longer pink, stirring every 1 minute; drain. Stir in the tomato paste, water and taco seasoning. Cover and cook on high for 1-2 minutes or until heated through, stirring once. , Spoon about 1/3 cup meat mixture down the center of each tortilla; roll up tightly. Place seam side down in a greased shallow 2-1/2-qt. microwave-safe dish. Set remaining meat mixture aside. , In a microwave-safe bowl, combine cheese sauce and chilies. 2 (16 ounce) cans refried beans
2 cups shredded Mexican cheese blend, divided
½ cup chopped onion
12 small corn tortillas
2 (10 ounce) cans red enchilada sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Mix refried beans, 1 1/2 cup Mexican cheese blend, and onion in a microwave-safe bowl; heat in microwave until cheese is melted, about 1 minute.

1 lb ground beef
1 medium onion, chopped
1 cup shredded cheddar cheese
1/2 cup sour cream
2 tablespoons chopped parsley
1 teaspoon salt
1/4 teaspoon pepper
8 nine inch flour tortillas
1 (15 ounce) can tomato sauce
1/3 cup water
1/3 cup chopped green pepper
1 garlic clove, minced
1 1/2-2 teaspoons chili powder
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin

Steps:

  • Crumble ground beef into 2 quart casserole; add onion. Cover loosley and microwave on high 3 min.; stir.
  • Cover and microwave until meat is firm, 2-3mins. Stir to break up meat; drain.
  • Stir in cheese, sour cream, parsley, salt and pepper. Cover and reserve.
  • Wrap 4 tortillas in damp cloth and microwave on high until softened, about 45 sec. Keep tortillas covered while working with the filling.
  • Spoon about 1/3 cup filling in center of tortilla. Fold up.
  • Place seam side down in oblong baking dish.
  • Repeat with remaining tortillas.
  • Prepare enchilada sauce.
  • Enchilada Sauce:.
  • Mix all ingredients, cover tightly and microwave on high to boiling, 4-6 min.; stir.
  • Pour sauce over tortillas. Cover loosley and microwave on high until filling is hot, 7-9 minute.
